Pumpkin Streusel Muffins

Fall is in the air which means Pumpkin everything! And for my addition to the legions of pumpkin dessert recipes I am bringing in some really delicious Pumpkin Streusel Muffins. These muffins  have all the great flavors of pumpkin spice without being too sweet. You can whip them up super quickly for a last minute sweet treat for your familt potluck or office party.

Pumpkin Streusel Muffins

You can most certainly use a canned pumpkin puree for this recipe. Do be sure that you get 100% pumpkin puree and NOT pumpkin pie filling. You can also make your own puree. You will need a small to medium sugar or “jackolantern” pumpkin. Simply split in in half, scoop out the seeds and pulp then lay cut side down on a parchment paper covered baking sheet. Bake in a 400degF for one hour. Let cool for about 30 minutes. Then scrap flesh from the skin and blitz in a blender until smooth.

Substitutes and Variations:

I used an oat based streusel for this. You could skip the oats if you don’t like it. You will need a little more flour to have enough substance for the streusel. You could also do a simple glaze to drizzle over the top after they come out of the oven. Mixing powdered sugar, a splash of vanilla and milk to make it just barely pour able is the easiest.

If you do not have muffin liners you can easily make them from parchment paper. If you cut 5 inch squares from the parchment, then press them over a 7oz can (like tomato paste) to form a cup shape. Then place in each slot of the muffin tin.

Tools that may make this recipe easier:

I like to use a food scoop to portion the batter into the muffin tin. You will also need a standard muffin tin. It’s also best to use a cooling rack to let the muffin cool evenly and stay soft.

Pumpkin Streusel Muffins

A delightful pumpkin treat spiced with cinnamon and cardamon and topped with an oat and brown sugar streusel topping.

Equipment

  • 1 12-slot Muffin Tin
  • Parchment Paper or muffin liners

Ingredients

For the Muffins

  • ¾ cup Butter melted
  • ½ cup White Sugar
  • ¼ cup Brown Sugar
  • 2 Large Eggs beaten
  • 1 tbsp Vanilla
  • 2 tbsp Milk
  • 1 cup Pumpkin Puree not pie filling
  • cup Flour
  • 1 tsp Salt
  • 1 tsp Baking Powder
  • 1 tsp Baking Soda
  • 1 tsp Cardamon
  • 1 tsp Cinnamon
  • 2 tsp Pumpkin Spice

For the Topping

  • 1 cup Oats
  • ½ cup Flour
  • ½ cup Brown Sugar
  • ½ tsp Cinnamon
  • ½ tsp Cardamon
  • ¼ tsp Salt
  • ¼ cup Butter melted and cooled

Instructions

  • Preheat oven to 375degF. Line a 12-muffin tin with papers or spray with baking spray.
  • In a large bowl add all wet muffin ingredients (butter, eggs, milk, sugars, puree, milk and vanilla) and thoroughly combine.
  • In a smaller bowl add dry muffin ingredients (flour, salt, baking soda, baking powder, spices) and thoroughly combine. Then add to the wet ingredients and mix together until smooth (batter will be thick).
  • In a separate bowl, combine ingredient for the topping. (DO NOT over mix – it should be clumpy not a paste)
  • Spoon batter evenly into lined muffin tin.
  • Spoon streusel evenly over top of each muffin and press slightly into the batter.
  • Place in oven to bake for 30 minutes. (or until a toothpick in the center comes out clean). Remove to cooling rack and let sit for at least one hour before storing in an airtight container.

Summer Squash & Sausage Lasagna

Lasagna is my husband’s very favorite meal. He asks for it with every birthday that passes. I have made it more than a dozen different ways but this one might be the real winner. Its a combination of Italian sausage, summer squash and roasted tomato sauce with plenty of cheese! And its pretty easy to put together this Summer Squash & Sausage Lasagna – you could definitely make it on a Weeknight.

