I am so excited to be a part of the Home Matters Linky Party Team! I have been participating for quite some time and am eager to make some more contributions to this party. A little about me – I’m a Wife and Mom. My husband, four kids, 5 dogs and 75+ chickens (and counting) all currently live in the rural Montana. We are embarking on the adventure of a lifetime as we live out our dreams of being Homesteaders! Like the name implies – I love to make homemade meals every night of the week for my family. I care about what types of things we are eating and I like to try new things. This blog is all about sharing those journeys and adventures with you.

Jalapeño & Pepperoni Pizza

Pepperoni Pizza is a staple in our home. Even made from scratch – most of our family can prepare the dough to have time to rise before making from dinner. Because it really is that easy. But sometimes that simple – yet delightful – pepperoni pizza occasionally needs to be stepped up a notch. This recipe for Jalapeño & Pepperoni Pizza gives you that one extra pop that #pizzanight really needs.

Jalapeño & Pepperoni Pizza

I’ve added the step of adding the garlic butter to the crust of the pizza. It makes it look great but also turns the crust basically into an attached breadstick. In my family, at least, it helps to encourage that the kids are eating the whole slice. It’s super easy to do, but also skip it if you don’t want to do it.

Jalapeño & Pepperoni Pizza

Cheese is a crucial part of pizza and it’s success. And the combination of cheese is how you get there. Most think that mozzarella is all you need for fantastic pizza. The truth is you need a variety of cheeses to get that really great down homemade pizza. Mozzarella, and Cheddar is where it’s at.

I have included my recipe for homemade pizza dough. Which I absolutely promise is super easy. Even on nights that I don’t want to cook – I can muster making homemade pizza. It sounds like a big job but it’s not. All that said – if you need to buy pre-made dough or tube dough or pre-formed and cooked crust. Go for it! Some nights Homemade on a Weeknight is all about getting something to the table that’s homecooked without hours in the kitchen.

Jalapeño & Pepperoni Pizza

A delicious pepperoni pizza with a pop of flavor from jalapeno peppers on a simple red sauce

Prep Time 10 minutes
Cook Time 20 minutes
Proofing Time 1 hour
Servings 6

Ingredients

  • 2 Pizza Dough Recipes see below
  • 6 oz Pepperoni Slices
  • 2 Jalapeno Peppers sliced ¼inch thick
  • 2 cups Mozzarella Cheese shredded
  • 2 cup Cheddar Cheese shredded
  • 4 tbsp Butter melted
  • 1 tsp Garlic Powder
  • 1 tsp Parsley
  • 1 tsp Onion Powder

For the Sauce

  • 1 15 oz Tomato Puree
  • 1 tbsp Honey
  • 1 tsp Italian Seasoning
  • 1 tsp Garlic Powder
  • 1 tsp Dried Onion
  • 1 tsp Red Pepper Flakes
Get Recipe Ingredients

Instructions

  • Preheat Oven to 425degF
  • In a sauce pan over medium heat, add ingredients for the sauce. Stir to combine and cook for 5 minutes. Reduce to low and let simmer while dough cooks.
  • Add cheeses to a bowl and toss to combine.
  • In a separate bowl, add melted butter, garlic powder, parsley and onion powder.
  • Once the pizza dough is completed as listed in the recipe below, start building the pizzas.
  • Remove pizza crusts from oven. For one pizza, spread half of sauce over top of crust. Evenly sprinkle with 2 cups of cheese mixture. Layer with a single layer of pepperoni then add half of the jalapeno slices. Sprinkle with ½ cup of cheese mixtures. Repeat on second pizza. Brush the garlic butter around the outer edge of the pizza (the crust). Place in oven and cook for 10 minutes. Remove and let cook for 5 minutes before cutting.

Thin Crust Pizza Dough

A simple pizza dough to use for all sorts of pizzas. Makes 2 12inch by 17inch rectangle pizza crusts or 2 14inch round pizza crusts

Cook Time 15 minutes
Rising Time 1 hour

Ingredients

  • 2 tbsp Yeast instant
  • cup Oil
  • cup Warm Water
  • 2 tbsp Sugar
  • 2 tsp Salt
  • cups Flour
Get Recipe Ingredients

Instructions

  • Prepare all of the ingredients
  • In a large bowl, combine warm water, yeast, sugar, salt, and oil. Let sit to activate for about 10 minutes. Yeast should become foamy.
  • Add flour to activated yeast mixture. Stir together until a sticky dough forms. Cover with plastic wrap and allow to proof for about an hour (until dough has doubled in size)
  • Preheat oven to 425degF.
  • Once risen, split into two equal halves. Add one half of dough to floured surface and use a rolling pin to press out into ¼-in thick in the shape of the baking sheet. Move to parchment paper covered baking sheet. Spray with cooking oil.
  • Bake for 8 minutes.
  • Continue to pizza recipe directions.

Welcome to the Monthly Book Report and Book Review Link-up #16!

