Planning out the week’s meals is something I do every Sunday for my family. I do this for a few different reasons – one it helps me get into the mindset of a new week ahead. Two it gives me the opportunity to look through the freezer, fridge and pantry to see what might need to be used up, what do I already have on hand, and what do I need to get from the store. I also try to think ahead of how can a double prep something one night to use another night, or say when a recipe calls for half an onion – I make sure to make something that needs the other half within a few days.

I also like to check in with the family to see if they have anything they have been specifically craving or wanting to try something new. Sometimes this is a fruitful ask and sometimes I get bupkitz. But I still try to ask because I also get the ‘don’t forget I’m going to dinner with a friend this night’ or ‘just please no more rice/pasta/whatever’. This is all valuable info for making a dinner menu plan for the week ahead. I also like to use a menu planner with a grocery list – like this one – to make things that much easier.

Tools You May Need

To have success with the recipes this week – here are few items that I think you may consider adding to your kitchen if you do not already have them.

A Good Sharp Chef’s Knife – this week’s menu has a few recipes that really need good knife cuts

An Extra Large Saute Pan – also called an “Everyday Pan”, these are perfect one pan meals.

A Grill Pan – I use this to give those beautiful grill lines to sandwiches, meats, and tortillas. It’s just that something extra.

Here is my plan for the week ahead. I have included the links to the original posts (you can find more info about substitutions, and processes in the full posts), as well as the full menu right here so that you don’t have to go anywhere if you don’t want to.

MONDAY

Chicken Fried Chicken Sandwiches – Crispy chicken sandwiches are always a great meal – for lunch or dinner. They are pretty simple to make and can have excellent results. For this particular chicken sandwich, I used my typical technique for making chicken fried steak and replaced the cube steak with a boneless skinless chicken thigh. The result is this fantastic Chicken Fried Chicken Sandwich, that your family is bound to request again and again.

Ingredients

  • 6 Brioche Buns
  • 1 cup Iceberg Lettuce shredded
  • ½ cup Pickle Chips Dill or Bread & Butter
  • 6 slices Thick Cut Bacon halved
  • Cooking Oil

For the Dill Cream Sauce

  • 12 oz Greek Yogurt
  • 1 tsp Dried Dill
  • 1 tsp Dried Chives
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 tbsp Pickle Juice

For the Chicken

  • 6 Boneless Skinless Chicken Thighs
  • 3 cups Flour divided
  • 4 Large Eggs
  • 2 tsp Salt divided
  • 2 tsp Pepper divided
  • 2 tsp Garlic Powder divided
  • 1 tsp Dried Dill
  • 1 tsp Smoked Paprika

TUESDAY

  • 15 Flour Tortillas street taco sized
  • 24 oz Pork Chorizo
  • 12 Eggs
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 tsp Paprika
  • 8 oz Sour Cream
  • ½ cup Queso Fresco crumbled
  • ¼ cup Cilantro rough chopped

Instructions

  • In a large frying pan over medium high heat, add chorizo. Crumble and cook until it starts to get a little crispy.
  • In a separate frying pan over medium high heat, add beaten eggs. Let sit 2 minutes then sprinkle with seasoning. Then gentle move the eggs around until cooked to a medium hard scramble.
  • Put a grill pan over high heat, and grill each tortilla.
  • Build a taco – smear half of tortilla with sour cream. top with portion of chorizo, then eggs. Sprinkle with cheese and add a bit of cilantro. Repeat with remaining tortillas.

WEDNESDAY

Poblano & Pepperoni Pizza – Pepperoni Pizza is a staple in our home. Even made from scratch – most of our family can prepare the dough to have time to rise before making from dinner. Because it really is that easy. But sometimes that simple – yet delightful – pepperoni pizza occasionally needs to be stepped up a notch. This recipe for Poblano & Pepperoni Pizza gives you that one extra pop that #pizzanight really needs.

  • 2 Pizza Dough Recipes see below
  • 6 oz Pepperoni Slices
  • 1 Large Poblano Pepper sliced ¼inch thick
  • 2 cups Mozzarella Cheese shredded
  • 2 cup Cheddar Cheese shredded

For the Sauce

  • 1 15 oz Tomato Puree
  • 1 tbsp Honey
  • 1 tsp Italian Seasoning
  • 1 tsp Garlic Powder
  • 1 tsp Dried Onion
  • 1 tsp Red Pepper Flakes

Instructions

  • Prepare all of the ingredients.
  • In a sauce pan over medium heat, add ingredients for the sauce. Stir to combine and cook for 5 minutes. Reduce to low and let simmer while dough cooks.
  • Add cheeses to a bowl and toss to combine.
  • Once the pizza dough is completed as listed in the recipe below, start building the pizzas.
  • Remove pizza crusts from oven. For one pizza, spread half of sauce over top of crust. Evenly sprinkle with 2 cups of cheese mixture. Layer with a single layer of pepperoni then add half of the poblano slices. Sprinkle with ½ cup of cheese mixtures. Repeat on second pizza. Place in oven and cook for 10 minutes. Remove and let cook for 5 minutes before cutting.

