Meatloaf is a quintessential, classic comfort food. There is just something that feels like home when you bring a meatloaf to the table. But let’s be honest, sometimes it can be a little bit boring. That’s why I’ve played around and tweaked that classic meatloaf recipe to turned it into a show stopping Smoked Meatloaf that you are going to be talking about all week long.

As I always say – yes, having a true smoker like a Traeger Pellet grill will make this dish that much better. But you don’t have to have the fancy equipment. You can turn any grill into a smoker with just a little fire safe box and some wood chunks. You will have to adjust your cooking times to your methods. The end goal is to have the center of the center (so only push the meat thermometer halfway into the center of the meatloaf) to at least 160degF.

You may have seen my recipe for Smoked Mac & Cheese – which I mentioned goes so well with this smoked meatloaf, and I’m gonna say that again! They are a match made in heaven. I’ve had multiple requests to repeat this whole meal. You could add in some sort of vegetable to lighten things up – like a simple steamed broccoli or green beans.

Equipment

  • 1 9×9 Aluminum Baking Dish

Ingredients

  • 1 cup Milk
  • 2 Eggs beaten
  • 1 tbsp Dijon Mustard
  • 1 tbsp Ketchup
  • 1 tbsp Worcestershire Sauce
  • 2 lb Ground Beef
  • 1 lb Ground Pork
  • 1 cup Bread Crumbs
  • 2 tbsp Dried Minced Onion
  • 1 tsp Salt
  • 1 tsp Pepper
  • 2 tsp Paprika
  • 2 tsp Garlic Powder
  • 1 tsp Parsley
Get Recipe Ingredients

Instructions

  • Preheat smoker to 225degF.
  • In a large mixing bowl, combine milk, eggs, mustard, ketchup, Worcestershire
  • Then add beef, pork, bread crumbs and seasonings. Use hands to thoroughly combine.
  • Transfer mixture to a 9×9 aluminum baking dish Press meat mixture into baking dish evenly. Cover with foil and place in smoker for 2 and half hours.
  • Remove from smoker and let sit for about 10 minutes before cutting into squares for serving.

Stuffed Crust Pizza

Pizza Night is one of my family’s favorite dinner events. We have one most weeks, and not just on Friday. Once I learned how easy it could be to make pizza dough from scratch, I never turned back. Homemade pizza is one of my “always on hand” dishes because all you really need is flour, yeast, tomato puree, and cheese. The seasonings are all things that should be in your pantry all the time. Every so often, I like to add that something extra and make a Stuffed Crust pizza as a special meal, and it’s easier than you think.

While some might disagree with me… string cheese is the perfect cheese for stuffed crust. But honestly, it’s already the shape you need it to be, and when you cut it into chunks, you can make it perfectly round out a pizza pie. Most String Cheese is just mozzarella cheese anyway, so trust me when I say it works. That said, you can use the swirl cheese or the Colby jack style too for a little different twist.

I sprinkled the crust with just some Italian seasoning, but you could add some grated parmesan, too. I have included my recipe for Italian seasoning at the bottom of this post, but you can also use your favorite pre-made blend. It is important that you either brush or spray your crust with oil before you sprinkle so that it sticks better.

This specific recipe is for a classic pepperoni pizza. A simple red sauce that is so easy to just stir up. You can change up the toppings as you see fit and still use the stuffed crust dough. You can also use this same dough to just make regular pizza crust. You just need to leave it a little bit thicker.