We had an abundance of summer Squashes in our garden this year, so I was looking for ways to creatively add them to meals we already love. When you slice the squash very thin on the mandolin, they almost dissolve into the sauce. It adds an earthy depth of flavor to a delightfully fresh take on homemade lasagna. My kids didn’t even realize it was in there until they were done eating and I told them. They felt a little tricked but ultimately admitted they still loved it. So if you have to “hide” veggies in your meals for the kids *(or maybe the adults too!, no judging), then this is a really great recipes for you and yoru family.

Substitutes and Variations:

I imagine you could swap out the summer squash for Zucchini and get a really great flavor. I have included my recipe for roasted tomato sauce (which I can into quart jars and have on hand most of the year). But you could really use any of your favorite jarred sauces in this one. You could also swap out the sausage links for crumbles of sausage or ground beef.

Suggestions for Sides:

I served this with some paremsan garlic toast made from sourdough bread. It was so good to soak up the extra sauce with. You can also do a classic garden salad or caesar salad to go with it. Since there are already veggies in the lasagna, you may not get away with another veggie on the side, but you always do some sauted carrots or green beans.

Tools that may make this recipe easier:

You will need a mandoline to make the thin slices of the both the red onion and the summer squash. If you do not have a deep 13×9 casserole dish, you can use a disposable foil one. I actually prefer this because it makes clean-up so much easier.

Summer Squash & Sausage Lasagna

A flavorful twist on the classic lasagna loaded with summer squash, mozzarella cheese and Italian sausage.
Course Dinner, Main Course
Cuisine American, Italian

Prep Time 15 minutes
Cook Time 1 hour
Servings 6

Ingredients

  • 2 lb Italian Sausage Links
  • 3 cups Summer Squash seeds removed and sliced thin
  • 4 cups Mozzarella Cheese shredded
  • 1 cup Grated Parmesan Cheese
  • ½ Red Onion thin sliced
  • 2 tbsp Olive Oil
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 tsp Dried Oregano
  • 1 qt Tomato Pasta Sauce see recipe below
  • 1 pkg Oven-Ready Lasagna Sheets
  • Fresh Basil Leaves optional, for garnish
Get Recipe Ingredients

Instructions

  • Preheat oven to 400degF.
  • Over medium-high heat, cook sausages in a pan until no longer pink in the center. Remove from heat and let sit for around 5 minutes. The slice in half lengthwise.
  • In a bowl, add sliced onion and summer squash. Sprinkle with olive oil, salt, pepper and oregano. Toss to coat.
  • In a deep 13×9 baking dish, add a small amount of sauce to cover the bottom. Then add a layer of lasagna sheets. Top with half of squash mixture then one cup of mozzarella cheese and ⅓ cup of parmesan cheese. Next add half of split sausages and pour ⅓ of tomato sauce.
  • Repeat entire set of layers. Then top with another layer of lasagna sheets, remaining sauce and remaining cheese. Top with fresh basil, if desired. Cover with foil and bake in oven for 45 minutes.
  • Remove from oven and remove foil. Return to oven to bake another 15 minutes.
  • Let rest at least 10 minutes (20 minutes are better) before cutting and serving.

Roasted Tomato Sauce

A simple homemade soup made of roasted tomatoes, onions, garlic and herbs.
Course Soup
Cuisine American, Italian

Prep Time 5 minutes
Cook Time 1 hour
Servings 4 servings

Ingredients

  • 2 pints Cocktail Tomatoes
  • 1 White Onion cut into quarters
  • 4 Garlic Cloves peeled
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 tsp Dried Oregano
  • ½ cup Fresh Basil Leaves
  • ½ cup Olive Oil
  • 1 tbsp Honey
  • 1 tbsp Worcestershire Sauce
  • 1 tbsp Paprika
Get Recipe Ingredients

Instructions

  • Preheat oven to 400degF
  • On a parchment paper covered rimmed baking sheet, add tomatoes, onions, fresh basil and garlic. Sprinkle with salt, pepper, and oregano. Drizzle with olive oil. Place in oven and bake for 30 minutes (a small bit of charring is fine, but don't let it burn).
  • Remove from oven and let rest 5 minutes. Then remove to a mixing bowl and let rest another 10 minutes.
  • Add Worcestershire, honey and paprika to bowl and then blitz with immersion blender. Keep blitzing until smooth.
  • Transfer to large pot and place on stove over medium heat. Let bubble and simmer for 30 minutes. Serve with a swirl of olive oil over the top.

