A Dozen Recipes Using Rice #RecipeCollection

Did you know Rice is the single most consumed grain in the world? So of course there are lots of recipes from every type of cuisine that focus on rice. I typically  make at least meal a week centered on rice. It works with all of the proteins – including just adding beans for a vegetarian option. In an effort to help you try lots of different rice recipes, I have put together A Dozen Recipes Using Rice for you to check out.

A few key kitchen tools you may want to have to hand when it comes to making these Rice Centered Recipes:

  1. 13×9 Baking Dish – using a glass baking dish for the casseroles in the collection is ideal. You get the perfect size vessel to be spred out enough to bake evenly and cook through.
  2. Everyday Pan with a Lid – you will need a 12-14inch pan to make the one pan recipes on this list.
  3. Flat Bamboo Spatula – whenever I am browning rice I prefer to use a flat spatula to move the rice around while it’s cooking. It just makes it easier to insure it doesn’t burn.

Elote Chicken & Rice

Elote Chicken & Rice – I was scrolling my Instagram feed (check me out @homemadeonaweeknight) and some how ended up down a rabbit hole of Elote creations that had me drooling. While I could certainly just make elote as a side for with some tacos or something, I wanted to try use the flavor profiles and turn it into it’s own meal. That resulted in this Elote Chicken & Rice and it was such a win!

Pepper Jack Chicken & Rice

Pepper Jack Chicken & Rice – Chicken & Rice is such a great place to start when making homecooked meals on a Weeknight. You can go in so many directions with just a few added ingredients. This recipe gets a little spicy and smoky with the addition of pepperjack cheese and crispy bacon. Pepper Jack Chicken & Rice is a hearty and complete dinner that you and your family are going to really enjoy.

Cheesy Chicken Beans & Rice

Cheesy Chicken Beans & rice – Beans & Rice is a great starting point for a weeknight dinner. You can work it into so many different types of cuisines depending on the types of beans, rice and or seasoning you add to the mix. For this fun one pan meal, it takes a turn to a Mexican flavor profile by adding in some green chilies and pinto beans. Cheesy Chicken Beans & Rice is an easy to make and hearty weeknight meal.

I decided to go down the Asian adjacent path and make my version of the honey chicken with this simple honey sauce. Honey Chicken Rice Bowls is a quick meal, perfect for weeknights, that is great for getting a well balanced meal in with minimal effort. Broccoli and bell peppers are probably the two most loved vegetables in my house – all 6 of us love them – so I do cook with them often. Which made this weeknight creation a new staple on our menu rotation.

This one pot Mexican Beef & Rice is so easy to put together and you probably have most of the staple ingredients in your kitchen already. It is also a very hearty meal that is sure to fill everyone up! By cooking this all in one pan, you get so much flavor developed in a short cook time, and less mess to clean up after.

What Did You Read This Month? Book Review Link-up #19

Welcome to the Monthly Book Report and Book Review Link-up #19 – February 2026!

On the First Wednesday of each month I will be sharing my latest read – which could be a cookbook, a celebrity chef biography or memoir, a lifestyle book, a gardening book, a homemaking book or maybe even a cozy kitchen mystery book. They may be paper books, eBooks, or audio books. I have challenged myself to read or listen to at least one book per week, and I plan to share that with you all here.

My Review:

I was really unsure when I decided to download this book into my kindle app. But wow was I impressed with the content. It truly is a rare look into the real lives of these chefs that we see on TV and on so many cookbooks. I really enjoyed the banter of the interview, its just an accounting of their conversations. I was also very inspired by the intriguing ingredients that were found in the Chefs’ Fridges.

My Review:

This cookbook is loaded with so many pieces of education with gorgeous photos. And the cookbook has way more than just Ramen recipes which make it possible to have the entire Ramen shop experience right in your own kitchen.

Baked Meatball Subs

I love a good sandwich for dinner. Hot sandwiches are easy to eat and make too. These Baked Meatballs Subs give you all the joys of a good deli sandwich right from your home kitchen. By using three types of cheese you get a little extra pizzazz for very little effort. I’ve included my recipes for meatballs and red sauce – which you could use in lots of different recipes too.

This recipe may seem to have have a few extra steps but please dont skip any. The step of toasting the rolls before adding the meatballs and sauce makes sure things don’t get all soggy before it even makes it to the plate.

Substitutes and Variations:

If you are inclined to use frozen meatballs and/or jarred red sauce – go for it. I will say use the smaller meatballs (roughly one inch diameter) so they are easy to put in the rolls. You can also go all mozzarella cheese if you don’t want the Provolone.

