When I make gyros or pitas at home, I love to include this Mediterranean Salsa – that brings great flavor to the whole bite. With these fresh ingredients, you will bring a brightness to your meal that will really take it up a notch. The flavors of dill, parsley, and oregano paired with fresh cucumber, red onion, and red onions also make for a lovely chip and dip combo with some pita chips.

While you can definitely make this just before serving it up, I do suggest that you make it at least a few hours before whenever possible. Maybe make it on your lunch break (if you come home) or in the morning before heading out for the day. Letting the ingredients sit and mingle makes it just that much more flavorful.

Substitutes and Variations:

If you want to make this salsa have some real zing or zip – you could add in some spicy peppers. Its not really meant to be a spicy salsa, so that’s the only reason I don’t include it. You can also add some crumbled feta cheese to it, if you want to add to the Mediterranean flair.

Suggestions for Sides:

As I mentioned, this is great with some crunchy pita chips. It’s also really good on a gyro, Mediterranean style burger, or even some flatbread with some feta.

Tools that may make this recipe easier:

Knife skills are important when making this recipe. So a nice sharp chefs knife is important to have in your kitchen, also with a sturdy cutting board. You want to try to get the tomatoes and cucumber cut to nearly the same size for the best mouth feel. You will also want a microplane or zester to get that delicious flavor packed peel off the lemon.

A tangy and fresh salsa with a Mediterranean flair for your gyros, Greek salads and bowl or just to dip your pita chips in!

Ingredients

  • 1 pint Cherry Tomatoes small diced
  • ½ Medium Red Onion small diced
  • ½ cup Chopped Fresh Dill
  • ½ cup Chopped Fresh Parsley
  • 2 Garlic Cloves minced
  • 1 Medium English Cucumber seeded and small diced
  • 1 tsp Salt
  • 1 Lemon zest & juice
  • 1 tsp Dried Oregano
  • ½ tsp Red Pepper Flakes

Instructions

  • In a small bowl, combine all ingredients thoroughly.
  • Cover with plastic wrap (or make in container that has a lid) and place in refrigerator for at least 30 minutes. It will keep for up to 5 days.

What’s been going on at Homemade on a Weeknight?

Last week I shared that we finally got all of our plants into the soil. This week we were able to actually harvest some of the first plants that we put into a soil several weeks ago. Like these adorable little radishes that I pickled and our family just devoured. I had never made pickled radishes but it just sounds so good. I mixed some water, white vinegar, salt, sugar, garlic powder, paprika, black pepper and dill with the thinly sliced radishes and it was so good. I served them over the top of some simple grilled pork chops, along side my Rustic Pepper Jack Potatoes.

Buffalo Chicken Pizza

Two great things come together on this homemade pizza – of course, pizza and then buffalo chicken. The oven roasted chicken is going to be one that you’ll want to hold on to for future use. If you are looking to add a kick of heat to pizza night, then Buffalo Chicken Pizza is what you need to be making.

There is one trick this recipe that will really take all your Buffalo Chicken dishes to the next level – butter! By adding melted butter to your store-bought Buffalo Hot sauce (like Frank’s Red Hot) gives you all the flavor with not so much that. It makes this pizza fantastic and will make your chicken wings show stoppers.

Substitutes and Variations:

As always, I’ve included my super easy pizza dough recipe below the main recipe. You can use it, or use your own favorite dough recipe. Or you can by a dough from your favorite grocery or you can use those pre-made crusts. I used a combination of cheddar and mozzarella for this pizza – you could go all one way or the other. You could also add in some red or green onions for a nice bite.

Suggestions for Sides:

I have two really great sides to serve with this tasty pizza. My Chunky Blue Cheese Dressing is a delightful dipping sauce for the tangy spice of the buffalo sauce. And my Easy Garlic Knots are an excellent side dish.

I really love my pizza pans. They are simple but very effective. They are 12inches and have ½inch holes on the bottom. This allows for even the cooking of the dough.

Buffalo Chicken Pizza

A slice of fresh baked spicy pizza with a buffalo sauce base with garlic roasted chicken and lots of bacon!