THURSDAY

  • 2 tbsps Oil
  • 2 lbs Smoked Sausage cut in ½ inch slices
  • 2 lb Large Elbow Macaroni

For the Mozzarella Cheese Sauce

  • 4 tbsp Butter
  • 2 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 4 tbsp Flour
  • 2 cups Milk
  • 1 tsp Paprika
  • 3 tbsp Ranch Seasoning see recipes below
  • 1 cup Heavy Cream

Instructions

  • Start water boiling for pasta. (salt if desired)
  • In a large frying pan over medium-high heat, add oil. Once hot, add sliced sausage pieces. Fry them until slightly browned then remove from heat.
  • Add pasta to boiling water and cook as directed on the package. Drain in colander and return to pot, away from heat.
  • In a sauce pan over medium-high heat, add butter, garlic powder, and onion powder. Once melted add flour and cook for 3 minutes. Whisk in milk and let cook for 3 minutes. Reduce heat to medium. Add paprika and ranch seasoning. Lastly add heavy cream and stir to combine. Let bubble another two minutes.
  • Add cooked sausage and ranch sauce to pot with cooked pasta. Stir to fully coated.

  • 1 tsp Chili Powder
  • 1 tsp Salt
  • 1 tsp Pepper
  • ¼ cup Maple Syrup
  • ¼ cup Bourbon I use Jim Beam
  • 6 slices Cheddar Cheese
  • 12 Dinner Rolls
  • 1 tbsp Everything Seasoning
  • Cooking Spray

Instructions

  • Preheat oven to 350degF.
  • In a large saute pan over medium-high heat, add ground beef, ground pork, onion and garlic. Cook and crumble until no longer pink. Reduce heat to medium.
  • Add tomato puree, Worcestershire sauce, cumin, chili powder, salt, pepper, maple syrup and bourbon. Stir to combine and cook another 5 minutes.
  • Split dinner rolls to make a top and bottom. Place the bottom layer on a parchment paper covered baking sheet. Spoon meat mixture evenly over top of roll bottoms. Cover with cheese slices.
  • Place roll tops over cheese. Spray with cooking spray and sprinkle with everything seasoning. Place in oven and back for 10 minutes.
  • Remove from oven and let sit for at least 5 minutes before cutting to separate individual sliders. Serve 2-3 per person.

SATURDAY

  • 3 pints Cherry Tomatoes

  • 1 tsp Dried Oregano
  • 1 tbsp Dried Basil
  • ½ cup Olive Oil
  • 1 tbsp Honey
  • 1 tbsp Worcestershire Sauce
  • ½-1 cup Water depending on desired consistency
  • 2 lb Italian Sausage
  • 2 15oz can White Beans drained
  • 1 cup Parmesan Cheese grated
  • 1 cup Heavy Cream

Instructions

  • Preheat oven to 400degF
  • On a parchment paper covered rimmed baking sheet, add tomatoes, onions, fresh basil and garlic. Sprinkle with salt, pepper, thyme, basil and oregano. Drizzle with olive oil. Place in oven and bake for 30 minutes (a small bit of charring is fine, but don't let it burn).
  • Remove from oven and let rest 5 minutes. Then remove to a mixing bowl and let rest another 10 minutes.
  • In a large stock pot over medium high heat, add sausage. Cook and crumble until no longer pink. Reduce heat to medium.
  • Add Worcestershire, honey and half cup of water to bowl and then blitz with immersion blender. Keep blitzing until smooth. Add water until sauce is at desired consistency. Add to pot with sausage.
  • Add beans and parmesan cheese to pot and let come just to a bubble. Reduce heat to medium-low and simmer another 10 minutes.
  • Service with a drizzle of heavy cream over top.

SUNDAY

Ultimate Spaghetti & Meatballs – When it comes to the ultimate comfort food, spaghetti and meatballs comes to mind almost every time. While some say you have to have this cooking all day long, you really can get great flavor out of just over an hour’s worth of cook time. Which makes it ideal for a Sunday supper, but also still doable for a weeknight dinner. This recipe for the Ultimate Spaghetti & Meatballs is going to really impress the whole family.

