This is one of those recipes that works as a great weekend breakfast or a great weeknight dinner. With a good combo of bacon, sausage, cheese, eggs, and potatoes – you have all of the best parts of a solid hearty meal. Cheesy Tater Tot Casserole is filling and relatively simple to put together, making it a perfect breakfast, lunch, dinner, make-ahead, potluck, or holiday meal.

Tater tots are essentially the same thing as hashbrowns, just in a smaller size. Frozen shredded potatoes with oil make for a very crispy layer top to this casserole. I do suggest the tubular style tater tot over the coin style. It is easier to evenly line them out in a nice layer which means they will cook more evenly. It also ensures a fairly solid coverage layer with no big wholes.

You will definitely need a 13×9 glass baking dish to have success with this dish. The perfect depth for this Casserole is what you need for this stacked dish to cook through correctly. It’s important that you wait to put the top layer of cheese and bacon on until the last 15 minutes of cooking because you don’t want it to burn, but you do want it to be crispy.

As I mentioned above, this is a super hearty dish that doesn’t need any kind of side or addition. That said, if you like ketchup or hot sauce (like Tabasco) on your hashbrowns, you will want to have it on hand. It is a nice highlight to the flavors at work. Another variation would be to use Hot sausage and/or pepper jack cheese. And if you did want to have a side item, you could do some nice cut up fruit. One of my boys did mention that this would be good with some sausage gravy – which does sound yummy but also adds to the heaviness.

Cheesy Tater Tot Casserole

A quick breakfast casserole that is perfect for a weekend or holiday meal.

Ingredients

  • lb Pork Sausage
  • 8 Large Eggs beaten
  • 1 cup Heavy Cream
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 tsp Garlic Powder
  • 1 tsp Parsley
  • 1 tsp Paprika
  • 2 cups Cheddar Cheese shredded, divided
  • 28 oz Frozen Tater Tots
  • 4 strips Bacon cut into ½-inch pieces
  • Cooking Spray

Instructions

  • Preheat oven to 375degF.
  • In a saute pan over medium high heat, add sausage. Cook and crumble until no longer pink.
  • In a bowl, combine eggs, heavy cream, salt, pepper, paprika, garlic powder, and parsley.
  • Spray 13×9 baking dish with cooking spray. Add cooked sausage. Sprinkle with one cup of cheese. Then pour egg mixture over top.
  • Line tater tots out in single layer over top of egg mixture. Place in oven and bake for 45 minutes.
  • In the same saute pan over medium high heat, add chopped bacon. Cook until cripsy and remove to paper towel covered plate.
  • Remove casserole from oven and sprinkle with remaining cheese and crispy bacon. Return to oven and bake another 15 minutes.
  • Let cool on counter for at least 10 minutes before cutting into pieces to serve.
