If you are in need of an easy side dish or a protein packed base for meal prepping, this is a great recipe for you. A simple combination of black beans, corn, fresh cilantro, lime juice and rice brings brightness to any plate. Cilantro Rice & Black Beans go great with any protein – chicken, fish, beef or pork. It is also so good you can eat it all on its own.

The method for making this dish soap key to success. If you dont add the beans and corn at the right time, they will not warm up enough AND the rice will be over or under cooked. You want to have enough water still in the pan to make stirring easy but the rice needs to be mostly cooked through.

Substitutes and Variations:
You could swap out the black beans for pinto beans if you prefer, as well as red beans. I like to use jasmine rice for this recipe but you could also use long grain rice or basmati rice. Again, I like sweet corn but you could also use white corn.
In a large pot over medium high heat, add rice, salt and water. Bring just to a Bubble, then reduce heat to medium and cover pot. Let cook for 15 minutes.
Remove lid and add black beans, corn and lime juice. Gently stir to combine and then replace the lid and let cook another 5 minutes. NOTE: there should still be a small amount of liquid in the rice when you add beans and corn.
Remove pot from heat and remove lid from pot. Fold in the chopped cilantro and replace the lid. Let rest for 5 minutes before fluffing the rice and serving.

It doesnt get more classic home cooking than a fully loaded cheeseburger. This one is served up smashburger style with a simple burger sauce, cheddar cheese, lettuce, tomato and onion. If you are looking for your go to – “I need a Burger” – solution, you found it! This Classic Bacon Cheeseburger has got everything to make your family happy.

This is a bit of a less is more type recipe. You want to get good beef so you don’t have to add too much seasoning. A good bun so you just have to toast it up. Decent sliced cheddar so it gets melty and gooey. And nice fresh produce that you can just slice up and serve.

Substitutes and Variations:
Since each burger has to be built on its own, everyone can have it their way – add all the things or omit what you don’t want. You can do plain ketchup instead of the sauce. You could add in some pickles if that’s your favorite burger topping. You can also make this with ground pork or turkey. Just add a little oil to the pan if using turkey, so it will crisp up a little.

Suggestions for Sides:
As with any burger – a fried potato item is always a good idea for the side. You can do waffle cut, crinkle cut, Shoestring, steak, curly or regular fries. Heck you can even go tater tots if thats what you like. This burger also is great with some nice potato salad or pasta salad.

Tools that may make this recipe easier:
There are just three special type things I would say are needed to make these burgers. You are going to want a food scoop to portion your ground meat evenly into the 12 patties. You are going to need parchment paper (either precut in 4-5inch squares or by the roll and you cut it). And you are going to want a hand mandolin to cut your onions super thin for best flavor!
In a bowl, thoroughly combine ground beef with salt, pepper, paprika and garlic powder. Use a 2 inch food scoop to form into 12 balls.
Place each ball between two 6inch pieces of parchment and use a heavy pan or burger press to flatten out. Repeat with remaining ball.
In a frying pan over medium high heat, add bacon. Cook until crispy and then remove to paper towel covered plate.
In a wide flat pan or on a flat top griddle, over medium high heat, add 2 or 4 (depending on available space) flattened patties. Let cook for about 3 minutes then flip and smash down again. Cook another 3 minutes and then place a slice of cheese on each patty. Cover with lid and let melt for a minute then add 3 pieces of bacon on top of each patty. Stack two patties together and remove from pan. Repeat with remaining burgers.
Build the burger – smear top bun with fry sauce. Place a piece of lettuce then two slices of tomato and some onion to the bottom bun. The place the double cheese burger on top, adding two or three pieces of bacon. Lastly add top bun and pressing down slightly.
In a small bowl, add water and sugar. Stir until most of the sugar is dissolved. Then add yeast packets. Let sit to bloom for about 10 minutes. (should be foamy)
In a large bowl, combine flour, salt and beaten egg. Pour in bloomed yeast. Mix together until a dough forms. Knead for about 5 minutes. Then add half of the softened butter and knead into dough for another 5 minutes. Cover bowl with plastic wrap (or a bowl cover). Place in a warm place (countertop or proofing drawer), to rise for about and hour. It should double in size.
Turn dough out on lightly floured surface and punch out most of the air. Then use bench scrapper (or knife) to portion into 16 equal pieces. Roll each between your palms into round balls. Line out on a parchment paper covered baking sheet. Cover again with plastic wrap (or a clean kitchen towel) and let proof again, until doubled in size.
Preheat oven to 350degF.
Melt remaining butter. Once buns are done proofing, remove plastic wrap and brush each with melted butter. Sprinkle with sesame seeds. Place in oven to bake for 30 minutes (or until golden brown).
Remove from oven and move immediately to a cooling rack. Let cool at least 15 minutes before slicing in half to use to make burgers or sandwiches.

