Cheesy Tater Tot Casserole

Ingredients
  

  • lb Pork Sausage
  • 8 Large Eggs beaten
  • 1 cup Heavy Cream
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 tsp Garlic Powder
  • 1 tsp Parsley
  • 1 tsp Paprika
  • 2 cups Cheddar Cheese shredded, divided
  • 28 oz Frozen Tater Tots
  • 4 strips Bacon cut into ½-inch pieces
  • Cooking Spray

Instructions
 

  • Preheat oven to 375degF.
  • In a saute pan over medium high heat, add sausage. Cook and crumble until no longer pink.
  • In a bowl, combine eggs, heavy cream, salt, pepper, paprika, garlic powder, and parsley.
  • Spray 13x9 baking dish with cooking spray. Add cooked sausage. Sprinkle with one cup of cheese. Then pour egg mixture over top.
  • Line tater tots out in single layer over top of egg mixture. Place in oven and bake for 45 minutes.
  • In the same saute pan over medium high heat, add chopped bacon. Cook until cripsy and remove to paper towel covered plate.
  • Remove casserole from oven and sprinkle with remaining cheese and crispy bacon. Return to oven and bake another 15 minutes.
  • Let cool on counter for at least 10 minutes before cutting into pieces to serve.