Stuffed Crust Pizza

A delicious stuffed crust pizza, with your favorite classic pizza toppings. (Makes 2 12inch by 17inch rectangle pizza crusts or 2 14inch round pizza crusts)

Prep Time 5 minutes
Cook Time 30 minutes
Rising Time 1 hour

Ingredients

  • 4 sticks String Cheese mozzarella, cut into thirds
  • 4 oz Pepperoni
  • 2 cups Mozzarella Cheese
  • 1 cup Cheddar Cheese
  • 1 tbsp Italian Seasoning

For the Dough

  • 2 tbsp Yeast instant
  • cup Warm Water
  • 2 tbsp Sugar
  • 2 tsp Salt
  • cup Oil
  • cups Flour

For the Sauce

  • 1 15oz can Tomato Puree
  • 1 tbsp honey
  • 1 tbsp Worcestershire
  • 1 tbsp Italian Seasoning
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 tsp Red Pepper Flakes
  • 2 tbsp Oil

Instructions

  • In a large bowl, combine warm water, and sugar until fully dissolved. Add yeast and let sit to activate for about 10 minutes. Yeast should become slightly foamy.
  • Add flour, salt and oil to activated yeast mixture. Stir together until a sticky dough forms. Cover with plastic wrap and allow to proof for about an hour (until dough has doubled in size)
  • Preheat oven to 425degF.
  • Once risen, split into two equal halves. Add one half of dough to floured surface and use a rolling pin to press out into ¼-in thick in the shape of the baking sheet, and over lapping by about one and half inches. Place dough on the baking pan. Place piece of string cheese around the edge of the pan, against the raised edge. Fold the excess dough over the top of the cheese and press slightly against.
  • Spray with cooking oil and bake for 10 minutes.
  • In a small bowl, add sauce ingredients and stir to combine.
  • Remove par-baked crust from oven and add half of sauce, 1 cup of mozzarella cheese, half of pepperoni, half of cheddar cheese. Brush cooking oil around crust and sprinkle with Italian seasoning. Repeat with second pizza crust.
  • Bake for 10-15 minutes longer. Let rest for 5 minutes before cutting.

Garlic Hummus

When it comes to dips and spreads, I like to make them myself whenever I can. That way I know exactly what’s in it. Hummus is a popular Middle Eastern dip or spread that is served very often with any meal that includes pita breads. There are a few different versions, based on the specific region the cuisine is from. This recipe for Garlic Hummus is one of the most basic versions – with lemon juice, garlic, olive oil, and tahini.

So what is tahini? Tahini is a paste that is made from a tedious but simple processing of sesame seeds. Various steps of soaking and separating the seeds to separate the different parts, followed by grinding the kernels into a paste results in tahini. Most of the time it’s made from hulled sesame seeds, but some times it can be made with unhulled. You can usually find tahini in the international or ethnic food aisle of the grocery.

Garlic Hummus

This dip is a great item to bring to a potluck or office party, as most everyone enjoys this garlicy nutty flavor of hummus. You can bring it along with a bag of pita chips or even cut whole pitas into triangles for spreading on. You can also take this base recipe and add lots of flavors to make it a little extra. Some ideas would be adding in some roasted red pepper, caramelized onion, feta or even kalamata olives. Do keep in mind that anything you add in to blitz with the chickpeas will dramatically chance the color of the final dip.

Garlic Hummus

Chickpeas vs Garbanzo beans – guess what – they really truly are the same legume with different names. Much like Bell Peppers and Capsicum are the same vegetable, items are named at different times and places of our world’s history. Specifically, chickpea is a derivative of the original Latin name for the legume. Garbanzo is the Spanish word for the legume itself.

Garlic Hummus

A creamy and flavorful, not to mention super simple, garlic hummus recipe.
Course Condiment, Dip, Spread
Cuisine American, Greek, Lebanese
Keyword chickpea, chickpeas, creamy garlic dressing, garbanzo beans, garlic hummus, hummus, lemon
Prep Time 10 minutes
Servings 2 cups

Equipment

Ingredients

  • 3 cans Chickpeas/Garbanzo Beans drained, liquid reserved
  • 2 Lemons juiced & zested
  • 4 Garlic Cloves
  • 1 tsp Salt
  • 1 tsp Onion Powder
  • ¼ cup Tahini
  • ½ cup Olive Oil plus extra for serving

Instructions

  • Add chickpeas, lemon juice, lemon zest, garlic cloves, salt and onion powder to a food processor. Blitz on medium until mostly smooth (about 3 minutes). NOTE: Save a spoonful of chickpeas out for presentation.
  • Drizzle oil into the mixture while blitzing on low. Continue to blitz until it is at your desired consistency.
  • Transfer to a serving bowl and drizzle with extra oil and top with the chickpeas you saved out.

