With 2026 in full swing, I wanted to take a moment to look back on 2025 and share with you the Ten Most Popular Recipes of 2025 here on Homemade on a Weeknight. I am counting down the ten posts that got the most views over the last year. So make sure that you scroll all the way down to end of this post for the number one most viewed recipe post!

#10 – Cowboy Pasta

Sometimes I just ask my hubs to pick one ingredient to inspire me for dinner ideas. This was one of those times. I had already settled on a pasta dish but I couldn’t decide which direction to go other than that I didn’t want red sauce. So I asked and he delivered Ground Beef. The gears started turning and Cowboy Pasta was the tasty tasty result. A homemade Mac & Cheese loaded up with beef, bacon, jalapenos, tomatoes and corn!

In our house we have basically 3 meats on constant rotation – Chicken, Beef and Pork. And I love to utilize the ground versions of each. We definitely use other types of meat like turkey and seafood, but not as often. So for this Recipe Collection, I want to share with you my favorite Ground Pork recipes. Ground pork is such a great canvas for so many different cuisines. I hope you find a few on this list to add to your rotation.

Making my own spice blends has been a hobby of mine for some time. I really like to play around with different flavors and see how they come together. I also really like to be able to control the amount of salt, fillers and other preservatives that go into the spice blends I use in cooking. Recently I have been trying to make my own deli meats so that we have what we want to hand. In the process of that endeavor I have come up with a really great Roast Beef Spice Blend that works for making deli style meat or a Sunday Supper centerpiece.

Some times dinner just needs to be a wrap. It’s easy to make, easy to eat and easy to clean up from. You can turn lots of different things into a wrap or burrito or roll-up – whatever you prefer to call them. This particular wrap puts lots of veggies into a tortilla with some crunchy crispy chicken and kicks up the heat with the addition of spicy buffalo sauce. These easy to make Crispy Buffalo Chicken Wraps are a great idea for a a weeknight dinner.

Called the true authentic enchilada sauce, Mexican Gravy is a delicious sauce that’s got a smoky, spicy flavor. It is perfect for Enchiladas (like my Beef Enchiladas) but also so good for nachos too (like my Chicken Sheet Pan Nachos). You are going to want to save this sauce recipe for all sorts of dishes!

Sometimes you need that show stopping main event for your meal. Whether it’s a Sunday Supper or just a weeknight that you happen to have a bit of extra prep time – this Roasted Garlic Chuck Roast recipe is going to make it look like you have spent hours making a meal when really it was about 15 minutes. The great thing about this meal is that it’s totally budget friendly. Chuck Roast is a pretty inexpensive cut of beef that can easily feed the whole family.

Sometimes a meal calls for an appetizer. Or, like we do at our house, need an idea for your next Appetizer Night! These Simple Cheese Straws are the perfect addition to any appetizer menu. They are light and flaky while still being cheesy. And the best part – they take only a few minutes to make and few more minutes to bake! That makes them great along side a dinner when you want something more than just garlic bread.

#3 – Quick Breakfast Wraps

Not everything named Breakfast has to be served at breakfast time. We have breakfast for lunch or dinner quite frequently. These Quick Breakfast Wraps are perfect for any meal of the day, super easy to make and a great on the go recipe. They are also really great for camping or to make ahead.

#2 – Smoked Sausage & Mozzarella Pasta

Need a simple but flavor packed weeknight meal? Then you came to the right post. You can think of this like an adult version of hot dogs with mac and cheese. By replacing the hot dogs with smoked sausage and the cheddar with mozzarella. Then add in a little kick from some red pepper flakes. This recipe for Smoked Sausage & Mozzarella Pasta is going to make your average weeknight a little bit extra special.

Blackstone Cowboy Stir-Fry

#1 – Blackstone Cowboy Stir-Fry

I don’t usually make recipes that require a super specialized piece of cooking equipment (except maybe slow cookers), but I am so in love with my Blackstone griddle, I can’t help it. For the most part the other things I have made thus far can be made on the stove top, however this Blackstone Cowboy Stir-Fry really does the need the wide open flat space of the griddle. It is a total game changer for making meals like this for the whole family at once. By the by – this is not an ad for Blackstone products at all – my hubs got me one for my birthday this year and I just love it so very much.

Italian Herb Shrimp

If you love a simple quick but flavor packed protein for your easy pasta dishes or maybe a salad – then this recipe for Italian Herb Shrimp is for you. The quick marinade of this shrimp gives you such juicy tender shrimps, you are going to want to make them over and over. These could also be served cold as an appetizer, if you need something quick.

Italian Herb Shrimp

I almost always prefer to serve tail-off, peeled shrimp. The messy hassle of peeling or removing the tails while eating does not appeal to me. That said, if the method you plan to serve these would work better with the tail on, then go ahead and leave it. But I would advise against using Shrimps with the peel on because they will not get as much flavor on them.

