What’s been going on at Homemade on a Weeknight?

Looks like our streak of bad luck carried on this week, but I can still say Praise the Lord everyone is okay. My husband had an issue on a backroad that totaled one of our vehicles (he’s sore but okay!). Our daughter severely sprained her ankle just a few days before the homecoming dance. Luckily, her beau is a very patient boy, and they had a great time. And our middle son got his marching orders so to speak – he leaves for Army Bootcamp in 2 short weeks! We are so proud of him but we will miss him something fierce.

Country Cosmo Cocktail

Sometimes, you just want a fancy cocktail to celebrate the little things in life, but you don’t necessarily want to go out on the town. This easy to make cocktails is just fancy enough to check all those boxes. A Country Cosmo Cocktail doesn’t require anything extra special to make, and sips real smooth. You can make it by the glass or make a pitcher to share with your family and friends for an easy night in.

Lime and cranberry is such a great combo. You get the zing of the cranberry juice with the tang of the lime juice that makes for a very refreshing beverage. I like to use Agave Syrup as opposed to simple syrup but either will work.

Substitutes and Variations:

If you don’t care for vodka, you can use tequila or rum. Though I am typically a whiskey and bourbon drinker, I would not suggest it as a substitute in this drink. You can also omit the liquor all together and make this a mocktail. I prefer real cranberry juice, but you can use a cranberry cocktail blend – like cranapple or cranberry and blood orange.

Suggestions for Sides:

This is a great summer or fall beverage, so it’s good with a backyard BBQ or on game day. You can also serve it up at a classy bridal shower alongside your appetizers and finger foods.

The only real tool you will need is a measured shot glass. I like to use one thay measures for one and two ounces.

Country Cosmo Cocktail

A refreshing combination of cranberry and lime in an iced vodka cocktail.
Course Beverages, Cocktail, Drinks
Cuisine American
Keyword cranberries, cranberry, lime, lime juice, vodka
Prep Time 5 minutes

Ingredients

  • 1 part Agave Syrup ounce or cup
  • 1 part Lime Juice ounce or cup
  • 2 part Cranberry Juice ounce or cup
  • 2 part Vodka ounce or cup
  • 1 Fresh Lime cut in wedges
  • Ice
Get Recipe Ingredients

Instructions

  • This recipe either makes one drink (using ounces) or a pitcher of 8(ish) drinks (using cups).
  • In a mixer glass combine agave syrup, lime juice, vodka and cranberry juice.
  • Pour over ice and garnish with a lime wedge.

Things I Found on Amazon – #15

Every kitchen needs some cool gadgets to make things run smoother, work better or just plain make life easier. This week I want to share a few things that I {ACTUALLY} bought on Amazon and just love! Whether you are looking for some gift ideas for the home cook in your life or just want to treat yourself to something fun for your kitchen set-up, I hope you will come back each week to see what else I found. And yes – of course – these are some affiliate links in the post.


Single Burner Induction Cooktop – Since I live in a camper with my family at this point in our lives, I need to get creative with my appliances. This little unit has proven very useful to me in the small space we have. It has a great range of temperatures and features – including a timer, which shuts off the heat for you.

Dark Amber Dropper Bottles (2oz) – as I’ve mentioned, I have dipped my toes into the potion making pond and started to make tinctures. These are natural remedies and supplements to help what ails us without all the unnatural crap found on the pharmacy aisle. I am starting small but hoping to grow over time.

Premium Adjustable Cooking Apron – every cook – home chef or professional – needs a good apron. My favorite feature of this apron is that the water doesn’t just soak into it. There is a great wicking action that lets you basically brush the water right off. This particular on come in some great pattern options as well.


The Homestead Canning Cookbook by Georgia Varozza– I have been doing lots and lots of canning lately and having this book as a reference has been really great. There are some intersting recipes as well as great instruction on how to prepare items for canning.

Kitchen Scale – So many recipes call for weighted measurements instead of volume. This is especially true for baking – as it matters how much you use and not how much space it takes up. I couldn’t’ do my sourdough bread without a good scale like this one.

My Review:

This is book one of a 30 book series and I’m a little obsessed. Well my obsession ebbs and flows. I will ready three or four of them in a week or so and then stop for a few months. Its one of those series that totally sucks up in and then let’s you meander around with other books for a bit. But you always find yourself coming back for more of these cozy kitchen mysteries. I love the imagery and character development Fluke puts into each book. If you need a new series to sink your teeth into – this is it!

Oven Baked Corn Ribs

Corn has always been one of my favorite vegetables. I know it is not the most nutrient dense of the vegetables but it was one of the most versatile, making it great as an add on or even filler to many dishes. I recently discovered the trendy concept of corn ribs and I’m in love, I tell you. They are so fun to eat, so easy to make and really add something to a proper BBQ Platter. These easy Oven Baked Corn Ribs are something you can make all year around to get that feel of summer!