Prep Time 10 minutes
Cook Time 1 hour
Proofing Time 1 hour
Servings 2 Pizzas

Ingredients

  • 2 Pizza Dough Crusts see homemade dough recipe below
  • 1 lb Chicken Breast
  • Cooking Oil Spray
  • 2 tsp Garlic Powder
  • 1 tsp Parika
  • 1 tsp Ground Onion
  • 1 tsp Salt
  • 2 tsp Parsley
  • 1 tsp Pepper
  • ¼ cup Oil
  • cup Butter divided
  • 2 cup Buffalo Sauce like Frank's Red Hot
  • 2 cups Mozzarella Cheese shredded
  • 1 cup Cheddar Cheese shredded
  • ½ lb Thick-Cut Bacon

Instructions

  • Start pizza dough proofing (is using) at least one hour before starting the chicken.
  • Preheat oven to 350degF.
  • In a small dish, combine salt, pepper, paprika, 1 teaspoon parsley, onion and 1 teaspoon garlic powder. Place chicken breasts on a baking rack over a parchment paper covered baking sheet. Spray each with some cooking oil then sprinkle with seasoning mixture. Place in oven to bake for 30 minutes.
  • Once the pizza dough is completed as listed in the recipe below, start building the pizzas.
  • In a frying pan over medium high heat, add bacon. Cook until crispy and remove to paper towel covered plate to cool.
  • In a small sauce pan over medium heat, add 1 cup butter. Once melted whisk in buffalo sauce. Reduce heat to low and let simmer for 15 minutes. Remove from heat.
  • Increase heat in oven to 425degF. Split dough in half and roll out to two round crusts. Place on pizza pans (can also make two rectangular crusts on a baking sheet). Place in oven to bake for 12 minutes.
  • Cut chicken into roughly half-inch cubes. Chop bacon into bacon bits. Whisk buffalo sauce (if it's separated). Combine mozzarella and cheddar cheese.
  • In a microwave safe dish, melt remaining butter. Add 1 teaspoon of garlic powder and one teaspoon of parsley.
  • Remove pizza crusts from oven. For one pizza, spread one cup buffalo sauce over top of crust. Evenly sprinkle with 1 cup of cheese. Layer with half of the chicken and half of bacon. Sprinkle with ½ cup of cheese mixture. Lastly, brushed melted garlic butter around outer crust of pizza. Repeat on second pizza. Place in oven and bake for 10 minutes more. Remove and let rest for 5 minutes, Finally drizzle with remaining buffalo sauce.

Thin Crust Pizza Dough

A simple pizza dough to use for all sorts of pizzas. Makes 2 12inch by 17inch rectangle pizza crusts or 2 14inch round pizza crusts

Cook Time 15 minutes
Rising Time 1 hour

Ingredients

  • 2 tbsp Yeast instant
  • cup Oil
  • cup Warm Water
  • 2 tbsp Sugar
  • 2 tsp Salt
  • cups Flour
Get Recipe Ingredients

Instructions

  • Prepare all of the ingredients
  • In a large bowl, combine warm water, yeast, sugar, salt, and oil. Let sit to activate for about 10 minutes. Yeast should become foamy.
  • Add flour to activated yeast mixture. Stir together until a sticky dough forms. Cover with plastic wrap and allow to proof for about an hour (until dough has doubled in size)
  • Preheat oven to 425degF.
  • Once risen, split into two equal halves. Add one half of dough to floured surface and use a rolling pin to press out into ¼-in thick in the shape of the baking sheet. Move to parchment paper covered baking sheet. Spray with cooking oil.
  • Bake for 8 minutes.
  • Continue to pizza recipe directions.

Chunky Blue Cheese Dressing

Sometimes, you just need a really decadent creamy dressing with a little bit of funk. If you aren’t a fan of blue cheese – this is not the dressing for you. It is loaded with chunks and crumbles of blue cheese! Creamy and dreamy are the best ways to describe this Chunky Blue Cheese Dressing.

I love to use this dressing as a dip for buffalo chicken wings. It is amazing with some carrots and celery. And of course it is lovely on a nice steak wedge salad. It pairs especially well with bacon too!

Substitutes and Variations:

While it will slightly change the flavor, you can swap out the sour cream OR the mayonnaise for Greek yogurt. I want to emphasize OR – if you swap both, you will lose an element of richness as well as increase the sour note. I know this is blue cheese dressing – but you could swap out the blue cheese for feta cheese to make a fantastic creamy feta dressing for your gyro!

Suggestions for Sides:

While this would be so lovely on a nice green salad with some crispy chicken- it is exceptional with my Buffalo Chicken Pizza. It pairs so nicely with the tangy heat.

You are going to want to have some wide mouth pint jars for this recipe – it makes mixing and storing, as well as serving the dressing simple.

A creamy decadent homemade dressing loaded with chunks of blue cheese.

