I love to use tortellini to add a little extra to a pasta dinner. While you can, of course, make your own tortellini, these recipes all use store-bought pre-made tortellini. You can go fresh or frozen, but I would avoid the dried variety. The dried ones are typically much smaller and do not offer as much filling. A majority of the recipes I have pulled together in this Top Ten Tortellini Recipes list use just a cheese tortellini. You can always use the type you prefer – meat and/or veggie filled. I also like to do more than just boil the tortellini to cook them – so you might some interesting applications in this collection of tortellini recipes.

A few key kitchen tools you may want to have to hand when it comes to making these Tortellini Recipes:

  1. Spider Strainer – I prefer to use this type of utensil over a pasta fork when making tortellini. It will not rip the tortellini open when you are serving them up.
  2. Fine Mesh Colander – again, this is about preserving the integrity of the tortellini. The fine mesh makes sure the pasta isn’t pushing through the holes in the colander.

Baked Bacon Cheddar Sliders

It’s been a while since I shared a burger or slider recipe, and I decided it’s time to fix that. Sliders are always a hit in my house – mostly because my daughter and I can’t eat a whole burger each so these are perfect for us, and the boys all want 2 or 3 burgers. These Baked Bacon Cheddar Sliders are super quick to make and so full of all the flavors you want from a bacon cheeseburger. They are also so cute – perfect for a potluck or backyard party.

I always like to get thick-cut bacon for my burgers (well for everything really), because it makes the bacon a full participant as apposed to just an side note. For the cheddar, I like to go with a sharp cheddar variety. These sliders are about big bold flavors packed into a small slider – so don’t skimp on anything. I use regular mayo, but you could do miracle whip if you prefer it. And for ketchup, I like a good old Heinz for my burgers, but use whatever you have on hand.

Substitutes and Variations:

You can use a different sauce to change up the overall flavor profile – I just use a mix of ketchup and mayo. You could go BBQ or just add in mustard. If you wanted to add some veggies – I would suggest using a roma tomato cut into slices and some cut pieces of lettuce.

Suggestions for Sides:

An excellent side for these sliders are some crispy tater tots! I always suggest placing the tots on a cooking rack over a parchment paper covered baking sheet while you are baking them. I find that they crisp up better and more evenly then letting them set flat on the baking sheet.

Tools that may make this recipe easier:

One thing that you may not think you need to make sliders is a pizza wheel. But it makes it so much easier to take the baked larger patty into the dozen smaller slider patties. You will also need some longer toothpicks such as these 4 inch toothpicks – this is mostly for presentation, but it really helps to keep everything together until you are ready to gobble them up.

Equipment

  • 12 Long Toothpicks

Ingredients

  • 1 lb Ground Beef
  • 1 lb Ground Pork
  • 1 tsp Salt
  • 1 tsp Garlic Powder
  • 1 tsp Red Pepper Flakes
  • 1 cup French Fried Onions crushed
  • 6 slices Cheddar Cheese
  • 12 slices Bacon cut in half
  • ½ cup Mayo
  • ½ cup Ketchup
  • 24 Dill Pickle Chips
  • 12 Slider Buns

Instructions

  • Preheat oven to 425degF.
  • In a bowl, combine beef, pork, salt, red pepper flakes, garlic powder and crushed onions. Transfer to a parchment paper covered baking sheet. Press out into a flat even layer about a half inch thick. Place in oven and bake for 20 minutes. Add cheese in a single layer over the top and bake another 5 minutes.
  • Frying bacon in a frying pan over medium high heat. Once crispy, remove to paper towel covered plate.
  • When meat mixture is done, remove from oven and let sit for 5 minutes. Then use a pizza wheel to cut into 12 equal squares.
  • Separate buns. Drizzle mayo and ketchup on bottom bun and then place top bun back on and twist, then separate again. Next add patty and 2 pieces of bacon. Add top bun, then two pickle chips and secure with long toothpick.

My Review:

This is just one book in the Goldy Bear Culinary Mystery series. The series follows a caterer that often finds herself in the middle of a murder mystery or massive caper. What I love about the writing is the absolutely beautiful way that Davidson describes the art of cooking, the smells, the flavors and the passion for good food. All while following a twisting and turning murderous plot. These are kinda books your can read or listen to in a cozy weekend.

