A little about me – I’m a Wife and Mom. My husband, four kids, 5 dogs and 75+ chickens (and counting) all currently live in the rural Montana. We are embarking on the adventure of a lifetime as we live out our dreams of being Homesteaders! Like the name implies – I love to make homemade meals every night of the week for my family. I care about what types of things we are eating and I like to try new things. This blog is all about sharing those journeys and adventures with you.

Welcome to the Weekly Book Report and Book Review Link-up #14!

Every Wednesday I will be sharing my latest read – which could be a cookbook, a celebrity chef biography or memoir, a lifestyle book, a gardening book, a homemaking book or maybe even a cozy kitchen mystery book. They may be paper books, eBooks, or audio books. I have challenged myself to read or listen to at least one book per week, and I plan to share that with you all here.

About the Author:

My Review:

I have been a fan of the Pioneer Woman – Ree Drummond – for quite some time. She has such a great personality, full of grit and grace. This book tells the story of how she came to be the “Pioneer Woman” a life she didn’t originally plan on. It really is a story book or fairytale romance about the way she meet her husband and the life they built together. The book is written in such a a way that you almost feel like you are just sitting on her ranch while she tells the story over coffee or wine. It was so easy to read in weekend, cozy in bed while the rain falls. If you are looking for a make your heart smile type story then this is the book for you.

The weather around here is turning colder every day. And while I love soups all year round, I ramp up the soup making in the colder months. This soup recipe I, actually, stumbled on to rather by accident. I was making pasta sauce to jar for later in the year, and had too much to toss but not nearly enough to fill another jar. So I decided to make a pizza quesadilla and dip it into the sauce. While I was dipping I found myself just eating it with a spoon, and realized it would make for a delightful tomato soup. And thus this recipe for Roasted Tomato Soup was born.

Everyone that I have served this soup to has asked me if I put milk or cream into it. They are all shocked to learn that there is no dairy added to this mix, yet it is so very creamy. This comes from two key steps in the recipe. One is the lower temperature for the roasting. The vegetables get softer without losing all their moisture due to splitting. And secondly the use of the immersion blender. By really really blitzing the ingredients together, the aeration gives a lean to the creamy soup range.

Substitutes and Variations:

If you can’t find cocktail tomatoes, you can use san manzanos, romas or cherry tomatoes. Anything bigger or smaller will not work. The smaller tomatoes have too much skin to flesh ration and the larger varieties tend too be too liquidy. If you don’t have fresh basil, dried will do just fine.

Suggestions for Sides:

This goes so perfectly with my Garlic Bread Cheese Toastie. You get to act like a kid again and dip or dunk your toastie into the scrumptious soup. You could also go soup and salad with a nice Caesar salad along side this soup.

Tools that may make this recipe easier:

You will need an immersion blender to get this soup really creamy. If you dont have one, I would use a smoothie blender (and blend it in batches) over a traditional blender.

Roasted Tomato Sauce

A simple homemade soup made of roasted tomatoes, onions, garlic and herbs.

Prep Time 5 minutes
Cook Time 1 hour
Servings 4 servings

Ingredients

  • 2 pints Cocktail Tomatoes
  • 1 White Onion cut into quarters
  • 4 Garlic Cloves peeled
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 tsp Dried Oregano
  • ½ cup Fresh Basil Leaves
  • ½ cup Olive Oil
  • 1 tbsp Honey
  • 1 tbsp Worcestershire Sauce
  • 1 tbsp Paprika
Get Recipe Ingredients

Instructions

  • Preheat oven to 400degF
  • On a parchment paper covered rimmed baking sheet, add tomatoes, onions, fresh basil and garlic. Sprinkle with salt, pepper, and oregano. Drizzle with olive oil. Place in oven and bake for 30 minutes (a small bit of charring is fine, but don't let it burn).
  • Remove from oven and let rest 5 minutes. Then remove to a mixing bowl and let rest another 10 minutes.
  • Add Worcestershire, honey and paprika to bowl and then blitz with immersion blender. Keep blitzing until smooth.
  • Transfer to large pot and place on stove over medium heat. Let bubble and simmer for 30 minutes. Serve with a swirl of olive oil over the top.

What’s been going on at Homemade on a Weeknight?

The Autumn season is upon us. We are dipping down into the 30s almost every night now. As ominous as it sounds – Winter is Coming! We have discovered mulching for our garden, and just planted 70 giant garlic cloves in hopes od having a decent harvest some spring. I have also been tinkering with some home remedies for cold and flu. I’ve made some Elderberry Fire Cider as well as bottled my Mullien Tincture. Its amazing how pretty they looks! Do you have any homeopathic remedies you swear by?