Brief Description of the book:

Yes, Chef chronicles Samuelsson’s journey, from his grandmother’s kitchen to his arrival in New York City, where his outsize talent and ambition finally come together at Aquavit, earning him a New York Times three-star rating at the age of twenty-four. But Samuelsson’s career of chasing flavors had only just begun—in the intervening years, there have been White House state dinners, career crises, reality show triumphs, and, most important, the opening of Red Rooster in Harlem. My Review:

If you watch even half as many cooking competition shows as I do, than you definitely know who Marcus Samuelsson is and how talented he is. I did know that he had an interesting life before celebrity status but I had no idea just how interesting. I found myself reading his story in his own voice and really was intrigued by the details he shares about his first few years in Ethiopia and his journey to being adopted by a Swedish family. He has had an extraordinary life and shares it beautifully in this book that follows his road to culinary greatness.

What’s been going on at Homemade on a Weeknight?

Its our first deer hunting season in rural Montana and my husband was able to get his first ever deer on opening day! We decided to process it ourselves. We will be mostly making ground meat options. I’ve been working on making seasoning blends to make Breakfast Sausage, Chorizo Sausage and Italian Sausage. Do you have any great venison recipes to share?

Creamy Garlic Pasta & Steak

Sometimes you need your weeknight family dinner to be just a little bit fancy. Maybe you had a hard day or need to celebrate a smaller victory with your family. Maybe you just have a hankering for some delicious steak and a creamy garlic pasta. Whatever the reason to add this recipe to your weeks dinner menu, I am here for it – and you! This super simple recipe for Creamy Garlic Pasta & Steak is sure to satisfy your stomach and your soul!

Creamy Garlic Pasta & Steak

You may recognize part of this recipe as it starts off with my Creamy Garlic Shells Recipe. I decided to use a slightly larger pasta – Fusilli – instead of shells for this recipe so that it could stand up to the chunks of steak. You could also use penne, rotini, or rigatoni.

Substitutes and Variations:

I have another version of this recipe made with chicken in place of the steak- Chicken & Creamy Garlic Shells. You make it basically the same way, just with more cook time. Also my family likes me to serve the chicken as a whole breast instead of cut up and mixed into the pasta. But that’s just preference, either way will work.

Suggestions for Sides:

I made a small Caesar side salad to go with this along with some simple garlic bread. Its a nice combination of flavors and covers all your bases. You could also do a roasted asparagus or green beans. Additionally, steamed broccoli and/or cauliflower tossed in some garlic butter would go nicely as well.

Tools that may make this recipe easier:

I would suggest using a grill pan to sear the steaks. If you don’t already have a grill pan in your selection of cookware I would strongly urge you to get one. They are so useful. From grilling proteins and veggies inside on cold days to making beautiful grill marks on hot sandwiches and on tortillas for Tacos or Quesadillas. You will use it way more than you think, I know I do.

Creamy Garlic Pasta & Shells

A smooth garlic cream sauce over pasta with a delicious marinated steak
Course Dinner, Main Course
Cuisine American, Italian

Prep Time 5 minutes
Cook Time 30 minutes
Marinating Time 30 minutes
Servings 6

Equipment

Ingredients

  • lb Small Pasta
  • 2 tbsp Butter
  • 2 tbsp Oil
  • 3 tsp Garlic Powder divided
  • 4 tbsp Flour
  • 1 tsp Salt
  • 2 cup Broth chicken or vegetable
  • 1 cup Heavy Cream
  • 2 tbsp Parsley Flakes

For the Steak

  • 2 lb Steaks
  • 2 cups Beef Broth
  • 1 tbsp Garlic Powder
  • 1 tbsp Onion Powder
  • 1 tbsp Paprika
  • 1 tsp Salt
  • 1 tsp Pepper
  • ½ cup Olive Oil
Get Recipe Ingredients

Instructions

  • Add ingredients for the steak to a gallon sized zipper bag. Let marinate at least 30 minutes (up to overnight)
  • Start water boiling for the pasta.
  • In a stove top grill pan (or frying pan), over medium high heat, add marinated steaks. Cook for 3 minutes on each side. Reduce heat to medium and cover pan. Let cook another 5 minutes (or until steak is to desired doneness), Remove from heat and let rest for at least 5 minutes before slicing into pieces roughly the size of the pasta you chose.
  • In a sauce pan over medium heat, add oil, butter and two teaspoons of garlic powder. Once melted whisk in flour. Let cook for 3 minutes then whisk in broth, and salt. Cook another 3 minutes and whisk in heavy cream. Let cook another 3 minutes.
  • Add pasta to boiling water and cook as directed on the package. Drain in colander and rinse with cool water. Return to pot away from heat. Add cut steak to pot as well.
  • Remove sauce from heat and stir in remaining garlic powder, and parsley. Pour over cooked pasta and steak, then stir to evenly coat.

