Creamy Italian Tortellini Soup

Some people, a few from my family, have a notion that soup can not be hearty enough to be the whole dinner. And those same people were proven wrong when I served up this very hearty Creamy Italian Tortellini Soup. It is a creamy soup loaded with kale, carrots, onions, celery, potatoes, sausage, and cheese tortellinis. Trust me, no one is walking away from their bowl hungry!

Before you say hey, that soup has two starches – potatoes AND pasta, let me explain. The potatoes are few and cut pretty small, which means that a fair bit of them dissolve into the creamy soup base. They actually work more as a thickener than as the main starch of the soup.

Substitutes and Variations:

This soup has a variety of vegetables that can be swapped out to suit your families likes. You can swap the kale for spinach. The carrots, celery, and potatoes are pretty integral to the main flavor. But you could add some bell peppers or other root veggies. If you wanted more meat in the mix you could use something other than just a cheese tortellini.

Suggestions for Sides:

The only real side you might add to this is a baguette or garlic bread. You have all your veggies and meats in the soup already.

Tools that may make this recipe easier:

You will need a large stock pot or Dutch oven to make this “vat” of soup. I suggest one around 7 or 8 quarts in size. This gives you plenty of room to stir without fear of spilling over.

Creamy Italian Tortellini Soup

A hearty & creamy soup loaded with sausage, cheese tortellini and lots of vegetables.
Course Dinner, entree soup, Main Course, Soup
Cuisine American, Italian

Prep Time 10 minutes
Cook Time 1 hour

Ingredients

  • 1 lb Italian Sausage
  • 4 tbsp butter
  • 1 cup Carrot diced
  • 1 cup White Onion diced
  • 1 cup Celery diced
  • 3 cloves Garlic minced
  • 1 cup Russet Potato peeled and cubed
  • 1 tsp Black Pepper
  • 1 tsp Salt
  • 3 cup Chicken Broth
  • 2 cups Milk
  • ¼ cup Corn Starch
  • 1 tsp Dried Oregano
  • 1 tsp Dried Basil
  • 1 tsp Paprika
  • 1 cup Heavy Cream
  • 1 cup Grated Parmesan
  • 20 oz Cheese Tortellini
  • 2 cups Kale chopped

Instructions

  • In a large stock pot over medium high heat, add italian sausage. Cook and crumble until no longer pink. Then remove to a bowl and keep warm. (DO NOT clean out or discard any grease left in the pot).
  • Add butter to pot and once melted add carrots, celery, onion, garlic, and potatoes. Sprinkle with salt and pepper. Saute for around 5 minutes (onions should start to become translucent).
  • In a large measuring cup, combine, milk, broth, cornstarch and remaining seasoning.
  • Reduce heat under pot to medium and stir in milk mixture. Let come to a bubble and then return sausage back to pan. Let cook for 15 minutes.
  • Add heavy cream and parmesan cheese. Once the soup is bubbling again, add tortellini. Let cook another 15 minutes.
  • Lastly, stir in kale and then remove soup from heat. Let sit for 5 minutes before serving.

Exhaustion is an interesting thing. You really don’t realize the toll that it is taking on you until some goes terribly amiss. Sometimes you convince yourself that if you just keep going you will adjust or adapt or otherwise figure out how to keep going at the pace you feel needs be. But no matter who you are or what your goals or circumstances might be, exhaustion will catch up with all of us. And whether you choose to listen or not, you will “hit the wall”. So you can either take a break on your terms or take the break your body forces upon you. I guess either way you are making a choice.

Roasted Hatch Chile Salsa

You are literally FOUR ingredients away from this flavor packed hot salsa. Well, the hot part depends on the type of Chiles you decide to get. But you are going to love this Roasted Hatch Chile Salsa for your next Taco Tuesdays – or any day for a nice late night snack.

I have included the method for roasting the Chiles yourself. But you can definitely use store bought fire roasted Chiles if you don’t have the time or a grill. I will say this comes out so much more flavorful if you can take the time.

Substitutes and Variations:

You can also roast chilies in the oven. You will need to set your oven to 450degF. Then, place the Chiles on a baking rack over a parchment paper covered baking sheet. They will take a bit longer this way but still come out pretty tasty.

Suggestions for Sides:

This salsa can be used as a stand alone chip and dip combo for an afternoon snack or appetizer. It is also really great on some scrambled eggs or in a breakfast burrito. And of course it’s delicious on tacos and nachos and such.

Tools that may make this recipe easier:

This is such a simple recipe, so you don’t need much. A grill of some sort if you are roasting the Chiles, though you can do this in the oven, as I’ve explained above. And a nice sharp knife to get small cuts in the onion and chilies. I like to keep my knife sharp with sharper. I prefer a two-stage style sharper because it helps me make sure both sides of the blade have the same number of swipes and it eliminates the potential for knicks on the blade by hitting a steel rod just too hard.

Roasted Hatch Chile Salsa

A very easy to make flavor packed salsa that's great for adding a little heat to your dishes.
Course Salsa, Sauce
Cuisine American, Mexican, Tex-Mex
Keyword hatch chiles, lime juice, roasted hatch chiles, salsa, salsa recieps, white onion
Prep Time 10 minutes
Cook Time 20 minutes
Servings 2 cups

Ingredients

  • 2 lb Fresh Hatch Chile
  • ½ White Onion fine diced
  • 2 tbsp Lime Juice
  • 1 tsp Salt

Instructions

  • How to Roast Hatch Chiles:
    1. Get grill as hot as you can (around 450degF).
    2. Add chiles to the grate in a single layer and close the grill.
    3. After 10 minutes, flip each chile over.
    4. After another 10 minutes, remove from grill to a large bowl or pot. Cover tightly with plastic wrap and let sit for 30-45 minutes.
  • Remove the stems and seeds from the chiles. Then peel the outer skin off.
  • Place peeled chiles on a cutting board and chop to desired consistency.
  • Add onions, lime juice and salt. Chop some more to integrate. Then transfer to a bowl.
  • Serve right away or cover and place in refrigerator for up to 4 days.