Grilled Garlic Shrimp

While a lot of my recipes are for full meals, or full dishes, sometimes I like to share key components that can be used in a variety of ways. Like this recipe for Grilled Garlic Shrimp. You can use this for salad, pasta, over steak or chicken, in a rice bowl or along with some grilled veggies. It is as simple combo of common ingredients that make it fairly versatile.

Grilled Garlic Shrimp

I almost always prefer to serve shrimp out of the shell, with the tail off. I know there are preparations that it works better to have the tails on or even the shells, but I dont like the mess. But I also do not like to leave tails on shrimp when the majority of the meal is to be eaten with a fork. Not my favorite to be digging in Alfredo sauce to get the shrimp tails off.

Substitutes and Variations:

Depending on how you plan to serve this, you could leave the tails on the shrimp. I personally don’t like to have tails on if the meal is meant to be eaten with a fork and not your hands – like pasta. If you wanted to add more heat you could add in red pepper flakes. If you wanted a brighter or fresher component, you could add lemon juice.

Suggestions for Sides:

This goes great over a Broccoli Fettuccine Alfredo. You can also serve it with a rice pilaf or fried rice. You can add it to a rice bowl, have it in a burrito or serve it over buttered noodles. If you cool it, you can add it to a Caesar salad as well.

Tools that may make this recipe easier:

The grill pan is the star of making this recipe. I love my grill pan. I use it pretty often, especially in the rainy months when its just too wet out or in the subzero days when it takes too much fuel to keep the grill to temperature. One thing about picking a grill pan, is to make sure the raised “grill lines” actually cover the majority of the flat bottom of the pan. I’ve seen some that end and inch or more from the edge and this is just wasted cooking space. This resulting in the whole meal taking longer to prepare as you have to do more batches.

Grilled Garlic Shrimp

A classic and flavorful recipe for grilled garlic shrimp
Course Main Course
Cuisine American

Prep Time 5 minutes
Cook Time 15 minutes
Marinating Time 1 hour
Servings 6

Equipment

Ingredients

  • 3 lb Jumbo Shrimp deveined, peeled, tails-off
  • ½ cup Olive Oil
  • 1 tbsp Garlic Powder
  • 1 tbsp Dried Parsley
  • 1 tsp Onion Powder
  • 1 tsp Salt
  • 1 tsp Pepper
Get Recipe Ingredients

Instructions

  • Combine all ingredients in a bowl and toss to coat evenly. Cover and place in refrigerator for at least an hour.
  • Using a Grill: Heat grill to highest heat. If grill grates opening are wider than shrimp, use a mesh grill pan or foil to prevent falling through. Add shrimp, one a time to the grill. Once you get them all on the grill, wait two minutes then start flipping each over. Again wait two minutes and remove from heat once opaque.
  • Using a Grill Pan: Heat pan to high. You will have to grill the shrimp in batches. Start adding the shrimp one at a time to the pan. Once the pan in full, wait 3 minutes then go back to the start and flip each shrimp. Wait another three minutes and remove from heat once opaque.
  • If serving in a hot/warm preparation, keep warm on a platter in cold oven.
  • If serving in a cool/cold preparation, you can bring down to room temp on the counter than transfer to a container and place in the refrigerator.

Pepper Jack Chicken & Rice

Chicken & Rice is such a great place to start when making homecooked meals on a Weeknight. You can go in so many directions with just a few added ingredients. This recipe gets a little spicy and smoky with the addition of pepperjack cheese and crispy bacon. Pepper Jack Chicken & Rice is a hearty and complete dinner that you and your family are going to really enjoy.

If you haven’t made “red rice” before, you are going to make to log that portion of this recipe into your culinary memory bank. It is such a great side dish if you want something more than just plain rice. You can simply enhance it with different seasonings and spices to go with different cuisines – for example add some cumin and chili powder to make it more Mexican or add some basil and oregano to go Italian.

Substitutes and Variations:

Other than variations on the rice, you can use chicken thighs (boneless or bone-in). You just need to adjust to rhe cook time to make sure the internal temp makes it to 165degF. If you need to take the heat dough you could just use Colby jack cheese in place of the pepper jack.

Suggestions for Sides:

I made a simple green salad (romaine, carrots, cherry tomatoes, cucumbers, croutons) to go with this. You could do a veggie medley with simple butter, garlic, salt and pepper, as well.

As I always say, you should use a baking rack over parchment paper covered baking sheets when you bake any type of meat. This allows for good air flow, which results in even cooking.