What’s been going on at Homemade on a Weeknight?

Well my fear that adding roosters to our flock would negatively impact our egg production was sorely misplaced. I had done some research and been a little leery, as many people say that the roosters can cause stress and impact the number of eggs your hens will put out. I can’t say if it’s in weather, environment or increase in veggie scraps (we have been much more diligent about making sure our food scraps go to the chickens since moving to a place where we have to haul our own rubbish). But I can say that we have has hens lay that hadn’t laid in months (even before the move), and the eggs are stronger and yolks dark in the recent weeks. We are also getting many more per day than we used. It has been a very happy and welcome change to be clear. We love having eggs on hand at any given time. I have been playing around with lots of eggs dishes – a Sausage and pepper quiche, breakfast in a burrito, egg fried rice and lots of breakfast sandwiches have been had. When life is in full swing and you have work and school and activities and work and school and gardening and baking and work and school…..you need simple meals that still taste great. One pan meals are always a great place to start when you are strapped for time. You can still be very creative and serve up a homecooked meal made with love to your family. I was craving some sort of BBQ but didn’t have time to be marinating meats, slow cooking things, or making lots of dishes all at once. So I put on my thinking cap and came up with this simple #onepandinner – BBQ Pasta & Sausage to satisfy the craving.

BBQ Pasta & Sausage

This dish is all about the seasonings used to give you the tastes of a great bbq sauce without just adding bbq sauce to pasta and smoked sausage. Chili Powder, Cumin and Mustard powder are the keys to a good bbq sauce. They bring you the little bit of smoky, the little bit of heat and the little bit of tang that you think of when you want good BBQ. Adding it to the sauce makes this more than just a pasta and sausage dish.

I used smoked sausage – like the kind that comes in the ropes. You can use that style or you can use links. The key is that you are using already cooked sausage that it’s going to crumble when you cook it. If it will crumble if you cook it after cutting it into chunks, then you should cook it whole first and then cut it up. You can use what ever kinds of sausage you want – beef, pork, chicken, turkey. You can also go for a spicier or flavored variety if that’s what you have or prefer.

A cheesy, creamy sausage and pasta #onepotmeal with smoky BBQ flavors

Prep Time 5 minutes
Cook Time 35 minutes

Ingredients

  • 2 tbsp Oil
  • ½ White Onion diced
  • 3 Garlic Cloves minced
  • 2 lb Smoked Sausage cut into chunks
  • 1 tsp Paprika
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 tsp Chili Powder
  • 1 tsp Cumin
  • 2 cups Beef Broth
  • 1 15oz can Tomato Puree
  • 1 tsp Ground Mustard
  • 1 tbsp Cornstarch
  • lb Elbow Macaroni or short pasta
  • 2 cups Sharp Cheddar Cheese shredded
  • 1 cup Heavy Cream

Instructions

  • In a large saute pan over medium-high heat, add oil, onion, and garlic. Saute for 3 minutes then add sausage chunks. Saute another 5 minutes.
  • In a bowl, combine broth, tomato puree, cornstarch, pasta and seasonings. Add to saute pan and reduce heat to medium. Bring just to a bubble then cover. Reduce heat to medium-low and let cook for 15 minutes.
  • Remove lid and stir in cheese and heavy cream. Replace lid and let cook another 5 minutes. Remove from heat and let sit for 5 minutes, then stir thoroughly before serving.

Smoked Mac & Cheese

There are so many many ways to make a fantastic mac & cheese. You can use different types of cheese, different types of pasta and different methods of cooking. To make this Smoked Mac & Cheese, we will use the classic style of mac and cheese and then put it in the smoker to take it up a few notches.