For the Meatballs

  • 2 lb Ground Beef
  • 1 cup Bread Crumbs
  • 1 tsp Garlic Powder
  • 1 tsp Paprika
  • 1 tsp Salt
  • 1 tbsp Dried Minced Onion
  • 1 tbsp Tomato Bouillon
  • 1 tbsp Italian Seasoning

Instructions

  • In a large saute pan over medium high heat, add olive oil, onion, garlic, basil and oregano. Let saute for 4 minutes. Add remaining sauce ingredients and thoroughly combine. Reduce heat to medium-low.
  • Preheat oven to 350degF.
  • In a mixing bowl add meatball ingredients and thoroughly combine. Using a 1 ounce food scoop to portion out meat mixture. Use you hands to roll each into a ball and place on a cooking rack (spray with cooking oil) over a parchment paper covered sheet pan. Place in oven and cook for 25 minutes.
  • Remove meatballs from oven and add to simmering red sauce. Let continue to simmer until pasta is cooked.
  • Start water boiling for pasta (salt as desired). Once ready, add pasta and cook as directed on packaging. Drain in colander and return to pot away from heat.
  • Remove meatballs from the sauce to a bowl. Pour remaining sauce over cooked pasta and toss to coat.
  • Serve a portion of sauced pasta with 6-8 meatballs over the top.

Cheesy Mushroom & Rice Bake

Classic weeknight cooking is often a casserole or bake style meal. You put all of the ingredients (some partially prepared) into a baking dish and let it all bake it all up in the oven. These are ideal for busy weeknights as you do a very small amount of active time in the kitchen, and then oven does all the rest. Chicken and rice is a great starting point for a bake and this recipe adds in some delicious mushrooms and cheese. Your family is sure to really enjoy this Cheesy Mushroom & Rice Bake.

While it does add an extra step, and an extra pan to clean, toasting the rice with the onions and garlic is key to making sure the rice is cooked through. That is usually the failure point of rice in a bake, it doesn’t get cooked through evenly. By toasting the rice before adding it, you start the process of opening up the grains so that they can absorb the liquids and plump up. It only takes a few minutes and will save the dish in the end.

I like to use the small white (sometimes called Button) mushrooms or Cremini mushrooms. Really you can use whatever type of mushrooms you prefer. Just make sure to cut them into slices that are about a quarter inch thick and no bigger than your chicken chunks. Alternatively, you can also chop the mushrooms, if you don’t want them to be as visible (some kids need a little trickery to eat some things).

You will need a 13×9 baking dish. I prefer a glass dish but you can use a stonewear piece like the one from Le Creuset, or a metal one. Just remember to adjust your baking time based on your experience using it in your oven.

  • ½ Yellow Onion diced
  • 4 Garlic Cloves minced
  • 2 cup Long Grain Rice
  • 2 cup Chicken Broth
  • 2 lb Chicken Breasts cut into 1-inch chunks
  • 1 cup White or Cremini Mushrooms sliced
  • 1 cup Cheddar Cheese shredded
  • 1 tsp Parsley

Cheese Sauce

  • 4 tbsp Butter
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 4 tbsp Flour
  • 2 cup Chicken Broth
  • 1 tsp Parika
  • 1 tsp Salt
  • 1 cup Heavy Cream
  • 2 cups Cheddar Cheese shredded

Instructions

  • In a saute pan over medium high heat, add oil, onion and garlic. Cook for 3 minutes then add rice. Toast for 3 minutes more. Transfer to 13×9 baking dish. Add chicken broth, mushrooms, and chicken.
  • Preheat oven to 400degF.
  • In a saucepan over medium heat, add butter, onion powder, and garlic powder. Once melted, whisk in flour and let cook for 3 minutes. Whisk in chicken broth and paprika and cook for 3 minutes. Stir in heavy cream and cheese. Cook another 3 minutes. Then add to baking dish. Stir to thoroughly combine.
  • Cover baking dish with foil and place in over to bake for 30 minutes.
  • Remove foil from baking dish and sprinkle with remaining cup of cheese and parsley. Bake for another 15 minutes. Let stand for 5 minutes before serving.

Cheesy Pinto Beans

I know I say this often, but don’t forget about the side dishes when you are making your dinner plans. Some recipes are all inclusive and you don’t need to worry about a side dish. But lots of them do need a supporting dish to make for a rounded out meal. Most often you want to go for a starchy type side – like pasta or potatoes or beans. This Recipe for Cheesy Pinto Beans is perfect for all of your Mexican inspired dishes like tacos or burritos or quesadillas.

