Ingredients
  

  • 2 tbsp Oil
  • ½ White Onion diced
  • 3 Garlic Cloves minced
  • 2 lb Smoked Sausage cut into chunks
  • 1 tsp Paprika
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 tsp Chili Powder
  • 1 tsp Cumin
  • 2 cups Beef Broth
  • 1 15oz can Tomato Puree
  • 1 tsp Ground Mustard
  • 1 tbsp Cornstarch
  • lb Elbow Macaroni or short pasta
  • 2 cups Sharp Cheddar Cheese shredded
  • 1 cup Heavy Cream

Instructions
 

  • In a large saute pan over medium-high heat, add oil, onion, and garlic. Saute for 3 minutes then add sausage chunks. Saute another 5 minutes.
  • In a bowl, combine broth, tomato puree, cornstarch, pasta and seasonings. Add to saute pan and reduce heat to medium. Bring just to a bubble then cover. Reduce heat to medium-low and let cook for 15 minutes.
  • Remove lid and stir in cheese and heavy cream. Replace lid and let cook another 5 minutes. Remove from heat and let sit for 5 minutes, then stir thoroughly before serving.