  • 1 Pint Jar

Ingredients

  • cup Buttermilk
  • ½ cup Sour cream
  • ½ cup Mayonnaise
  • 2 tbsp Lemon Juice
  • 1 tbsp White Vinegar
  • 1 tbsp White Sugar
  • 4 oz Blue Cheese Crumbles
  • 1 tsp Paprika
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 1 tsp Parsley
  • 1 tsp Garlic Powder
Get Recipe Ingredients

Instructions

  • Add Buttermilk, sour cream, lemon juice, vinegar and half of the blue cheese crumbles to a pint mason jar. Using a fork, smash up the cheese while mixing together.
  • Add all remaining ingredients EXCEPT the remaining blue cheese to the jar and secure the lid. Shake vigorously for about 2 minutes.
  • Add remaining blue cheese and shake well. Store in refrigerator for up to 10 days.

What’s been going on at Homemade on a Weeknight?

I can finally report that the garden beds are all full of plants that are sprouting and growing and thriving. We have some raised beds, some fabric pots, and some plants directly into the ground. We are doing a lot of experimenting this year, as we are in an entirely different climate, elevation and soil type. So we are learning how to navigate different types of plants and methods. I’m not sure that we will have the most bountiful harvest but we will have new knowledge and at least a few tasty veggies to enjoy. Have you ever made a drastic move and had to relearn everything you thought you knew about gardening? Got any types of arid gardening?

Easy Garlic Knots

While these might look like a lot of work… they are so easy to make. The dough is simple to put together, and the process of “tying” them is really easy – just an overhand knot. They are a great addition to any table – Easy Garlic Knots are super tasty. I like to make them when I make spaghetti or pizza or an entree salad. They just add that extra note of homemade goodness to the meal.

If you need to simple item to bring to a potluck event – these knots are so good for that. While they are very good warm and fresh from the oven, they do very well completely cooled too! You can make them even up to two days ahead of time, as long as you store them in an airtight container once they have completely cooled on a rack. If you want to warm them up, you can pop them in the oven for 5 minutes and even brush with a little more garlic butter to give them that pretty glistening look.

These are really delicious as is, but if you like cheese, add some grated parmesan cheese after the second butter basting, just before serving for a nice extra texture and flavor.

Suggestions for Sides:

These are great with pastas. My kids really like it with the pizza. Since this is essentially my pizza dough recipe anyway, I just use half of the dough to make a pizza and the other half to make these garlic knots.

Tools that may make this recipe easier:

Two things that are integral to the success of these garlic knots are a bench scraper and basting brush. The bench scraper is needed to evenly split the dough into 32 portions. The brush is needed to spread the garlic butter evenly. I prefer a silicon brush, as it cleans more easily and also puts more of the butter on the bun.

  • 2 tbsp Yeast instant
  • cup Oil
  • cup Warm Water
  • 2 tbsp Sugar
  • 3 tsp Salt divided
  • cups Flour
  • 1 cup Butter melted
  • 1 tsp Granulated Garlic
  • 1 tsp Dried Parsley

Instructions

  • Prepare all of the ingredients
  • In a large bowl, combine warm water, yeast, sugar, 2 tsps salt, and oil. Let sit to activate for about 10 minutes. Yeast should become foamy.
  • Add flour to activated yeast mixture. Stir together until a sticky dough forms. Cover with plastic wrap and allow to proof for about an hour (until dough has doubled in size)
  • Preheat oven to 425degF.
  • Once risen, split into thirty-two equal halves using the bench scrap to cut. Lightly flour your hands and roll each dough piece until its about 6 inches long and ¾ inch in diameter. Tie in a overhand knot and line out on a parchment paper covered baking sheet.
  • In a microwave safe bowl add butter and melt completely. Then add garlic, parsley and remaining salt. Baste each knot with the mixture, saving about a ¼ of it for after the baking.
  • Place in oven and bake for 25 minutes.
  • Immediately after removing from oven, baste with remaining garlic butter.

Pasta is a perfect place to start when making weeknight dinners. You can add in some sauce, protein, and cheese for a delightful hearty meal. These Sausage & Spinach Stuffed Shells are an excellent way to get spinach into your families diet. This dish is also so beautiful when you prep it in concentric circles in the large round pan.

As I mentioned, this is a very pretty presentation, making it perfect for a Sunday Supper or a night that you have a dinner guest. That said, you can make this dish ahead of time all the way up to the baking step. Then cover and refrigerate to sit until ready to bake.

Substitutes and Variations:

If you like, you can use different ground meat in place of the Italian sausage. If you use a ground chicken or turkey version of Italian sausage, then just swap out. If you want to use ground beef, you will need to add some Italian seasoning, onion, garlic, paprika, salt, and pepper to the meat while it cooks.

Suggestions for Sides:

Of course, garlic bread is the ideal side for this dish. Perfect for sopping up the extra red sauce. You could also serve a nice Caesar salad on the side.

