Veggies are a key component of a well-rounded weeknight meal. You want that veg side dish to make sure you have all the boxes checked. And when you add bacon, garlic, and butter, it’s next level. Then add in a tiny bit of spice, and you’ll be making this over and over. Spicy Green Bean Bundles are pretty easy to make, so adding them to a weeknight meal is a breeze.
Green beans are pretty underrated in terms of satisfying sides. This particular green bean recipe is going to be exactly what you want to add some flair. While this is a great holiday or family meal showstopper, it’s also a wonderful weeknight plate. Adding a bit of bacon and spice takes it from the humdrum buttered green beans to a real wow factor side dish. Its a great way to entice picky veggie eaters to clear their plates.
You absolutely need a baking sheet with baking rack combo as well as parchment paper to be successful in this recipe. The precook on the bacon ensures that the final bacon is crispy and cooked as opposed to flabby and meh. The rack works to keep the bacon from curling up so that you have enough to wrap around the beans. This is also a great method for cooking bacon for a crowd – just let it bake until its at your desired level of crispiness.
One very important thing to note about this recipe – you can swap out the green beans for a few different veggies. The most obvious is asparagus – which is so super good. But you can also opt for broccolini and young carrots. If the heat of the red pepper flakes is a no go in your home, you can omit it and add in some black pepper for seasoning instead. All in all this is a flavorful and filling side dish.

Spicy Green Bean Bundles
Ingredients
- 12 slices Bacon
- 2 lb Whole Fresh Green Beans
- ½ cup Butter melted
- 1 tbsp Minced Garlic
- 1 tsp Salt
- ½ tsp Red Pepper Flakes
Instructions
- Preheat oven to 350degF.
- Line out bacon in a flat single layer on a parchment paper covered baking sheet. Place a baking rack on top to keep bacon from curling. Bake for 10 minutes.
- Increase oven temp to 400degF.
- Wrap 8 to 10 green beans in each parcooked piece of bacon. Return to baking sheet with the end flap on the bottom. Repeat with remaining bacon.
- Add garlic, salt and red pepper flakes to melted butter. Spoon over each bundle.
- Return to oven and bake another 20 minutes. Let rest on the baking sheet for 5 minutes before transferring to serving plate.