Substitutes and Variations:

If you wanted to add a punch of heat, you could add in a bit of crushed red pepper flakes to the seasoning blend. You could opt for fresh herbs, but be sure to chop them up very fine so that you do not end up with big leaves on your shrimp.

Suggestions for Sides:

This shrimp is quite good over a nice plate of Fettuccine Alfredo. You could also fix some broccoli in as well. Alternatively you could add this to a Caesar salad or even a flatbread pizza.

A grill pan is a great tool for every home cook. When the weather isn’t conducive to grilling outdoors or if you just don’t  have time to get the grill up and running, a grill pan gives you the same effect.

Italian Herb Shrimp

A classic and flavorful recipe for Italian Herb shrimp, perfect for your pasta dishes.
Course Main Course

Prep Time 5 minutes
Cook Time 15 minutes
Marinating Time 1 hour

Equipment

Ingredients

  • 3 lb Jumbo Shrimp deveined, peeled, tails-off
  • ½ cup Olive Oil
  • 1 tbsp Garlic Powder
  • ½ tbsp Dried Basil
  • ½ tbsp Dried Oregano
  • ½ tbsp Dried Thyme
  • ½ tbsp Dried Parsley
  • 1 tsp Onion Powder
  • 1 tsp Salt
  • 1 tsp Pepper
Get Recipe Ingredients

Instructions

  • Combine all ingredients in a bowl and toss to coat evenly. Cover and place in refrigerator for at least an hour.
  • Using a Grill: Heat grill to highest heat. If grill grates opening are wider than shrimp, use a mesh grill pan or foil to prevent falling through. Add shrimp, one a time to the grill. Once you get them all on the grill, wait two minutes then start flipping each over. Again wait two minutes and remove from heat once opaque.
  • Using a Grill Pan: Heat pan to high. You will have to grill the shrimp in batches. Start adding the shrimp one at a time to the pan. Once the pan in full, wait 3 minutes then go back to the start and flip each shrimp. Wait another three minutes and remove from heat once opaque.
  • If serving in a hot/warm preparation, keep warm on a platter in cold oven.
  • If serving in a cool/cold preparation, you can bring down to room temp on the counter than transfer to a container and place in the refrigerator.

Such a busy week full of so much wind! We had 20-30mph gusts almost all week. At times you looked outside and couldn’t see 20 ft because the dust was so thick. Had to do repairs to a number of items on the property that just got battered by the winds. We all came out of it ok but it was brutal.

Chipotle Spaghetti

Spaghetti is a staple in most family kitchens. Everyone has their own version of the meaty red sauce over Spaghetti noodles. For this version I’ve taken things a little south of the border with some Chipotle, Cumin and Cilantro making an appearance in the meaty red sauce. We really enjoyed the smoky heat of this Chipotle Spaghetti. And it is a great way to sneak in some extra veggies without anyone really noticing.

Chipotle Spaghetti

Typically you can find the Chipotle in Adobo in the Hispanic or ethnic food aisle of your grocery store. Its usually near the diced green chilies and enchiladas sauces. If you do not want to use the whole can, you can put the leftover in a freezer bag and place it in the freezer. It will save just fine that way.

Substitutes and Variations:

Just like most spaghetti sauce recipes, you can swap out the ground beef for just about any other ground meat – pork, turkey, chicken, venison. Just keep in mind the fat content. If you use poultry or venison, you will need to add a tablespoon or two of oil to saute the veggies in.

Suggestions for Sides:

Spaghetti is always a hearty meal, so sides are always needed. But if you want to lean into the tex-mex flavors you could do a southwest style salad. I also think a simple cheese quesadillas would be nice with this too.

Really don’t need any special tools or equipment for this. It is essentially just regular spaghetti with slightly different seasonings.

Chipotle Spaghetti

Not your average spaghetti – more veggies and hit of smoky heat from chipotle peppers!
Course Dinner, Main Course
Cuisine American, Tex-Mex
Keyword bell peppers, carrot cake, chipotle, chipotle beef, chipotle in adobo, ground beef, ground beef recipes, spaghetti
Prep Time 10 minutes
Cook Time 45 minutes

Ingredients

  • 2 lb Ground Beef
  • 1 Large Red Bell Pepper small diced
  • 3 Celery Stacks small diced
  • 3 Garlic Cloves minced
  • ½ Medium Yellow Onion minced
  • 2 Medium Carrots grated
  • 1 7oz can Chipotle in Adobo small diced
  • 2 28oz can Crushed Tomatoes
  • 1 cup Water
  • 1 tbsp Mexican Oregano
  • ½ tbsp Cumin
  • 1 tsp Paprika
  • 1 tsp Dried Cilantro
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 1 tbsp Honey
  • lb Spaghetti Noodles
  • Cojita Cheese crumbled, for garnish
  • Cilantro sprigs, for garnish
Get Recipe Ingredients