Suggestions for Sides:

A good salad is great on the side of these subs. You could also do some parmesan herb fries. Just cook the fries as directed on the package. Then melt 4 tablespoons of butter and mix in ½ cup grated parmesan, 1 tbsp Italian seasoning, 1 tsp garlic powder and 1 tsp onion powder. Right when the fries come out of the oven transfer them to bowl and drizzle the butter mix over the top. Toss to evenly coat.

Tools that may make this recipe easier:

Please use the parchment paper inside your 13×9 baking dish. You will thank me when it comes time for whomever is doing the dishes and they only have to toss the paper and rinse the dish. If you bake it directly in the dish, the sauce and cheese becomes a bit of a nightmare. It also makes serving so much easier as the subs aren’t sticking to the dish so they don’t risk getting ripped.

Delicious homemade meatballs in a classic red sauce on a crusty deli roll, covered in three melty cheeses
Course Dinner, Main Course
Cuisine American
Keyword beef meatballs, grated parmesan, meatball sub, meatballs, mozzarella cheese, provolone, red sauce
Prep Time 10 minutes
Cook Time 45 minutes
Servings 6

Ingredients

  • 6 Crusty Deli Rolls split
  • 6 slices Provolone Cheese cut in half
  • 2 cups Mozzarella Cheese shredded
  • ½ cup Parmesan Cheese grated
  • 1 tbsp Italian Seasoning
  • Cooking Spray

For the Red Sauce

  • 2 15oz can Tomato Purees
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 tsp Pepper
  • 1 tsp Paprika
  • 1 tbsp Dried Parsley
  • 1 tbsp Worcestershire Sauce
  • 1 tbsp Honey

For the Meatballs

  • lb Ground Beef
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 tsp Paprika
  • 1 tsp Dried Basil
  • 1 cup Grated Parmesan
  • 1 cup Breadcrumbs
  • 1 tbsp Worcestershire Sauce
Get Recipe Ingredients

Instructions

  • Preheat oven to 425degF.
  • Combine meatball ingredients in a large mixing bowl. Using a 1inch scoop, portion meat mixtures into balls. Roll between your hands to make round. Place on baking rack over a parchment paper covered baking sheet. Bake in oven for 20 minutes.
  • Add ingredients for red sauce to a sauce pan over medium high heat. Bring just to a bubble, and then reduce to a simmer.
  • Remove meatballs from the baking sheet and add to the red sauce. Continue to simmer
  • Add split rolls to a parchment paper lined 13×9 baking dish. Spray over with cooking spray and then add two halves of provolone to the center of each roll. Place in oven for 8 minutes.
  • Remove rolls from oven. Add 5-6 meatballs with some sauce to each roll. Add a portion of mozzarella cheese. Then sprinkle with parmesan cheese and then Italian seasoning. Return to the oven for 10-12 minutes or until golden brown on top. Serve right away.

Simple Grilled Garlic Chicken

Having lots of ways to prepare chicken is a big part of homemade weeknight cooking. This particular chicken recipe works for lots of different preparations – hot and cold. Simple Grilled Garlic Chicken gets most of its flavor from the marinade and then gets amplified by the grilling. You can put this on pasta, over rice, in a sandwich or wrap or over a salad.

You can use chicken breast cut into strips or chicken tenderloins for this recipe.  I prefer the tenders but I know its hard to come by enough tenders when you dont raise your own meat chickens. Not all grocers stock just tenders, but most can get you a package of them if you request it.

Substitutes and Variations:

As I’ve said you can use chicken breast or  tenderloins for this recipe. You can also use boneless skinless thigh meat as well. If you want to add a more Italian flair add some basil and oregano to the seasoning mix. If you want it to have a more Mexican flavor, add some cumin and chili powder.

Suggestions for Sides:

This is so good with my Garlic Herb Angel Hair Pasta. It is also really good over a parmesan rice or couscous. You can put it over a salad, in a taco or wrap.

If you do not have a grill pan in your selection of pans at home – I strongly encourage you to get one. I use mine all the time for all sorts of things. The raised grills line give a unique cooking experience.

Simple Grilled Garlic Chicken

A classic and flavorful recipe for grilled garlic chicken perfect for pasta, rice dishes, wraps or sandwiches.