Smoked Mac & Cheese

The basic steps for making this mac & cheese are simple. Make rue into a creamy cheese sauce, then add it to cooked pasta. Then you transfer it to a foil 8×8 pan, add more cheese on top and cover with foil. When you place the tray into the smoker and let the cheesy sauce soak up all that smokey flavor, you are going to be thrilled with the final result. This is an excellent side dish for a long smoked meat – like a pork butt, ribs or even a tri-tip. It is so easy to just add the pan to the smoker in the last hours of the cook time.

For this recipe, I kept it basic with medium and sharp cheddar cheese. If you want to take things a step further you can us some gouda, or provolone or mozzarella. Once important thing to note when smoking cheeses is to stay away from funky or stinky cheese. When you smoke those sorts of cheese, they can turn rather bitter or take on an acrid quality that can make the smoky quality overpowering. Using milder cheeses will allow for a smooth smoke flavor.

You will notice in the recipe, it is listed to let the pan rest with the foil on it for several minutes. The purpose for this is to allow the cheese that may have attached to the foil to fall back onto the pasta. This way you don’t lose those extra cheesy bits that really make this side dish. When it comes to what to serve this with, there are lots of things that it will be so good with Most recently, I made this as the side for Smoked Meatloaf and it was such a great combo.

Smoked Mac & Cheese

A fantastic side dish for dinner or lunch with a creamy cheese sauce and loaded with smokey goodness

Ingredients

  • 1 lb Small Shells Pastas
  • 2 cups Cheddar Cheese shredded

For the Cheese Sauce

  • 4 tbsp Butter
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 4 tbsp Flour
  • 2 cups Milk
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 tsp Paprika
  • 1 tsp Ground Mustard
  • 1 cup Heavy Cream
  • 3 cups Sharp Cheddar Cheese shredded

Instructions

  • Start water boiling for the pasta. Preheat Smoker to 250degF.
  • Add pasta to boiling water and cook as directed on the package. Drain in a colander and return to pot away from heat.
  • In a sauce pan over medium high heat, add butter, onion powder and garlic powder. Once melted whisk in flour. Let cook for two minutes then whisk in milk and let cook for two minutes then whisk in seasonings and cook another two minutes. Whisk in heavy cream and cook another two minutes. Then add in sharp cheddar cheese, a handful at a time, whisking until it's melted in.
  • Add cheese sauce to pasta. and stir to thoroughly combine.
  • Transfer mac & cheese to a 9×9 smoker safe dish (foil) and sprinkle with cheddar cheese. Cover with a sheet of foil. Place in preheated smoker. Let smoke for 3 hours. Remove and let rest for 10 minutes before removing the foil to serve.

Spring has officially sprung, and I really wish someone would tell the thermometer since it’s still in the 40s during the day and into the 20s at night! I really want to get my garden planted, but until we are at our last frost, it’s just not smart. Have you been able to get your garden going for the year? My Best Crispy Fried Recipes

When it comes to crispy and fried recipes, I have got quite a few. I do love to make things that have a great crunch. A lot of the crunch comes from the dredging method. You can got for the three stage flour, egg wash, breading method. Or you can go for a wet soak into a flour/baking soda/cornstarch method. There are so many different ways to have a great crispy fried meal, and I have put together a few of my favorites!

My favorite Recipes Using Ground Turkey

A few key kitchen tools you may want to have to hand when it comes to making these shrimp recipes:

  1. Cooling Rack – When you are frying things, you need to be able to drain off the oil without losing the crispiness. Cooling racks allow this to happen by giving air flow a chance.
  2. Extra Long Tweezers – When you are frying things, you need to have a good set of tongs to make sure you can easily move around the frying pieces of food in the hot oil or butter. A set of extra long tweezers does less damage to the breading layer in the long run.
  3. Dredging Station – This set of trays really helps you to minimize the waste that happens by using larger plates. The taller sides of these trays also makes for less mess.