A few key kitchen tools you may want to have to hand when it comes to making these Soup Dishes:

  1. Soup Ladle – you really need a ladle to make serving soup the easiest it can be. The ladle helps you to capture all of the good stuff, while keeping a good ration between the “liquids” and “solids”.
  2. Food Scoops – several of these soup recipes have meatballs (in a variety of sizes) and the best way to get uniform meatballs is with food scoops. You can portion them out and roll them up swiftly.
  3. Stock Pot – when making soup you need a decent sized vessel to cook it in. I like to go for at least 8 qt size but 12 qt is better – this makes it easiler to stir.

While chicken breast is not always the most tender cut of chicken, but in this soup you add just the right combination of ingredients to keep it moist and tasty. Dutch Oven Chicken & Dumpling Soup is the perfect semi-homemade weeknight dinner.

Lasagna Meatball Soup – Soup is one of my favorite things to make for dinner. It’s so easy to give it huge amounts of flavor when you make it at home. Whenever I know a storm is coming, or even the snow, I plan to make this soup to warm up my family.

So if you are looking for an extra comforting, feels like home meal, this is the one for you.

Chicken Teriyaki Ramen

Chicken Teriyaki Ramen – We are a soup all year kind of family and I think more people are than they might realize. There is more to soup than warming your belly up with its cold out, there is something about it making you feel warm from a hug. This Chicken Teriyaki Ramen is going to do just that for your family, no matter what time of the year you make it. The rich flavors of the soy, ginger and garlic mixed with the sweet tang of the teriyaki sauce is undeniable and the slightly jammy egg just sets it all off.

Chicken Tortellini Soup

Pumpkin Streusel Muffins

Fall is in the air which means Pumpkin everything! And for my addition to the legions of pumpkin dessert recipes I am bringing in some really delicious Pumpkin Streusel Muffins. These muffins  have all the great flavors of pumpkin spice without being too sweet. You can whip them up super quickly for a last minute sweet treat for your familt potluck or office party.

Pumpkin Streusel Muffins

You can most certainly use a canned pumpkin puree for this recipe. Do be sure that you get 100% pumpkin puree and NOT pumpkin pie filling. You can also make your own puree. You will need a small to medium sugar or “jackolantern” pumpkin. Simply split in in half, scoop out the seeds and pulp then lay cut side down on a parchment paper covered baking sheet. Bake in a 400degF for one hour. Let cool for about 30 minutes. Then scrap flesh from the skin and blitz in a blender until smooth.

Substitutes and Variations:

I used an oat based streusel for this. You could skip the oats if you don’t like it. You will need a little more flour to have enough substance for the streusel. You could also do a simple glaze to drizzle over the top after they come out of the oven. Mixing powdered sugar, a splash of vanilla and milk to make it just barely pour able is the easiest.

If you do not have muffin liners you can easily make them from parchment paper. If you cut 5 inch squares from the parchment, then press them over a 7oz can (like tomato paste) to form a cup shape. Then place in each slot of the muffin tin.

Tools that may make this recipe easier:

I like to use a food scoop to portion the batter into the muffin tin. You will also need a standard muffin tin. It’s also best to use a cooling rack to let the muffin cool evenly and stay soft.

Pumpkin Streusel Muffins

A delightful pumpkin treat spiced with cinnamon and cardamon and topped with an oat and brown sugar streusel topping.

Equipment

  • 1 12-slot Muffin Tin
  • Parchment Paper or muffin liners

Ingredients

For the Muffins

  • ¾ cup Butter melted
  • ½ cup White Sugar
  • ¼ cup Brown Sugar
  • 2 Large Eggs beaten
  • 1 tbsp Vanilla
  • 2 tbsp Milk
  • 1 cup Pumpkin Puree not pie filling
  • cup Flour
  • 1 tsp Salt
  • 1 tsp Baking Powder
  • 1 tsp Baking Soda
  • 1 tsp Cardamon
  • 1 tsp Cinnamon
  • 2 tsp Pumpkin Spice

For the Topping

  • 1 cup Oats
  • ½ cup Flour
  • ½ cup Brown Sugar
  • ½ tsp Cinnamon
  • ½ tsp Cardamon
  • ¼ tsp Salt
  • ¼ cup Butter melted and cooled
Get Recipe Ingredients

Instructions

  • Preheat oven to 375degF. Line a 12-muffin tin with papers or spray with baking spray.
  • In a large bowl add all wet muffin ingredients (butter, eggs, milk, sugars, puree, milk and vanilla) and thoroughly combine.
  • In a smaller bowl add dry muffin ingredients (flour, salt, baking soda, baking powder, spices) and thoroughly combine. Then add to the wet ingredients and mix together until smooth (batter will be thick).
  • In a separate bowl, combine ingredient for the topping. (DO NOT over mix – it should be clumpy not a paste)
  • Spoon batter evenly into lined muffin tin.
  • Spoon streusel evenly over top of each muffin and press slightly into the batter.
  • Place in oven to bake for 30 minutes. (or until a toothpick in the center comes out clean). Remove to cooling rack and let sit for at least one hour before storing in an airtight container.