My Review:

Right away I was struck by the gorgeous colorful set up of the cookbook. I especially love that she takes the time to discuss how to pick, store and use all of the veggies that she shares recipes for. Sometimes that is my biggest problem when it comes to adding more veggies to our meals – I don’t know what a good one looks, feels and is supposed to taste, so I often skip it. Heidi has rescued me from this Foley. She also really digs into her viking and Icelandic heritage to give you the tools and the bravery to try these new dishes. Over all – this would make a really great addition to anyone’s ones cookbook collection, not just those that struggle to get enough veggies in!

What’s been going on at Homemade on a Weeknight?

Looks like our streak of bad luck carried on this week, but I can still say Praise the Lord everyone is okay. My husband had an issue on a backroad that totaled one of our vehicles (he’s sore but okay!). Our daughter severely sprained her ankle just a few days before the homecoming dance. Luckily, her beau is a very patient boy, and they had a great time. And our middle son got his marching orders so to speak – he leaves for Army Bootcamp in 2 short weeks! We are so proud of him but we will miss him something fierce.

Country Cosmo Cocktail

Sometimes, you just want a fancy cocktail to celebrate the little things in life, but you don’t necessarily want to go out on the town. This easy to make cocktails is just fancy enough to check all those boxes. A Country Cosmo Cocktail doesn’t require anything extra special to make, and sips real smooth. You can make it by the glass or make a pitcher to share with your family and friends for an easy night in.

Lime and cranberry is such a great combo. You get the zing of the cranberry juice with the tang of the lime juice that makes for a very refreshing beverage. I like to use Agave Syrup as opposed to simple syrup but either will work.

Substitutes and Variations:

If you don’t care for vodka, you can use tequila or rum. Though I am typically a whiskey and bourbon drinker, I would not suggest it as a substitute in this drink. You can also omit the liquor all together and make this a mocktail. I prefer real cranberry juice, but you can use a cranberry cocktail blend – like cranapple or cranberry and blood orange.

Suggestions for Sides:

This is a great summer or fall beverage, so it’s good with a backyard BBQ or on game day. You can also serve it up at a classy bridal shower alongside your appetizers and finger foods.

The only real tool you will need is a measured shot glass. I like to use one thay measures for one and two ounces.

A refreshing combination of cranberry and lime in an iced vodka cocktail.

Cuisine American

Ingredients

  • 1 part Agave Syrup ounce or cup
  • 1 part Lime Juice ounce or cup
  • 2 part Cranberry Juice ounce or cup
  • 2 part Vodka ounce or cup
  • 1 Fresh Lime cut in wedges
  • Ice

Instructions

  • This recipe either makes one drink (using ounces) or a pitcher of 8(ish) drinks (using cups).
  • In a mixer glass combine agave syrup, lime juice, vodka and cranberry juice.
  • Pour over ice and garnish with a lime wedge.

Every kitchen needs some cool gadgets to make things run smoother, work better or just plain make life easier. This week I want to share a few things that I {ACTUALLY} bought on Amazon and just love! Whether you are looking for some gift ideas for the home cook in your life or just want to treat yourself to something fun for your kitchen set-up, I hope you will come back each week to see what else I found. And yes – of course – these are some affiliate links in the post.


Single Burner Induction Cooktop – Since I live in a camper with my family at this point in our lives, I need to get creative with my appliances. This little unit has proven very useful to me in the small space we have. It has a great range of temperatures and features – including a timer, which shuts off the heat for you.

Dark Amber Dropper Bottles (2oz) – as I’ve mentioned, I have dipped my toes into the potion making pond and started to make tinctures. These are natural remedies and supplements to help what ails us without all the unnatural crap found on the pharmacy aisle. I am starting small but hoping to grow over time.

Premium Adjustable Cooking Apron – every cook – home chef or professional – needs a good apron. My favorite feature of this apron is that the water doesn’t just soak into it. There is a great wicking action that lets you basically brush the water right off. This particular on come in some great pattern options as well.


The Homestead Canning Cookbook by Georgia Varozza– I have been doing lots and lots of canning lately and having this book as a reference has been really great. There are some intersting recipes as well as great instruction on how to prepare items for canning.

Kitchen Scale – So many recipes call for weighted measurements instead of volume. This is especially true for baking – as it matters how much you use and not how much space it takes up. I couldn’t’ do my sourdough bread without a good scale like this one.

We are embarking on the adventure of a lifetime as we live out our dreams of being Homesteaders! Like the name implies – I love to make homemade meals every night of the week for my family. I care about what types of things we are eating and I like to try new things. This blog is all about sharing those journeys and adventures with you.

My Review:

This is book one of a 30 book series and I’m a little obsessed. Well my obsession ebbs and flows. I will ready three or four of them in a week or so and then stop for a few months. Its one of those series that totally sucks up in and then let’s you meander around with other books for a bit. But you always find yourself coming back for more of these cozy kitchen mysteries. I love the imagery and character development Fluke puts into each book. If you need a new series to sink your teeth into – this is it!