I have included my own recipe for a pork spice rub to use as the seasoning for these corn ribs. If you have a special recipe you like or a particular bottled variety you always grab for – that will work too. You can also branch out and try different flavor profiles to go with whatever the rest of the meal might be. I really like the Woodfire Garlic Mix from Kinder. You can also use something as simple as Old Bay or Nature’s Seasonings.

Substitutes and Variations:

I like to use a sweet white corn variety, but you can use whatever is available to you. If it is the off-season, you can totally use frozen corn cobs or cobbettes. Just let them thaw slightly, so that they are easier to cut up.

Suggestions for Sides:

This is the perfect side for any BBQ Platter – you can have it along side your pulled pork, pork ribs, burgers, roasted chicken, grilled steaks, lamb chops – pretty much anything you make on a grill or smoker would work out. You can also make them to go with a some mac & cheese with ham for a quick weeknight meal.

Oven Baked Corn Ribs

You will definitely need a sharp chef’s knife for this recipe. Cutting and quartering the corn cobs is the essential piece of this recipe. Make sure you knife is freshly sharpened so that you can easily cut through the hard cobs. If your knife is dull, you will risk hurting yourself by sending the cob flying and your knife flailing. You will also want to use a large baking sheet covered in parchment to minimize clean up.

Oven Baked Corn Ribs

A new way to enjoy corn on the cob all year around – with the delicious seasoning of rib and an easy way to eat it!
Course Side Dish, sides
Cuisine American

Prep Time 15 minutes
Cook Time 45 minutes
Servings 6

Ingredients

  • 6 large Whole Corn husks removed
  • ½ cup Oil
  • ½ cup Pork Spice Rub see recipe below
  • 1 tbsp Dried Parsley
Get Recipe Ingredients

Instructions

  • Preheat oven to 450degF.
  • Cut each cob in half. Then stand each half of end and cut into spears by quartering each round. You should 48 spears or ribs in the end.
  • Add all ribs to a bowl and pour oil and seasoning into bowl. Toss and stir to evenly coat each rib.
  • Spread seasoned corn ribs onto a parchment paper covered baking sheet. Place in oven for 45 minutes.

Pork Spice Rub

A simple but super flavorful rub recipe that is mostly geared for use on grilled or smoked pork
Course Seasoning
Cuisine American
Keyword brown sugar, homemade seasoning mix, homemade spice blend, pork, pork spice rub, seasoning, seasoning blend, seasoning mix, spice blend
Prep Time 5 minutes
Servings 2 cups

Ingredients

  • ¼ cup Brown Sugar
  • 3 tbsp Onion Powder
  • 3 tbsp Garlic Powder
  • 2 tbsp Paprika
  • 2 tbsp Salt
  • 1 tbsp White Pepper
Get Recipe Ingredients

Instructions

  • Combine all ingredients in a bowl or jar. Use right away or store in an airtight container.

What’s been going on at Homemade on a Weeknight?

It has been an all around rough week for our family and our nation. Personally, I have had some medical issues that I had been ignoring and could no longer do that once I landed in the ER. I am better now and starting to work on something things. I have been working on what my family is calling “my magic potions.” I started a Mullien Leaf tincture last month that will help with any respiratory issues. This week, I started a Ginger and Tumeric Tincture that will serve as an all natural anti-inflammatory like ibuprofen. Have you ever made tinctures?

Easy Salami Tortellini Salad

Pretty much everything is better once you add in a little bit of salami. This tortellini salad is loaded with lots of veggies so you don’t have to feel bad about adding in the flavor bomb of salami. If you need a simple meal to bring to a potluck or backyard barbque or you just want an easy side for a weeknight supper at home – this recipe for Easy Salami Tortellini Salad is sure to be your new go to recipe.

Easy Salami Tortellini Salad

I like to use a simple cheese tortellini for this recipe. You can use really any sort of tortellini you prefer for this simple salad. You can try a flavored pasta or different combination maybe with different cheeses or veggie fillings. I use veggies that my family prefers, you can swap out or sub in whatever works for you. Once of my sons suggested adding some black olives, while another suggested those small mozzarella balls.

For the dressing – you can go store-bought or homemade. If you go store-bought, I would suggest using Olive Garden’s Original Italian Dressing. It works so nicely with these ingredients, and also has some parmesan cheese in it already, so it really comes together. If you want to make your own, you can do 1/2 cup olive oil, 1/4 cup White Vinegar, 1 tablespoon dijon mustard, 1 tablespoon pepperoncini juice, 1 tablespoon grated parmesan cheese, 1 tablespoon Italian seasoning, 2 teaspoons garlic powder and 1 teaspoon onion powder.