As noted in the recipe, you can use two 13×9 baking dishes to prepare this recipe. But ideally, you would use an extra large 14inch Everyday Pan. I use mine for so many meals.

Sausage & Spinach Stuffed Shells

A hearty pasta dish loaded with sausage, spinach and ricotta all baked in a simple red sauce and covered in cheese!

Ingredients

  • 2 lb Ground Italian Sausage
  • 32 oz Ricotta Cheese
  • cup Grated parmesan
  • 2 Eggs beaten
  • 2 cup Fresh Baby Spinach chopped
  • 1 cup Fresh Parsley chopped
  • 2 lb Jumbo Shells
  • 1 cup Mozzarella cheese shredded

For the Red Sauce

  • 2 28oz cans Crushed Tomatoes
  • 1 tbsp Italian seasoning
  • 1 tbsp Sugar
  • 1 tbsp Worcestershire sauce
  • 1 tbsp Dried Minced Onion
  • 1 tbsp Dried Minced Garlic
  • 1 tsp Crushed red pepper flakes
  • 1 cup Beef Broth Or water

Instructions

  • In a saute pan over medium-high heat, cook and crumble sausage until no longer pink. Remove from heat.
  • In a mixing bowl, combine ricotta, beaten eggs, one cup parmesan cheese, spinach and ¾ cup parsley. Add about ⅔ of cooked sausage and fold in.
  • Add ingredients for red sauce and remaining sausage (with any grease) to extra large oven safe saute pan (needs to have a lid). Stir to combine. NOTE – you can also use 2 13×9 baking dishes and cover with foil.
  • Preheat oven to 350degF.
  • Start filling uncooked shells with ricotta mixture. Use a metal table spoon to push mix into tightly rolled shells. Line with out in concentric circles in the pan.
  • Cover pan with lid and place in oven for 45 minutes to bake.
  • Remove pan from oven and remove lid from pan. Sprinkle with mozzarella, remaining parmesan and remaining parsley. Return to oven to bake for 10 minutes more.
  • Remove from oven and let rest at least 5 minutes before spooning out to serve.

Heath Sourdough Cookies

Cookies are always a welcome treat any day of the week. These cookies use a sourdough discard based cookie batter that is super versatile. Heath is a classic candy bar that is a simple english-style toffee covered in milk chocolate. When you mix it all up to make these Heath Sourdough Cookies, you are sure to be a serving up a baked good!

As always, let me clear – there is no recipe or direction for making the sourdough discard. You have to already have a sourdough starter that you are maintaining. Sourdough discard is a bit misleading – as it’s not “garbage,” it just means the portion of starter that you don’t use to make a loaf of bread when you are feeding your starter.

Substitutes and Variations:

This recipe is specifically for the Heath chocolate covered toffee pieces to be mixed in. That said, this recipe for the dough is a base that can be used for just about any sort of chunk or chip or nut mix ins. So you want to make chocolate chip walnut cookies with it? Go for it!

Suggestions for Sides:

Once cooled, these cookies have a solid texture, making them perfect for making ice cream sandwiches. The food scoops make the cookies all come out basically the same size and shape, but you can also use a wide mouth mason jar lid to spin each cookie to make them perfectly round.

Tools that may make this recipe easier:

I find a Dutch Whisk to be the best for hand mixing doughs. I started using them to mix my sourdough loaves, but now I use it for most every dough that I make. Parchment paper is also a great way to make sure your cookies are sticking to the pan without adding more oil.

Heath Sourdough Cookies

A delightful sourdough cookie with chucked up Heath bars loaded with chocolate and English Toffee bits.

Chill time 2 hours

Ingredients

  • 1 cup Butter melted
  • ¾ cup White Sugar
  • ¾ cup Brown Sugar
  • cup Sourdough Discard
  • 2 Eggs
  • 1 tbsp Vanilla Extract
  • 1 tsp Baking Soda
  • 1 tsp Salt
  • cups Flour
  • 2 cups Crushed Heath bar

Instructions

  • Combine eggs, sourdough discard, sugars and vanilla extract in a large bowl. Stream in melted butter while continuously whisking to fully incorporate.
  • Next add the flour, salt and baking soda. Again, whisk until full combined.
  • Now fold in heath bar pieces.
  • Cover bowl and place in refrigerator for at least 30 minutes (up to 24 hours) **At least 2 hours is ideal.
  • Preheat oven to 375degF.
  • Use a food scoop to portion out cookies onto a parchment covered baking sheet. Bake for 12-14 minutes (should be slightly golden on top). Remove from the oven and then remove cookies to the cooling rack. Repeat until all of the dough is baked.