Equipment

Ingredients

  • 2 lb Chicken Breast cut into 1-inch strips (or the tenders)
  • ½ cup Olive Oil
  • 1 tbsp Garlic Powder
  • 1 tbsp Dried Parsley
  • 1 tsp Onion Powder
  • 1 tsp Paprika
  • 1 tsp Salt
  • 1 tsp Pepper
Get Recipe Ingredients

Instructions

  • Combine all ingredients in a bowl and toss to coat evenly. Cover and place in refrigerator for at least an hour.
  • Using a Grill: Heat grill to highest heat. If grill grates opening are wider than the strips of chicken, use a mesh grill pan or foil to prevent falling through. Add chicken, one a time to the grill. Once you get them all on the grill, wait four minutes then start flipping each over. Again wait four minutes and remove from heat. (Use a meat thermometer to make sure the thickest part has reached 165degF)
  • Using a Grill Pan: Heat pan to high. You will have to grill the chicken in batches. Start adding the chicken one at a time to the pan. Once the pan in full, wait five minutes then go back to the start and flip each piece. Wait another five minutes and remove from heat. (Use a meat thermometer to make sure the thickest part has reached 165degF)
  • If serving in a hot/warm preparation, keep warm on a platter in cold oven.
  • If serving in a cool/cold preparation, you can bring down to room temp on the counter than transfer to a container and place in the refrigerator.

My favorite part of French bread pizza is the crispy edge of the outer crust. When you make them out of a whole bit loaf of French bread, only some of you get to have that crunchy bite. So I decided to give everyone the whole experience by making them individually. These Individual French Bread Pizzas are so easy to make, you will definitely want to add them to your menu rotation.

These pizzas can work for an easy weeknight dinner but also for a weekend lunch or even as an appetizer or finger food at the your next get together- like the big game. They keep quite nicely and can be reheated as well.

Substitutes and Variations:

You can make this recipe slightly faster and/or simpler by using a jarred pasta sauce or pizza sauce. Also if you make your red sauce differently than I, then by all means use your version. I kept it simple with just cheese and pepperoni toppings. You can fo others – bacon, ham, sausage. I would caution against “wet” toppings like mushrooms and peppers as they can cause things to get very soggy.

Suggestions for Sides:

This is great with a salad on this side. I like to go for a romaine base, with some shredded carrots, chunked cucumber, thin sliced red onion, croutons, cherry tomatoes and ranch. These little pizzas would also go very well with some chicken wings!

The key to even toasting of the bread is a baking rack over the baking sheet. I know I harp on this but its absolutely true that giving just the little bit of space between the flat surface of the pan and the underside of the bread will give you a nice crispy bottom.

Individual French Bread Pizzas

Fun personal pizzas made on bread with an easy red sauce, pepperoni and cheese.

Prep Time 10 minutes
Cook Time 20 minutes
Proofing Time 1 hour
Servings 6

Ingredients

  • 6 Crusty Deli Rolls sliced in half
  • 6 oz Pepperoni Slices
  • 2 cup Mozzarella Cheese shredded
  • ½ cup Grated Parmesan
  • 4 tbsp Butter melted
  • 1 tsp Garlic Powder
  • 1 tsp Parsley
  • 1 tsp Onion Powder
  • 1 tsp Italian Seasoning

For the Sauce

  • 1 15 oz Tomato Puree
  • 1 tbsp Honey
  • 1 tsp Worcestershire Sauce
  • 1 tsp Italian Seasoning
  • 1 tsp Garlic Powder
  • 1 tsp Dried Onion
  • 1 tsp Red Pepper Flakes

Instructions

  • Preheat Oven to 425degF
  • In a sauce pan over medium heat, add ingredients for the sauce. Stir to combine and cook for 5 minutes. Reduce to low and let simmer.
  • In a separate bowl, add melted butter, garlic powder, parsley and onion powder.
  • Lay split rolls (inside up) out on a baking rack over a parchment paper covered baking sheet. Brush each with the seasoned melted butter mix. Place in oven for 8 minutes.
  • Removed tossed rolls from oven and spoon red sauce onto each. Add a portion of mozzarella cheese, then 4-5 slices of pepperoni. Add another small portion of mozzarella cheese, sprinkle with parmesan cheese and then Italian seasoning. Return baking sheet to the oven for 10-12 minutes (until tops are golden brown).

Well its not much yet but we finally got some snow! Its been in the negatives for several days now. So lots of our energy is put into keeping everyone warm – the kids and the animals and especially the water tanks! The chickens woke up not thrilled by the significant landscape change but they will survive.
