I don’t usually make recipes that require a super specialized piece of cooking equipment (except maybe slow cookers), but I am so in love with my Blackstone griddle, I can’t help it. For the most part the other things I have made thus far can be made on the stove top, however this Blackstone Cowboy Stir-Fry really does the need the wide open flat space of the griddle. It is a total game changer for making meals like this for the whole family at once. By the by – this is not an ad for Blackstone products at all – my hubs got me one for my birthday this year and I just love it so very much.

What’s been going on at Homemade on a Weeknight?

Winter has finally arrived! We had a half day of 50-80mph winds promptly followed by about 3 days of snow fall. We had a little damage to one of our carport but luckily got a replacement up before the snow hit too hard. Had our first snow day since living here…which was more due to the winds and the buses not being able to run but still. Got nearly a foot and half of snow in the first 24hrs. We really needed this moisture for the gardens ans crops so we are super thankful for it.

Cookbooks I Found on Amazon – #4

This might sound weird, but I know I’m not the only one…I read cookbooks like novels. I love to read them cover to cover. You can learn many little things from different kitchens, cooks, chefs, and cultures from around the world. Well written cookbooks flow like a story. They start with a good foundation of learning about the author and chef of the book. They give you some ground rules about techniques that are used throughout the recipes. My bookshelves are loaded with cookbooks from all over the world – from celebrity chefs to self-published home cooks, like myself. This simple appetizer or snack is a play in flavors. When you just read the recipe you may think it won’t work  but trust me, it does. The sweet and salty goes so well with the crusty and cream. And that pop of fresh Mint just brings it all together. This Simple Prosciutto Crostini is going to be the star of the show for sure.

Its important that you use Balsamic Glaze and not just straight balsamic vinegar. You will not get the same results. If you use just vinegar it will just soak into the bread and make it soggy

Substitutes and Variations:

If you cannot find prosciutto you can go for a Soppresseta or even a nice thinly sliced ham. You can also do raspberry instead of the blackberry.

You will need a good bread knife – a long serrated knife to get the thin even slices of baguette.

Simple Prosciutto Crostini

A classy, elegant and simple appetizer, perfect for your next get together.
Course Appetizer

Prep Time 20 minutes
Cook Time 30 minutes

Ingredients

  • 1 Baguette cut into ½ inch slices
  • 8 oz Ricotta Cheese
  • ½ lb Prosciutto thinly sliced
  • 1 pint Blackberries
  • 3 tbsp Balsamic Glaze
  • 1 tsp Coarse Sea Salt
  • 5 sprig Fresh Mint just the leaves
Get Recipe Ingredients

Instructions

  • Place blackberries in a bowl and use the back of a spoon to macerate until only slightly chunky.
  • Smear each bread slice with ricotta cheese. Add two or three small pieces of prosciutto, then spoon macerated blackberries over the top. Next drizzle with balsamic glaze and sprinkle with salt. Lastly place a leaf or two of fresh mint on each bread slice
  • These can be served right away or cover and placed in refrigerator, up to overnight.

Crispy Shrimp Rolls

When you want to have a little bit of fun and little bit of indulgence with your dinner – shrimp is always a good idea, especially when it is crispy. This is also a great weekend dinner to enjoy in the backyard once summer hits. These Crispy Shrimp Rolls will have the whole family chowing down with delight.

I had never heard of a creamy cocktail sauce before, but in my mind it just made sense. I took my classic cocktail sauce (the worcestershire sauce is the key) and added it to some mayonnaise to make it a little more “sandwich friendly”. While you could probably just use cocktail sauce, it might be missing that creamy component you want from a sandwich sauce.

Substitutes and Variations:

The simple method of making crispy shrimp, is one you will want to save for later. Just by changing up the seasonings, you can make them for lots of different cuisines. For example, swap out the chili powder and smoked paprika for ground ginger and onion powder to go more Asian. It’s really the method of marinating in a heavy cream (you can also go buttermilk if you want) then dunking in a flour and cornstarch mixture that gives you the crunchy outside with a succulent shrimp on the inside.

Suggestions for Sides:

This is a classic backyard picnic recipe so it’s so fitting to serve up with some Salt and Pepper kettle chips – one of my family’s absolute favorites. You could also do a mac salad, potato salad or even some fries. I’m not gonna lie – these rolls are a mess to eat for sure. But it is worth every napkin – promise!