My Review:

This books is a super easy read. I actually found it by asking ChatGPT for a food centric novel to read in a weekend. Luckily my library had a copy and I picked it up the next day. The story has an easy flow thats engaging and interesting. I really like Regina (the main character) and her grit. She’s worked hard for what shes got and shes not letting the nitwit men around her slow her down. There are a few unexpected plot twists. But over all a really great storyline and easy weekend read.

What’s been going on at Homemade on a Weeknight?

We actually got a little bit of snow this last week here in rural Montana. It was a little preview to the winter that is coming in just a few short months. I did something this last week that I have always wanted to do – I made pumpkin puree from a pumpkin that we grew in our little garden! It was actually easier than I thought. I simply cleaned the pumpkin then split it in half. Then I scrapped out the seeds and pulp and lay the two halves cut side down on a parchment paper covered baking sheet. I baked it in a 400degF oven for an hour. Next I let it cool for about 30 minutes before scraping the flesh from the skin. Into the blender until smooth and – voila! – fresh homemade pumpkin puree!

Garlic Bread Cheese Toastie

Sometimes, you just really need a taste of nostalgia. But who says you have to eat exactly like a kid to feel like a kid again? Not me, that’s for sure. I absolutely love a classic grilled cheese (you know American Cheese and mayo on the outside of the bread). But other times – I want some thing a little more grown up. And these Garlic Bread Cheese Toasties are exactly that!

Whether you wan to have this with a delicious bowl of Roasted Tomato Soup for dipping or you want to have them on their own – you are sure to love them. I have written this recipe to make sandwiches for the whole family. There is a rather specific method to the cooking of these toasties and with good reason. The first part of the bake is to make sure you get a nice crispy toasted outer layer, while the second part is to make sure you get nice and melty cheese on the inside.

Substitutes and Variations:

I like to use the combination of sharp cheddar cheese and grated parmesan as it gives the nice tang of cheddar and the saltiness of parmesan. You can get even more fancy and use cheeses like swiss, gouda, white cheddar, provolone. It’s really up to you – the one caveat is that you have to adjust bake time to the melt point of the cheese you select. The toasting time will be the same but you can shorten or lengthen the melting time.

Suggestions for Sides:

As mentioned above – this is perfect for dipping into tomato soup. But it is great with chicken noodle soup or along side a chicken Caeser salad. This is also great for a potluck or buffet style meal. You can just cut them on the diagonal for a pretty presentation.

Tools that may make this recipe easier:

You definitely need to be bakign these on a baking rack over your baking sheet. You need the air flow to make both sides of the sandwich toast up nicely. You will also want a silicone brush for brushing on the garlic butter mixture.

Garlic Bread Cheese Toastie

A grown up version of a grille cheese sandwich, with buttery garlic bread, made for the whole family at the same time.

Prep Time 10 minutes
Cook Time 20 minutes
Servings 12 sandwiches

Ingredients

  • 24 slices Texas Toast Bread
  • 24 slices Sharp Cheddar Cheese
  • ½ cup Grated Parmesan Cheese
  • 1 cup Butter
  • 2 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 tbsp Dried Parsley
  • 1 tsp Salt
Get Recipe Ingredients

Instructions

  • Preheat oven to 450degF.
  • In a microwave safe dish, add butter. Melt in 45 second intervals until melted. Add in garlic powder, onion powder, parsley and salt. Stir to combine. Place in refrigerator for 5 minutes.
  • Line two large baking sheets with parchment paper and place baking rack on each. Line out 12 slices of bread (6 on each sheet).
  • Remove butter mixture from the fridge and brush onto one side of each slice of bread. Lightly sprinkle with parmesan cheese. Then flip each slice so that it is is butter side down. Add a slice of cheese to each slice. Again, lightly sprinkle with parmesan cheese. Then add another slice of cheese to each. Top with second slice of bread.
  • Brush the top of each slice with butter mixture and lightly sprinkle with parmesan cheese.
  • Place both baking sheets in the oven. Bake for five minutes (DO NOT OPEN THE OVEN!!) then reduce heat to 350degF. Bake another 10 minutes.
  • Serve right away (cut in half if desired)

Welcome to the Weekly Book Report and Book Review Link-up #14!