These beans are not to be confused with refried beans, as there is very little added fat (just the cheese) and they are definitely not refried. I like to smush up the beans as they cook for two reasons, they release the starch to thicken things up. And they give you both textures of the mashed bean and the whole bean. All that said, you could certainly replace the whole beans with cans of refried beans and still have a great side dish.

For the technique of smushing the beans, I suggest using a classic old-school wooden spoon. It has the right shape for the side of a pan and provides enough leverage to smush the beans. I have learned that the plastic style spoons don’t really work for this because the handles have too much give and then you push too hard on the pan and that can get dangerous.

  • Drain one can of pinto beans.
  • In a large pot over medium high heat, and add all ingredients. Bring to a bubble, stirring regularly to get all of the cheese melted.
  • Once the beans are soft enough to smush with the back of a spoon reduce the heat to medium low. Every few minutes smush more of the beans and stir the contents to prevent sticking to the bottom of the pan.
  • Continue doing this until the beans are to your desired thickness and texture, at least 20 minutes.

Who doesn’t love #TacoTuesday – I mean you can have classic tacos or you can have some super fusion tacos and still be celebrating this weekly tradition. My family loves tacos and YES we really do have tacos almost every single week. BUT – we do not typically have the same exact tacos every week. I am also trying to find new ways to make a taco – whether it is a double decker or a new slaw or a fresh salsa or maybe a totally different taco on the classic taco with a Korean take on things. I have pulled together a collection of taco recipes to make sure you never have to skip a Taco Night in your house.

My favorite Recipes Using Ground Turkey

A few key kitchen tools you may want to have to hand when it comes to making these shrimp recipes:

  1. Grill Pan – You should always warm up your tortillas, whether soft of hard, corn or flour. And one way to really step up your taco game is to lightly toast them on a grill pan. It’s a simple extra step that will be totally worthwhile.
  2. Taco Holders – These are a great addition to any taco lovers kitchen. They are so handy -make it easy to build all the tacos in an assembly line, and easy to serve them up.
  3. Chef’s Knife – when it comes to making fresh salsas and slaws, you need to be able to have good knife cuts so things are uniform and come together nicely.

What’s been going on at Homemade on a Weeknight?

We did it! We made the big push and got the whole family (kids, dogs and chickens) to Montana by Christmas Eve! So we have officially spent our first Christmas in Montana! We didn’t get snow until a few days later, so we welcomed the New Year with a fresh layer of snow and 10degF weather! We have converted one of our enclosed trailers into a prep kitchen so that I can continue to cook (I might go a little nuts, if I can’t still cook). I am still working out how to get a good loaf of sourdough from the tiny camper oven. I’ve found a new pot that is short enough to fit in there with a lid on! And it’s super pretty too – check out my new Dutch Oven. And here are some shots of our property!

This Week’s Dinner Plans #10

Planning out the week’s meals is something I do every Sunday for my family. I do this for a few different reasons – one it helps me get into the mindset of a new week ahead. Two it gives me the opportunity to look through the freezer, fridge and pantry to see what might need to be used up, what do I already have on hand, and what do I need to get from the store. I also try to think ahead of how can a double prep something one night to use another night, or say when a recipe calls for half an onion – I make sure to make something that needs the other half within a few days.

I also like to check in with the family to see if they have anything they have been specifically craving or wanting to try something new. Sometimes this is a fruitful ask and sometimes I get bupkitz. But I still try to ask because I also get the ‘don’t forget I’m going to dinner with a friend this night’ or ‘just please no more rice/pasta/whatever’. This is all valuable info for making a dinner menu plan for the week ahead. I also like to use a menu planner with a grocery list – like this one – to make things that much easier.

Tools You May Need

To have success with the recipes this week – here are few items that I think you may consider adding to your kitchen if you do not already have them.

A Good Sharp Chef’s Knife – this week’s menu has a few recipes that really need good knife cuts

An Extra Large Saute Pan – also called an “Everyday Pan”, these are perfect one pan meals.

A Grill Pan – I use this to give those beautiful grill lines to sandwiches, meats, and tortillas. It’s just that something extra.

Here is my plan for the week ahead. I have included the links to the original posts (you can find more info about substitutions, and processes in the full posts), as well as the full menu right here so that you don’t have to go anywhere if you don’t want to.

MONDAY

BLT Salad – Entree salads are a fantastic weeknight meal and entree sandwiches make excellent flavor profiles for these creations. That’s why when you make these BLT salads your whole family will have happy tummies. The simple profile of Bacon, Lettuce and Tomato coupled with my Homemade Garlic Croutons, sharp cheddar and a creamy garlic dressing is a win across the board.