Loaded with fresh veggies, lots of salami and a simple vinaigrette, this tortellini salad makes a perfect side dish.

Ingredients

  • lb Cheese Tortellini
  • ½ lb Whole Salami cut into ½inch cubes
  • 1 Red Bell Pepper diced
  • 1 pint Cherry Tomatoes
  • 1 English Cucumber diced
  • ½ Red Onion diced
  • ½ cup Parmesan Cheese grated
  • 1 cup Italian Dressing

Instructions

  • Start water boiling for pasta.
  • Add tortellini to boiling water and cook for 2 minutes. (you are just trying to rehydrate it, not cook it through). Drain in a colander and rinse with cold water to stop the cooking process. Move to mixing bowl, cover and place in refrigerator for 30 minutes to cool.
  • Remove pasta from refrigerator and add vegetables, salami, parmesan cheese and Italian dressing. Toss to evenly coat. Cover and store in refrigerator until ready to serve (Up to 4 days).

Dutch Oven Chicken & Dumpling Soup

Fall is just around the corner and that means it’s time for cozy meals. And it doesn’t get much cozier than a hearty soup made in a Dutch Oven. There is something so delicious about making every piece of this soup in the same pot. While chicken breast is not always the most tender cut of chicken, but in this soup you add just the right combination of ingredients to keep it moist and tasty. Dutch Oven Chicken & Dumpling Soup is the perfect semi-homemade weeknight dinner.

Dutch Oven Chicken & Dumpling Soup

This recipe falls into the semi-homemade category only because you aren’t actually making the biscuit dough that’s used for the dumplings. If you have the time, or energy to make the dough from scratch – you can certainly swap that out. I have found that using the refrigerator dough just works better. They fluff up so easily, every single time making for that perfectly soft texture you want in a dumpling. You can cut them bigger or small to your own liking. Just adjust the cook time to accommodate.

Substitutes and Variations:

If you need this recipe to a little quicker – you could use some shredded rotisserie chicken. You won’t get the same depth of flavor, but it will still be tasty. You could also use some leftover holiday shredded turkey meat. I used my family’s favorite collection of vegetables. I know kale isn’t for everyone. You could skip it or swap it out for spinach if you like that better. You can try other veggies like corn, peas, broccoli, or cauliflower as well.

Suggestions for Sides:

Since this recipe has all the goods packed into – the veggies, the protein and the dumplings – you really don’t need much in the way of the sides. As always, if you are in need of spreading this out to more diners or if you want to have leftovers (it really does reheat well), you could add a garden salad on the side. You could also get an extra tube of refrigerator biscuits and bake them up (per the package instructions) to add that crunch texture to the meal.

Tools that may make this recipe easier:

You can probable guess that a dutch oven in needed for this recipe. While it will give you the best result – you can also just use your largest stock pot and still get a delicious meal out of it. The other really important tool that you will probably need is a nice sharp chef’s knife. It is so important to have all of the vegetables cut to basically the same size to insure even cooking.

Dutch Oven Chicken & Dumpling Soup

A creamy and hearty soup loaded with veggies, chicken and dumplings.

Ingredients

  • 2 tbsp Oil
  • 6 Chicken Breast
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 1 tsp Garlic Powder
  • 3 tbsp Butter
  • 1 cup Carrot chopped
  • 1 cup White onion chopped
  • 1 cup Celery chopped
  • 1 cup Red Bell Pepper chopped
  • 2 cloves Garlic minced
  • 3 tbsp Flour
  • 1 cup Dry White Wine
  • 3 cups Chicken Broth
  • 2 tbsp Cornstarch
  • 1 cup Milk
  • 2 cups Kale chopped
  • 1 cup Heavy Cream
  • 1 tube Refrigerator Jumbo Buttermilk Biscuits cut into 1 inch cubes

Instructions

  • Sprinkle chicken breast with salt and pepper.
  • Over medium high heat, add oil to the dutch oven. Once hot, add chicken breast in a single layer. Let cook for 5-7 minutes on each side then remove from the pan.
  • Add butter to pan. Once melted add vegetables and saute for 5 minutes. Then sprinkle with flour. Let cook for another 3 minutes then deglaze pan with wine. Scrap up any residue brown bits from the bottom of the pan.
  • Whisk together corn starch and chicken broth, then add to pan. Continue stirring as you add milk. Then bring just to a bubble then reduce heat to medium. Cover and let simmer for 20 minutes.
  • Shred or chop chicken and return to pan. Then stir in pieces of biscuit (they will plump up some as they steam). Then add in cream and kale. Replace lid and let simmer another 10 minutes.
  • Serve with a hearty portion of chicken and dumplings in each bowl.