Pepper Jack Chicken & Rice

Kicking the classic combo of Chicken & Rice up a few notches with the addition of peppers, cheese, and bacon!
Course Dinner, Main Course
Cuisine American

Prep Time 10 minutes
Cook Time 45 minutes
Marinating Time 30 minutes

Ingredients

  • ½ lb Bacon
  • 1 lb Pepper Jack Cheese shredded or crumbled

For the Chicken

  • 6 Chicken Breast
  • ½ cup Oil
  • 1 cup Chicken Broth
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 tsp Oregano
  • 1 tsp Paprika
  • 1 tsp Black Pepper
  • 1 tsp Parsley

For the Red Rice

  • cup Long Grain Rice
  • 2 tbsp Oil
  • ½ cup White Onion minced
  • 2 cloves Garlic minced
  • 1 tbsp Paprika
  • 1 tbsp Parsley
  • 1 15oz can Tomato Puree
  • 1 qt Chicken Broth
Get Recipe Ingredients

Instructions

  • Add all chicken ingredients to a bowl or zippered plastic bag. Combine and let sit for at least 30 minutes (up to overnight).
  • Preheat oven to 375degF.
  • Remove chicken from marinade and place in a single layer on a baking rack over a parchment paper covered baking sheet. Bake for 25 minutes.
  • In a large saute pan over medium high heat, cook bacon until crispy. Remove to a paper towel covered plate to cool. Reserve grease in the pan and reduce heat to medium
  • Carefully add oil to the bacon grease along with onion, garlic and rice. Toast until the rice in a golden brown. Then add remaining rice ingredients to the pan. Bring to a bubble, then cover and let cook for 20 minutes.
  • Remove chicken from oven and sprinkle with cheese and bacon. Return to oven for 10 minutes more.
  • Remove from the oven and let rest for 5 minutes.
  • Add a portion of rice to a plate and sprinkle with remaining cheese and bacon. Then top with a piece of chicken.

My Review:

A murder mystery that brings an unlikely group of women together over their love of books, cheap wine, fresh baked goods and the truth. This book is a fun weekend binge read. And a few weekends to come as it is the first of an 8 book series. The main character Nora is so well written, you really just want to be her friend. I always love a “Fresh start” story when someone sets out to reinvent themselves and discovers they are more than they gave themselves credit for.

What’s been going on at Homemade on a Weeknight?

This week was a rough one. My second oldest son has left for Army Bootcamp. We spent this last week getting him all squared away to embark on this next chapter of his life. I also let him pick all of the meals for the week. It wasn’t until the Friday that I realized that while he had picked things he definitely enjoyed, we had also picked each of his three siblings’ favorite meals. We said a lot of prayers, shed a fair bit of tears and said so long to our newest solider. Its such a strange mix of proud and sad to watch your child turn into an adult right before your eyes.

Chicken – 15 Ways! #RecipeCollection

Honestly, chicken is probably the most versatile proteins you can easily obtain over a majority of the world. You can find chicken as a prominent staple on many a family meal plan. From pastas and soups to pizzas and enchiladas, you can make just about anything with chicken as the centerpiece. There are so many ways to use chicken – this is just 15 of them together so you can check out some tried and true and maybe new to you Chicken Recipes.

A few key kitchen tools you may want to have to hand when it comes to making these Chicken Dishes:

  1. Kitchen Tongs – whether you are grilling chicken or cooking it in a pan – you are going to need a good set of kitchen tongs to make sure they are evenly cooked.
  2. Knife Set – depending on the cut of chicken and how your are using it – you need a variety of nice sharp knifes in your kitchen.
  3. Meat Thermometer – chicken must always be thoroughly cooked before serving. You need to achieve a minimum of 165degF internally, and you need a meat thermometer to do that.

These Elote Enchiladas were so good – I had made extra to have for lunch the next day, and they didn’t survive the meal!

Dutch Oven Chicken Dumpling Soup – Fall is just around the corner and that means it’s time for cozy meals. And it doesn’t get much cozier than a hearty soup made in a Dutch Oven. There is something so delicious about making every piece of this soup in the same pot. While chicken breast is not always the most tender cut of chicken, but in this soup you add just the right combination of ingredients to keep it moist and tasty. Dutch Oven Chicken & Dumpling Soup is the perfect semi-homemade weeknight dinner.

Quiet the contrary, it is just that I have been making a few things on repeat as we have been in this state of transition for a few months. And one of those things is this Smoked Teriyaki Chicken. A simple marinade of bone in chicken (I use drumsticks, but you can use thighs too – just adjust the cook time to add more to be sure it’s cooked through) and then slow smoked before grilling a glazing for a sticky delicious teriyaki chicken.

Crispy Buffalo Chicken Wraps