I love to combine fruit flavors to make interesting beverages. Especially if I can put together fresh cut fruit with fruit juice to get the best of both worlds. This particular cocktail is perfect for a bridal or baby shower as its lighter with prosecco instead of a harder stronger alcohol. Pineapple Pomegranate Prosecco Smash is going to be a favorite all spring long and well into the summer months.

If you are not familiar with Prosecco it is basically the Italian version of champagne. The main difference (other than the region its from) is that Prosecco is produced in by the tank while champagne is produced by the bottle. It is a sparkling white wine that provides the bubbles of a fun drink.

If you want to make this a mocktail, you can use club soda or lemon-lime soda in place of the Prosecco. If you want to make it a little stronger, you can use a combination of vodka and lemon-lime soda in place of the Prosecco.

As I mentioned above, this is a lovely drink for a Shower. You can make a pitcher of it and let people pour as they like. It goes great with light refreshing finger foods as well as a backyard bbq type situation.

While it’s not necessary, you can use special ice molds to make drinks a little more fun. You can use round molds or big square molds. I find that the silicone ones are the easiest to use. You also could use a double sided shot glass – also called a jigger – to make measuring out the portions simpler.
This recipe either makes one drink (using ounces) or a pitcher of 8(ish) drinks (using cups).
In a mixer glass combine pomegranate juice, lime juice, and prosecco.
In a glass place a few pieces of pineapple, smashing them with a spoon to release some of the juices. Add ice to the glass, then pour the mixture over the ice. Then add a chunk of pineapple to the rim of each glass.

We had an exciting week on the homestead – we hatched out a duckling! We have named it Mal – which is either short for Mallory or Malcolm. We won’t know for sure if its a he or a she until about 2 weeks. But I think it will be Malcolm. We have a few more duck eggs in the incubator that we will know about in anout two weeks.

Spring may have entered rural Montana like a lamb…we have still had several days with temps below freezing and even a fair bit of snow fall. Though none of it has really stuck around more than a day. That said we are all looking forward to a bountiful Spring as we sow the seeds and plant the plants. I have looked at the page views and stats to check out the popular recipes posts from last month. When I am building sandwiches, wraps, and burgers, I am always thinking about layers. How can I layer together flavors on flavors to build the ultimate bite. I love to have a vinegary bite in most things along with something with texture. That’s why this Quick Kraut is such a good recipe to have in your recipe box.
Sometimes a meal calls for an appetizer. Or, like we do at our house, need an idea for your next Appetizer Night! These Simple Cheese Straws are the perfect addition to any appetizer menu. They are light and flaky while still being cheesy. And the best part – they take only a few minutes to make and few more minutes to bake! That makes them great along side a dinner when you want something more than just garlic bread.
Not everything named Breakfast has to be served at breakfast time. We have breakfast for lunch or dinner quite frequently. These Quick Breakfast Wraps are perfect for any meal of the day, super easy to make and a great on the go recipe. They are also really great for camping or to make ahead.
Making my own spice blends has been a hobby of mine for some time. I really like to play around with different flavors and see how they come together. I also really like to be able to control the amount of salt, fillers and other preservatives that go into the spice blends I use in cooking. Recently I have been trying to make my own deli meats so that we have what we want to hand. In the process of that endeavor I have come up with a really great Roast Beef Spice Blend that works for making deli style meat or a Sunday Supper centerpiece.
I don’t usually make recipes that require a super specialized piece of cooking equipment (except maybe slow cookers), but I am so in love with my Blackstone griddle, I can’t help it. For the most part the other things I have made thus far can be made on the stove top, however this Blackstone Cowboy Stir-Fry really does the need the wide open flat space of the griddle. It is a total game changer for making meals like this for the whole family at once. By the by – this is not an ad for Blackstone products at all – my hubs got me one for my birthday this year and I just love it so very much.

Every detail of the night can be curated by you. Need some background music? Slip on your favourite playlist. Prefer softer lighting? Light a few candles.