A hearty entree salad loaded with bacon, lettuce and tomatoes, all with a delicious creamy garlic dressing.

Ingredients

  • 1 20oz pkg Thick Cut Peppered Bacon cut into 1inch pieces
  • 3 Romaine Hearts chopped
  • 10 oz Sharp Cheddar Block Cheese cut into ½inch cubes
  • 2 cups Cherry Tomatoes halved
  • 2 cups Garlic Croutons see recipe below

For the Creamy Garlic Dressing

  • cup Mayonanaise
  • ½ cup Sour Cream
  • 1 tbsp Minced Garlic
  • ½ tsp Salt
  • ½ tsp Pepper
  • ½ cup Fresh Chives finely chopped
  • ¼ cup Heavy Cream
  • 1 tbsp Lemon Juice
Get Recipe Ingredients

Instructions

  • Whisk together dressing ingredients in a mason jar. Secure lid and place in refrigerator until ready to serve (up to 10 days). *Add more heavy cream if you prefer a "looser" dressing
  • In a large saute pan over medium high heat, add bacon pieces in a single layer, each laying flat. Cook for 2-3 minutes on each side, flipping each individually to preserve the "chip". Remove to cool on a paper towel covered plate. *Note, cook in batches if you cannot fit them all in the pan flat at the same time.
  • In a large mixing bowl, add romaine, cheese, tomatoes, croutons, and ¾ of dressing. Toss to evenly coat and mix.
  • Serve with an extra drizzle of dressing, as desired.

TUESDAY

Pork Tacos with Corn Slaw – Taco night does not have to be your play old chicken soft taco supreme (unless of course that’s what you are craving).   • 15 Street Taco sized Flour Tortillas
  • 2 lb Ground Pork
  • 2 tbsp Taco Seasoning see recipe below
  • 1 tbsp Lime Juice
  • 1 9oz can Tomato Paste
  • 1 cup Vegetable Broth
  • 1 Jalapeno sliced
  • 1 Spicy Creamy Corn Slaw see recipe below
Get Recipe Ingredients

Instructions

  • Prepare corn slaw as directed in recipe below.
  • In a frying pan over medium high heat, add ground pork and taco seasoning. Cook and crumble until no longer pink.
  • In a small bowl combine broth, lime juice and tomato paste. Pour over ground pork. Reduce heat to medium low and let simmer.
  • In grill pan over medium high heat, toast off each tortilla for approximately 90 seconds on each side. Continue until all tortillas are grilled.
  • To build a taco, add a portion of ground pork along side a portion of corn slaw. Then top with a few slices of jalapenos. Repeat with remaining tortillas.

WEDNESDAY

Meatball Couscous Soup – This soup brings together some lovely Moroccan flavors in a delicious broth with scrumptious chicken meatballs. With so many bold flavors packed into this recipe, you do not actually have to do that much work. Meatball Couscous soup is going to be a big hit and makes for a perfect weeknight meal.

Ingredients

  • 1 Shallot finely chopped
  • 3 Garlic Cloves finely chopped
  • 3 tbsp Oil divided
  • 1 tbsp Thyme
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 tsp Turmeric
  • 2 qts Chicken Broth
  • 2 qts Water divided
  • 2 cups Pearl Couscous
  • 1 tbsp Lemon Juice
  • 2 tbsp Fresh Parsley chopped

For the Chicken Meatballs

  • 2 lb Ground Chicken
  • 1 cup Panko
  • 2 tsp Tumeric
  • 2 tsp Chili Powder
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 tsp Thyme
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • ½ tsp Nutmeg
Get Recipe Ingredients

Instructions

  • In a large pot over medium high heat, add two tablespoons oil, shallots, garlic, thyme, salt, pepper and turmeric. Once sauted, add chicken broth and one quart of water. Reduce heat to medium-low and let simmer for 45 minutes.
  • Preheat oven to 400degF.
  • Combine meatball ingredients in a bowl. Use a 1-inch scoop to portion out meatballs (shape with your hands as needed). Line out on a baking rack over a parchment paper covered baking sheet. Place in oven to bake for 20 minutes.
  • In a large sauce pan, add 3 cups of water and one tablespoon of oil. Bring to a rolling boil. Add couscous, cover pot and move off of heat. Let sit until meatballs are finished.
  • Stir couscous into broth. Add 6-8 meatballs to a bowl and ladle soup over top. Garnish with parsley.