Chicken Fried Chicken Sandwich

Chicken Fried Chicken Sandwich – Crispy chicken sandwiches are always a great meal – for lunch or dinner. They are pretty simple to make and can have excellent results. For this particular chicken sandwich, I used my typical technique for making chicken fried steak and replaced the cube steak with a boneless skinless chicken thigh. The result is this fantastic Chicken Fried Chicken Sandwich, that your family is bound to request again and again.

Crunchy Shrimp Tacos

Crunchy Shrimp Tacos – Tacos are at the top of my favorite meals, not just to eat but to make. I have so much fun creating each of the components that it takes to make the best bite. These Crunchy Shrimp Tacos have layers of flavor from the fresh slaw, sriracha mayo, cojita cheese and of course the crunchy shrimp that have a little kick from some cayenne.

Crispy Pork Katsu

Crispy Pork Katsu – There are a number of delicious ways to enjoy a pork chop, but I think my very favorite just might be a Crispy Pork Katsu. It is a flattened boneless pork chop that is then panko crusted with the flavors of ginger and garlic. This recipe is a demonstration in seasoning every step of cooking. By adding flavor to each step of the dredging process, you get a tender and juicy pork chop.

Classic Orange Chicken

Classic Orange Chicken – Adding to my ever growing list of Chinese takeaway at home recipes, this recipe is a classic! This time around, I am tackling the crispy chicken coated in a delicious orange sauce with an Asian flair and little kick. Classic Orange chicken is a staple on almost any American Chinese food menu and going to be one you will want on your meal rotation for sure!

Fried Pork Sandwich

Fried Pork Sandwich – A few weeks ago, I was inspired by a fellow food blogger to make pickled mustard seeds. I didn’t even realize this was a thing outside of stone ground mustard. It was so super easy to make, it’s almost funny. But then I had to sort out how to use them. I have lots of ideas. But the first one I wanted to get to was this – Fried Pork Sandwich. It’s a breaded and crispy fried pork chop with marinated onions, cabbage, carrots and a special sauce all on a nice crispy baguette.

Crispy Shrimp Rolls

Crispy Shrimp Rolls – When you want to have a little bit of fun and little bit of indulgence with your dinner – shrimp is always a good idea, especially when it is crispy. This is also a great weekend dinner to enjoy in the backyard once summer hits. These Crispy Shrimp Rolls will have the whole family chowing down with delight.

Crispy Oven Fried Chicken

Crispy Oven-Fried Chicken – I know what you are thinking – Crispy and Oven-Fried sounds like an oxy-moron….but you would be wrong about this recipe. I have worked on this recipe for a while and I believe I finally nailed it! My Crispy Oven-Fried Chicken was a huge hit – my husband ate SEVEN pieces by the end of the night.

Classic Chicken Fried Steak

Classic Chicken Fried Steak – Whether it’s for breakfast or dinner, chicken fried steak is about as comforting as comfort food gets. The delicious crispy breading on a tenderized steak, fried up in some butter – dang I’m making myself hungry! If you have never tried a Classic Chicken Fried Steak before, you are in for a real treat with this recipe. Whether you are making this for Sunday supper or Saturday Brunch, it will be the star of the show.

Bacon Cheeseburger Chimichangas

Bacon Cheeseburger Chimichangas -Not every Burger Night needs to be a traditional burger. You can take the classic flavors of a good burger – cheese, bacon, fry sauce – and put them into a different “vessel” to change things up. Burgers are one of those meals that most everyone loves but they can get a bit repetitive if you make them the same every time. That’s where the idea for Bacon Cheeseburger Chimichangas came from. We wanted burgers but not.

Crispy Buffalo Chicken Wraps

Crispy Buffalo Chicken Wraps – Some times dinner just needs to be a wrap. It’s easy to make, easy to eat and easy to clean up from. You can turn lots of different things into a wrap or burrito or roll-up – whatever you prefer to call them. This particular wrap puts lots of veggies into a tortilla with some crunchy crispy chicken and kicks up the heat with the addition of spicy buffalo sauce. These easy to make Crispy Buffalo Chicken Wraps are a great idea for a a weeknight dinner.