Every Wednesday I will be sharing my latest read – which could be a cookbook, a celebrity chef biography or memoir, a lifestyle book, a gardening book, a homemaking book or maybe even a cozy kitchen mystery book. My Review:

I have been a fan of the Pioneer Woman – Ree Drummond – for quite some time. She has such a great personality, full of grit and grace. This book tells the story of how she came to be the “Pioneer Woman” a life she didn’t originally plan on. It really is a story book or fairytale romance about the way she meet her husband and the life they built together. The book is written in such a a way that you almost feel like you are just sitting on her ranch while she tells the story over coffee or wine. It was so easy to read in weekend, cozy in bed while the rain falls. If you are looking for a make your heart smile type story then this is the book for you.

Roasted Tomato Soup

The weather around here is turning colder every day. And while I love soups all year round, I ramp up the soup making in the colder months. This soup recipe I, actually, stumbled on to rather by accident. I was making pasta sauce to jar for later in the year, and had too much to toss but not nearly enough to fill another jar. So I decided to make a pizza quesadilla and dip it into the sauce. While I was dipping I found myself just eating it with a spoon, and realized it would make for a delightful tomato soup. And thus this recipe for Roasted Tomato Soup was born.

Everyone that I have served this soup to has asked me if I put milk or cream into it. They are all shocked to learn that there is no dairy added to this mix, yet it is so very creamy. This comes from two key steps in the recipe. One is the lower temperature for the roasting. The vegetables get softer without losing all their moisture due to splitting. And secondly the use of the immersion blender. By really really blitzing the ingredients together, the aeration gives a lean to the creamy soup range.

Substitutes and Variations:

If you can’t find cocktail tomatoes, you can use san manzanos, romas or cherry tomatoes. Anything bigger or smaller will not work. The smaller tomatoes have too much skin to flesh ration and the larger varieties tend too be too liquidy. If you don’t have fresh basil, dried will do just fine.

Suggestions for Sides:

This goes so perfectly with my Garlic Bread Cheese Toastie. You get to act like a kid again and dip or dunk your toastie into the scrumptious soup. You could also go soup and salad with a nice Caesar salad along side this soup.

You will need an immersion blender to get this soup really creamy. If you dont have one, I would use a smoothie blender (and blend it in batches) over a traditional blender.

Roasted Tomato Sauce

A simple homemade soup made of roasted tomatoes, onions, garlic and herbs.

Prep Time 5 minutes
Cook Time 1 hour
Servings 4 servings

Ingredients

  • 2 pints Cocktail Tomatoes
  • 1 White Onion cut into quarters
  • 4 Garlic Cloves peeled
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 tsp Dried Oregano
  • ½ cup Fresh Basil Leaves
  • ½ cup Olive Oil
  • 1 tbsp Honey
  • 1 tbsp Worcestershire Sauce
  • 1 tbsp Paprika
Get Recipe Ingredients

Instructions

  • Preheat oven to 400degF
  • On a parchment paper covered rimmed baking sheet, add tomatoes, onions, fresh basil and garlic. Sprinkle with salt, pepper, and oregano. Drizzle with olive oil. Place in oven and bake for 30 minutes (a small bit of charring is fine, but don't let it burn).
  • Remove from oven and let rest 5 minutes. Then remove to a mixing bowl and let rest another 10 minutes.
  • Add Worcestershire, honey and paprika to bowl and then blitz with immersion blender. Keep blitzing until smooth.
  • Transfer to large pot and place on stove over medium heat. Let bubble and simmer for 30 minutes. Serve with a swirl of olive oil over the top.