THURSDAY

Chicken & Creamy Garlic Shells – Chicken and pasta is a great combo for a #weeknightdinner. It’s simple to put together and will definitely not put a dent in the family food budget. This recipe for Chicken & Creamy Garlic Shells is really easy to make and can be on the table in 30 minutes (if you remember to marinate the chicken the night before or in the morning before heading out for the day).

  • 1 lb Small Shells
  • 2 tbsp Butter
  • 2 tbsp Oil
  • 3 tsp Garlic Powder divided
  • 4 tbsp Flour
  • 1 tsp Salt
  • 2 cup Broth chicken or vegetable
  • 1 cup Heavy Cream
  • 2 tbsp Parsley Flakes

For the Chicken

  • 6 Chicken Breasts
  • 2 cups Chicken Broth
  • 1 tbsp Garlic Powder
  • 1 tbsp Onion Powder
  • 1 tbsp Paprika
  • 1 tsp Salt
  • 1 tsp Pepper
  • ¼ cup Avocado Oil
Get Recipe Ingredients

Instructions

  • Add ingredients for the chicken to a gallon sized zipper bag. Let marinate at least 30 minutes (up to overnight)
  • Start water boiling for the pasta.
  • In a stove top grill pan (or frying pan), over medium high heat, add marinated chicken breasts. Cook for 5 minutes on each side. Reduce heat to medium and cover pan. Let cook another 10 minutes (or until thickest part of chicken reaches 165degF internally).
  • In a sauce pan over medium heat, add oil, butter and two teaspoons of garlic powder. Once melted whisk in flour. Let cook for 3 minutes then whisk in broth, and salt. Cook another 3 minutes and whisk in heavy cream. Let cook another 3 minutes.
  • Add pasta to boiling water and cook as directed on the package. Drain in colander and rinse with cool water. Return to pot away from heat.
  • Remove sauce from heat and stir in remaining garlic powder, and parsley. Pour over cooked pasta and stir to evenly coat.
  • Serve portion of pasta with grilled chicken.

FRIDAY

Simple Sausage Pasta – Sausage, pasta and tomatoes are a classic combo, especially when it comes to weeknight meals. But you don’t always want to go for a fun red sauce. This simple creamy parmesan sauce with diced tomatoes makes for a delicious marriage between the Italian sausage and linguini. My recipe for Simple Sausage Pasta is a must for the monthly dinner menu rotation.

  • lb Italian Sausages links not ground
  • 2 lb Linguine
  • 4 tbsp Butter
  • 2 cups Milk
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 tsp Dried Basil
  • 1 tsp Dried Oregano
  • 1 tsp Dried Parsley
  • 1 cup Grated Parmesan Cheese
  • 1 cup Heavy Cream
  • 1 15oz can Petite Diced Tomatoes
Get Recipe Ingredients

Instructions

  • Start the water boiling for the pasta. (salt if desired)
  • In a large saute pan over medium high heat, cook Italian sausages through, without getting them too dark brown. Remove sausages to cutting board and let rest.
  • Add past to boiling water and cook as directed on the package. Drain pasta in a colander and return to pot, away from heat.
  • Slice sausages into ½ inch rounds.
  • In the same pan, reduce heat to medium, and add butter. As the butter melts, scrap up an bits from the bottom of the pan. Add seasonings and let cook some in the butter. Then add milk and bring just to a bubble (do not scorch), then add in parmesan cheese and continue to stir for 3 minutes, then add tomatoes and cook another 3 minutes. Next stir in heavy cream and return sausages to pan.
  • Once the sauce has slightly thickened, pour it over the cooked pasta and used thongs to combine, as well as serve. Sprinkle with additional parsley and parmesan, if desired.

SATURDAY

Smoked Pineapple Teriyaki Burgeres – Sometimes you just want a classic bacon cheeseburger – and sometimes you want something a little extra, dare I say, a little bit gourmet when it comes to your burger night. By going down the fusion road, you can take the classic flavors of the islands and turn it into a dang tasty burger. The smoky flavors with sweetness of the pineapple and teriyaki sauce, then the zing of the onion all come together for a fantastic burger bite. If you are looking for a new way to celebrate #burgernight – this recipe for Smoked Pineapple Teriyaki Burgers will fit the bill.