My Review:

I’m wasn’t  entirely sure what to call this recipe – chicken, bacon, red bell pepper, corn, green onion, parmesan,  and cream. It is quite good – just was not sure what to call it and then it struck me how colorful it turned out. So I settled on Confetti Chicken & Pasta and I think it really suits the dish.

This one-pot really is just a variation of all the others. You add a meat to some veggies and pan-fry them. Then add enough liquids to cook the pasta through and thicken to make a sauce. You can play around with the types of liquids and pastas to make deeper flavors.

Substitutes and Variations:

If you do not like corn with pasta – I know some people don’t – you can simply omit it. If you want to swap it out for a can of petite diced tomatoes, that adds a nice flavor and maintains that small note of sweetness. I used shells but you can use elbows or bow ties or rotini.

Suggestions for Sides:

Since this already had the meat, grain and veg in one pan, you do not necessarily need a side dish. If you wanted to extend the corn flavor – you could makes some cornbread to serve on the side.

Tools that may make this recipe easier:

You gotta have a pan large enough for the whole meal. But its important to not just use a big stock pot. The meal won’t cook right if it’s too deep. You want a large wide pan with 2-3 inch sides that has a lid. This allows things to spread out and cook evenly. I like a 14 inch everyday pan for this.

Confetti Chicken & Pasta

A one pot dinner that is packed with flavors of chicken, bell peppers, and corn in a cheesy sauce

Cook Time 35 minutes

Ingredients

  • ½ lb Bacon chopped
  • lb Chicken Thigh, boneless skinless cut in 1-inch chunks
  • 4 tbsp Oil divided
  • 1 Red Bell Pepper diced
  • 1 Green Bell Pepper diced
  • ½ White Onion diced
  • 1 tbsp Minced Garlic
  • 4 tbsp Butter
  • 4 tbsp Flour
  • 1 tsp Paprika
  • 1 tsp Ground Mustard
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 1 15oz can Corn drained
  • qt Chicken Broth
  • 1 lb Pasta Shells
  • 1 cup Heavy Cream
  • 2 cups Cheddar Cheese shredded
  • 3 stalks Green Onions chopped

Instructions

  • In a large saute pan over medium high heat, add chopped bacon. Cook until crispy. Remove to a paper towel covered plate. Reserve all bacon grease in the pan.
  • Combine salt, pepper, paprika, and parsley. Spinkle half of the mixture over the chicken.
  • In the same pan with the bacon grease, add half of the oil. Saute chicken until you no long see pink (do not cook all the way through at this stage.) Push chicken to one side of pan and reduce heat to medium.
  • Add remaining oil to pan along with bell pepper, onions and garlic. Saute for 3 minutes then push to side with chicken.
  • Add butter to pan and let melt. Whisk in flour and let cook for 3 minutes. Add chicken broth, corn, ground mustard and remaining seasoning mixture. Stir vegetables and chicken into the liquid.
  • Add pasta to pan and work it around until the pasta is completely submerged. (add some water or more broth if you need to). Cover pan with lid and let cook for 20 minutes.
  • Remove lid and stir in heavy cream and cooked bacon. Once fully incorporated, add in cheese. Stir until melted in. Let cook another 5 minutes before serving. Sprinkle with green onions.

What’s been going on at Homemade on a Weeknight?

March sure did sneak up on me! What a whirlwind February was for our Family. Our daughter went on a once in a lifetime trek to Washington DC to represent the Montana Wing of the Civil Air Patrol. My aunt and took up hand knitting and may be slightly addicted. My husband and oldest boy have almost completed the envelope of the house they have been building since October. Oh and we’ve hatched out a couple dozen chicks! Its been a very busy short month!

Creamy Chicken Noodle Soup

Who doesnt love a warm chicken noodle soup on a blustery winter day? And its made even better when you add in a bit of cream and blended carrots for the perfect velvety texture with a hint of sweetness. This Creamy Chicken Noodle Soup tastes like you spent all day on it without that kind of effort!

I like to make soups like this in my Dutch Oven. You can cook it all at once, which means you dont lose any of the flavors and they just build on each other. You also get nice even heating with a cast iron Dutch oven. All that said, you can surely use any larger stock pot.

Substitutes and Variations:

I like to use the Country style egg noodles. These are a little thicker than most egg noodles so you get a little more texture. They are also sometimes called “Amish style” or handmade egg noodles. All that said, you can use the typical egg noodles as well. I like the ground chicken in this but if prefer a shredded chicken, you could use a rotisserie chicken or pan fry some chicken breasts and shred them.