Crispy Shrimp Rolls

Easy crispy shrimp with cabbage, carrot and red onions drizzled with creamy cocktail sauce
Course Dinner, Main Course, Sandwich
Cuisine American

Prep Time 15 minutes
Cook Time 20 minutes
Marinating Time 30 minutes
Servings 6

Ingredients

  • 6 Hoagie Rolls
  • 4 tbsp Butter melted
  • 1 tsp Garlic Powder
  • 1 tsp Parsley
  • 1 cup Cabbage finely shredded
  • 1 cup Carrots shredded
  • ½ Red Onion thinly sliced
  • ¼ cup Fresh Chives chopped

For the Creamy Cocktail Sauce

  • cup Mayonaisse
  • cup Ketchup
  • 1 tbsp Worcestershire Sauce
  • 1 tbsp Creamy Horseradish
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 tsp Garlic Powder
  • 1 tsp Lemon Juice

For the Shrimp

  • 2 lb Jumbo Shrimp peeled, deveined, tails-off
  • 2 cups Heavy Cream
  • 1 tsp Smoked Paprika
  • 1 tsp Garlic Powder
  • 1 tsp Chili Powder
  • 2 cups Flour
  • 1 cup Cornstarch
  • 1 tsp Salt
  • 1 tsp Pepper
  • Oil for Frying
Get Recipe Ingredients

Instructions

  • In a large bowl, add heavy cream, smoked paprika, garlic powder, and chili powder. Add shrimp, be sure all are submerged. Cover and place in refrigerator to marinate for at least 30 minutes.
  • Combine sauce ingredients in a small bowl. Cover and place in refrigerator until ready to make rolls.
  • Preheat oven to 400degF.
  • In a large saute pan over medium-high heat, add enough oil to be ¾ inch deep.
  • In another bowl, combine flour, cornstarch, salt and pepper.
  • Cut one inch wide canyon in top of each hoagie roll. Press cut portion down into roll. Combine melted butter, parsely and garlic powder. Brush over tops of rolls. Place in oven to toast for 8-10 minutes.
  • Once the oil reaches 350degF, begin to fry the shrimp. Working in batches, transfer shrimp from cream mix to flour mixture. Shake off excess flour mixture and add to hot oil. Cook for 2-3 mintues on each side. Remove to a baking rack over paper towels. Repeat until all shrimp are cooking.
  • To build the Shrimp roll, put a portion of cabbage, carrots, and red onion in bottom of each roll. Top with 4-5 shrimps. Drizzle with sauce and sprinkle with chives.

What’s been going on at Homemade on a Weeknight?

This weekend marked the 11th year of marriage for hubby and I. Since our move to Montana we have quite found our new tradition to celebrate. In Oregon we would go back to place that ee honeymooned each year and stay for the weekend. But that would take more like a week than a long weekend now. This year we went for a little day trip that included a waterfall and a cheese cave!

Top Ten Tortellini Recipes #RecipeCollection

I love to use tortellini to add a little extra to a pasta dinner. While you can, of course, make your own tortellini, these recipes all use store-bought pre-made tortellini. You can go fresh or frozen, but I would avoid the dried variety. The dried ones are typically much smaller and do not offer as much filling. A majority of the recipes I have pulled together in this Top Ten Tortellini Recipes list use just a cheese tortellini. You can always use the type you prefer – meat and/or veggie filled. I also like to do more than just boil the tortellini to cook them – so you might some interesting applications in this collection of tortellini recipes.

Top Ten Tortellini Recipes

A few key kitchen tools you may want to have to hand when it comes to making these Tortellini Recipes:

  1. Spider Strainer – I prefer to use this type of utensil over a pasta fork when making tortellini. It will not rip the tortellini open when you are serving them up.
  2. Fine Mesh Colander – again, this is about preserving the integrity of the tortellini. The fine mesh makes sure the pasta isn’t pushing through the holes in the colander.

Some times you just don’t have the time to do both. That’s when you need a recipes like this one for Cheesy Sausage & Tortellini.

Creamy Italian Tortellini Soup – Some people, a few from my family, have a notion that soup can not be hearty enough to be the whole dinner. It is a creamy soup loaded with kale, carrots, onions, celery, potatoes, sausage, and cheese tortellini. Trust me, no one is walking away from their bowl hungry!

This tortellini salad is loaded with lots of veggies so you don’t have to feel bad about adding in the flavor bomb of salami. Roast Tomato Meatball & Tortellini

Roast Tomato Meatball & Tortellini -A big part of homemade on a weeknight cooking is having some part be the big work and using something semi-homemade to round it out. This recipe uses my roasted cherry tomato sauce and hand rolled meatballs along with store-bought cheese tortellini. This recipe for Roasted Tomato Meatball & Tortellini is so hearty and homey, the family will be asking for it over and over.

Chicken Tortellini Soup

Chicken Tortellini Soup– Full of flavor hearty soups are the perfect cold weather weeknight meals that the whole family will enjoy. This recipe for Chicken Tortellini Soup is fairly simple to put together, with not a ton of active cooking going on. What makes this particular soup special is that it has not one but TWO unexpected ingredients – Worcestershire Sauce and Tabasco Sause. You get that deep earthly flavor from the Worcestershire and a pop of heat from the tabasco for a great bite.

Since getting my blackstone griddle I have been doing so much research on different things that I can make on it. And sausage and pasta make a great combination but it doesn’t always have to be in the Italian food profile. By using some different spices and flavors you can easily make something new. You gotta try this Tortellini Bake with your family soon – mine devoured it.