  • ¼ cup Teriyaki Sauce
  • 1 tsp Grated Fresh Ginger
  • ½ tsp White Pepper

For the Burger

  • 2 lbs Ground Beef
  • ½ cup Teriyaki Sauce plus more for glazing
  • 1 tbsp Dried Minced Onion
  • 1 tsp Grated Fresh Ginger
  • 1 cup Breadcrumbs

Instructions

  • Start smoker preheating for initial smoke.
  • In a bowl, combine burger ingredients, along with pineapple juice from can of pineapple slices. Divide into 6 equal portions and form into 1-inch thick burger patties.
  • In a small bowl, combine mayo, ginger, white pepper and teriyaki. Place in refrigerator until ready to build the burgers.
  • Increase the temperature of the smoker to 250degF. Place burgers on grate and let cook for 10 minutes on each side.
  • Increase heat to 400degF. Add pineapple slices and onion slices to grill.
  • Brush each patty with teriyaki and let cook another 5 minutes. Flip each patty and brush each patty with teriyaki. Flip pineapples and onions. Cook another 5 minutes. Remove all from the smoker.
  • Add burger buns to grill and let toast for 3 minutes.
  • To Build the burger, add teriyaki mayo to bottom bun, top with patty, then onion slice then pineapple slice. Add greens and more teriyaki mayo then top bun.

Citrus Chipotle Chicken

A sweet and spicy chicken dish your family is going to love!

Ingredients

  • 8 Chicken Thighs bone-in, skinless
  • 2 Large Navel Oranges juiced and zested
  • ½ cup Oil
  • 1 7 oz can Chipotle Peppers in Adobo Sauce chopped
  • 4 Garlic Cloves minced
  • ¼ cup Honey
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 tsp Cumin
  • 1 tbsp Dark Brown Sugar
  • 3 Scallions chopped, for garnish

Instructions

  • Add all ingredients except scallions to a Ziploc bag. Place in refrigerator to marinate for at least 30 minutes – up to overnight.
  • Preheat oven to 425degF
  • In large saute pan over medium high heat, add pieces of chicken. Pour marinade into a small saucepan and let simmer on medium-low while chicken is cooking. Cook chicken on each side for 3-4 minutes.
  • Transfer chicken to a parchment paper covered baking rack on a baking sheet and place in oven. Baste with simmered marinade 3 or 4 times during 30 minutes of cooking.
  • To serve, drizzle with remaining cooked down marinade and sprinkle with scallions.

Whether you are looking for a recipe to use up holiday ham or just a simple casserole for a weeknight dinner, you have come to the right blog post. This casserole is super easy to put together but packed with flavor. Ham & Potatoes au Gratin combines a simple cheese sauce with golden potatoes, and ham chunks for a great casserole.

You will want to use an adjustable hand mandoline to get your potatoes sliced to about a quarter inch thick. It’s important to get them all cut the same thickness so that they will cook at the same rate. If some are extra thin and some are extra thick, you will not get good texture throughout. Basically some will be mushy and some will still be a little raw.

If you are using leftover holiday ham, you will just want to cut it up into chunks. I wouldn’t suggest that you use deli ham unless you can ask for it to be cut a little thicker than most give for a sandwich. You want it to be about a quarter inch thick and then roughly chop it into smaller pieces. You can buy a chunk of ham and cut it up with a meat slicer.

A creamy and velvety homemade cheese sauce over thin sliced potatoes and chunks of ham.

Ingredients

  • 8 Medium Golden Potatoes peeled and thin sliced
  • 4 tbsp Butter
  • 1 tsp Garlic Powder
  • 4 tbsp Flour
  • 2 cup Chicken Broth
  • 1 cup Heavy Cream
  • 3 cup Cheddar Cheese shredded, divided
  • cup Mozzarella Cheese shredded, divided
  • 2 tbsp Dried Minced Onion
  • 1 tsp Parsley Flakes
  • ¾ lb Ham thick sliced and rough chopped

Instructions

  • Prepare all of the ingredients. Preheat oven to 350degF.
  • In a saucepan over medium heat, add butter and garlic powder. Once melted, whisk in flour. Cook for 3 minutes then whisk in chicken broth. Cook for 2 minutes then whisk in heavy cream. Cook for 2 minutes then whisk in 2 cup of cheddar, and 1 cup of mozzarella. Once fully melted in, whisk in dried onion. Then stir in ⅔ of the chopped ham.
  • In a 13×9 baking dish (or 2 8×8 baking dishes), pour ⅓ of the cheese sauce into bottom. Add half of the sliced potatoes in a even layer. Pour ⅓ of the cheese sauce over the potatoes. Add second half of potatoes in a even layer. Pour remaining cheese sauce.
  • Sprinkle with remaining cheeses and ham. Sprinkle with parsley flakes. Place in oven and bake for 60 minutes. Let rest at least 5 minutes before serving.

Blackberry Prosciutto Crostini

Making appetizers can be so fun, but can also get overwhelming. This appetizer recipe brings together a classy elegance but is really quite simple. It may seem daunting to make your own blackberry compote, but it really is just so super simple to do. The sweet and salty combo of the compote and prosciutto is such a nice bite. If you are in need of an appetizer that looks just as good as it tastes, then this recipe for Blackberry Prosciutto Crostini will fit the bill.