Suggestions for Sides:

I always like a soup and salad combo. This one calls for a classic green garden salad. Spring mix topped with some carrots, cucumber, red onion, tomato and croutons.

Other than the Dutch oven, a good whisk to mix the seasonings and cornstarch together before adding is a must. This insures you do not get those icky clumps of gummy cornstarch if its not properly mixed in.

Creamy Chicken Noodle Soup

A creamy and hearty soup loaded with veggies, chicken and noodles.

Ingredients

  • 2 tbsp Oil
  • 2 lb Ground Chicken
  • 2 tsp Salt
  • 2 tsp Black Pepper
  • 1 tsp Garlic Powder
  • 3 tbsp Butter
  • 1 cup Carrot grated
  • 1 cup White onion chopped
  • 1 cup Celery chopped
  • 2 cloves Garlic minced
  • 2 tbsp Cornstarch
  • 4 cups Chicken Broth
  • 1 tsp Paprika
  • 1 tsp Tarragon
  • 1 cup Milk
  • 1 cup Heavy Cream
  • 1 lb Country Style Egg Noodles

Instructions

  • Add oil and ground chicken to dutch oven over medium high heat. Sprinkle with one teaspoon each of salt, pepper and garlic powder. Cook and crumble until no longer pink, then push the cooked ground chicken to one side of the pot.
  • Add butter to pan. Once melted add vegetables and saute for 5 minutes.
  • Whisk together corn starch, remaining salt and pepper, paprika, tarragon and chicken broth, then add to pan. Continue stirring as you add milk. Then bring just to a bubble then reduce heat to medium. Cover and let simmer for 20 minutes.
  • Add in cream and egg noddles. Replace lid and let simmer another 10 minutes.
  • Once the noodles are tender but not mushy, serve soup with a sprinkle of parsley if desired.

Do you shoot, create, and inspire with your ideas every day? Blogging can be a drain, or it can be enjoyable. Sometimes, it feels like work: you’re constantly writing and experimenting, your mind is occupied with new ideas and competitor analysis. Maybe it’s time to make it a full-time career? It’s difficult to answer this question on your own: you might be afraid of self-employment or stressed by the slightest loss of audience. Today, we’ll look at how to organically turn your hobby into a full-time job.

Is Your Food Blog Ready to Become a Full-Time Career

And again, about objectivity: if you’re overthinking it, starting a full-time blog will be difficult. Let’s return to the hard facts, which always speak louder. This checklist will help you clear your head and realize that the time has come:

  • You have stable traffic. Of course, any content relies on trends, but if you don’t have a regular audience and are dependent on whether a new recipe goes viral, it’s too early.
  • You have multiple sources of income. You can do anything: advertising, your own products, and collaborations. The less you rely on one area, the better.
  • You produce content systematically. If you want to make blogging your full-time job, you should treat it like a job. Don’t let motivation and inspiration be the sole driver of progress: schedule publications and practice regularity.
  • You understand the numbers. As soon as money is added to creativity, the process ceases to depend solely on your talent and skills. Do you understand traffic, engagement, and conversion? If activity metrics are an opportunity to develop a better strategy, then you’re ready to move forward.

The overall picture is simple: the more you treat it like a job, the greater the chance your blog will actually become one. The numbers drop, seasonality affects success, and the audience changes. If you’re ready to manage this and stay productive and inspired, then you’re ready for the next step.

Building a Sustainable Monetization Strategy

We’ve already talked about different income streams for bloggers. But how does this work in practice? In fact, there’s little difference here from creators in other industries: most of them earn income from advertising and affiliates. This is a profitable idea, but quite risky: you’re literally dependent on money from brands and companies.

Your strategy should include a variety of options: sell your products, monetize content on various platforms, and sell advertising. Ideally, your primary income should be focused on the first two options: in the future, you can completely abandon advertising in favor of higher-quality content.

When you notice your blog income growing, you start planning and testing your financial options: you build a financial cushion, take on your first ads, and see stability. See? It’s not about a sudden leap and your life changing overnight. It’s a process, and a mindful one at that.

At the same time, many put off the transition because they can’t decide. Don’t worry – with the right management of your money, a financial cushion, and strategy, you can do it. Believe in yourself and good luck!