I have included my recipe for a very simple blackberry compote. If you need to save time, or can’t find fresh blackberries, you can always use a jarred version. I do prefer a compote over a jam for this particular preparation. Both are essentially fruit and sugar cooked down. The main difference is whole versus chopped/crushed fruit. Compotes use whole fruits and tend to have a much chunkier texture.

You will notice that I listed whipped cream cheese and not just block cream cheese. This gives the final result a bit lighter feel to it. You can find pre whipped cream cheese at the grocery, or you can whip it yourself. If you need to whip it yourself, I suggest using a whisk attachment for your stand mixer. You want to whisk it on a medium setting for about 5 minutes to get a nice texture.

Blackberry Prosciutto Crostini

A classy, elegant and simple appetizer, perfect for your next get together.

Ingredients

  • 1 Baguette cut into ½ inch slices
  • ½ lb Prosciutto thinly sliced
  • 8 oz Cream Cheese whipped
  • 1 sprig Fresh Chives cut in 1 inch pieces

For the Blackberry Compote

  • 1 pint Blackberries
  • 1 cup Sugar
  • 1 cup Water
  • 1 tsp Salt

Instructions

  • Preheat oven to 425degF
  • In a sauce pan over medium heat, add water, sugar, salt and blackberries. Stir occasionally, while allowing to come to a boil. Gently smash blackberries while letting bubble for 5 minutes. Then reduce heat to medium low and let simmer for 15 minutes more. Remove from heat and let cool slightly.
  • Line bread slices on a baking sheet. Lightly spray with cooking oil. Place in oven and back for 5 minutes. (Should be a very light toast). Let cool for about 5 minutes.
  • Smear each bread slice with cream cheese then add a spoonful of blackberry compote. Add two or three small pieces of prosciutto to the top and then two or three pieces of chives.
  • These can be served right away or cover and placed in refrigerator, up to overnight.

Weeknight cooking is centered on the idea of simplicity while still being packed with flavor. You shouldn’t have to slave over the stove all day to make a delicious family meal. One pan meals are always a great way to build flavor because when you cook it all together you get a cohesive final dish. This particular recipe for #OnePan Cheesy Sausage Pasta checks all the boxes – it’s simple and flavorful.

One key factor in the success of a recipe like this is having the right equipment. I can honestly say that I would be lost without my LivWell Everyday Pan with lid. I use it at least 3 meals a week, as it is just so versatile. You can make one pan pasta or rice dishes in it. You can use it for frying, you can use it for sauting, you can use it for sauces.

I have listed medium shell pasta for the type of pasta, which really is just what I had to hand on the day I created this recipe. You can really use any short pasta – elbows, penne, cavattapi, spirals, etc. You may need to adjust the liquid content if you use a thicker pasta. I have also listed cheddar cheese – you can do milk, medium or sharp. You could also take this a different direction and use a milder cheese like mozzarella or you could give it a kick with some pepper jack cheese.

Since you have your protein, starch and veg all in the pan, you aren’t really going to anything on the side. You could add a cheese toast or maybe a simple green salad. This pasta also makes for a great next day lunch, as it reheats really well.

#OnePan Cheesy Sausage Pasta

The perfect weeknight dinner – simple pasta with sausage in a cheese sauce, with broccoli.

  • 2 tbsp Oil
  • ½ Yellow Onion fine chopped
  • 1 tbsp Minced Garlic
  • 2 lb Smoked Sausage halved and cut into ½inch pieces
  • 1 lb Medium Pasta Shells or any short pasta
  • 2 cups Beef Broth
  • 2 cups Milk
  • 2 cups Broccoli rough chopped
  • 1 tsp Salt
  • 1 tsp Paprika
  • 1 tsp Ground Mustard
  • 1 tsp Pepper
  • 2 cups Cheddar Cheese shredded
  • 1 cup Heavy Cream

Instructions

  • In your largest saute pan over medium high heat, add oil, onions and garlic. Saute about 3 minutes then add sausage chunks. Cook for about 5 minutes. Then reduce heat to medium.
  • Add pasta, milk, chicken broth, broccoli and seasonings. Add enough eater to fully submerge everything. Bring just to a bubble, then cover pan and let cook for 20 minutes.
  • Remove lid and add heavy cream and cheese. Stir until fully combined. Let cook another 5 minutes. Then let rest away from heat for 5 minutes before serving (sauce will thicken up.)