Instructions

  • In a large saute pan over medium high heat, add ground beef. Cook and crumble until no longer pink. Push meat to one side of pan drain fat to the other side of the pan. Add onions, celery, carrots, garlic and red bell pepper to fat and toss. Saute, separated, for five minutes.
  • Combine vegetables with ground beef then add crushed tomatoes along with one cup of water. Add seasonings and honey. Stir to combine and reduce heat to medium low. Stir occasionally.
  • Start water boiling for pasta. Salt, if desired.
  • Add pasta to the boiling and cook as directed on package. Drain and return to the pot. Add half of the chipolte sauce to the pasta and toss to coat.
  • Add a portion of sauced pasta to a shallow pasta bowl. Then add a ladle full of sauce to the top. Sprinkle with cojita and cilantro.

Pepperoni Pretzel Bites

If you need a fun finger food or simple snack – and you love everything pizza – then you need these Pepperoni Pretzel Bites. With just a few ingredients you have got a simple snack for enjoying right away or popping into your lunch sack for later. These did not even make it to the next day in my house but I know I will be making them for the summer pool time.

If you like seasoned pretzels, you are going to want to make some extra parmesan herb pretzels from this recipe! You can just put the extra pretzels right on the parchment paper covered baking sheet and bake in a 425degF oven for 15 minutes. Let them cool on the tray for 15 minutes then you put them in a zipper bag for munching on.

Substitutes and Variations:

I used regular cheese Curds but you can totally play with the flavored varieties. I have seen ranch Curds that I want to try and maybe even the Dill pickle variety! You could also go with some spicy options too. If you want to go mozzarella – you could slice cheese sticks into ½ coins and use those instead. But I suggest baking a little longer if you use mozzarella.

Suggestions for Sides:

So you can eat these on their own for sure. A dip in some Homemade Ranch is definitely a good idea too. And of course, some simple marinara sauce would work too.

There really are not any special tools you need. I highly recommend using parchment paper. Not just for the easy clean up factor. But so that you don’t lose all that cheesy goodness if it gets stuck to the baking sheet.

Ingredients

  • 24 Pepperoni Slices
  • 24 Cheese curds
  • 24 Pretzel Twists
  • ½ cup Olive Oil
  • 1 tbsp Italian Seasoning
  • 1 tbsp Grated Parmesan Cheese
  • ½ tsp Granulated Garlic
  • ½ tsp Granulated Onion

Instructions

  • Preheat oven to 425degF.
  • Add oil, parmesan cheese, seasoning and pretzels to a zippered bag. And vigorously shake to evenly coat.
  • Cover a baking sheet with parchment paper. Line out pepperoni evenly spaced on the sheet. Top each with a cheese curd (which shouldn't be bigger than the pepperoni slice, so break if needed). Then carefully place the coated pretzel on top (it can be at an angle, it will lay flat as the cheese melts.
  • Carefully place the baking sheet in the oven and bake for 8-10 minutes (or until cheese is melted fully).
  • Allow to rest for at least 10 minutes on the tray before enjoying. Store in an airtight container for up to 5 days.

What’s been going on at Homemade on a Weeknight?

I hope that everyone’s new year is off to a great start. I have been working on lots of fun little projects around the homestead. One of our bigger goals is to add more livestock to our land. We hope to bring in two bee hives, two groups of Quail (one for meat and one for eggs) and a small herd of Icelandic sheep (which will be for milk, meat and fiber). Do you have any experience with any of these animals? What is your best piece of advice?

Cookbooks I Found on Amazon – #2

This might sound weird, but I know I’m not the only one…I read cookbooks like novels. I love to read them cover to cover. You can learn many little things from different kitchens, cooks, chefs, and cultures from around the world. Well written cookbooks flow like a story. They start with a good foundation of learning about the author and chef of the book. They give you some ground rules about techniques that are used throughout the recipes. My bookshelves are loaded with cookbooks from all over the world – from celebrity chefs to self-published home cooks, like myself. Red Potatoes with Cream Sauce

Potatoes makes such a great side dish. But sometimes you want something other than some regular ol mashed potatoes, even if they have gravy. I love to make these Red Potatoes with Cream Sauce for a nice alternative. They have a silky texture and loads of flavor. Plus they are really easy to make alongside any main dish.

While this cream sauce will work fine over some russets or Yukon potatoes, it is best over the red potatoes. The slightly more waxy quality of the red potato helps them to keep their shape when the cream sauce is added.

Substitutes and Variations:

If you want a deeper garlic flavor, you can crush a few fresh cloves of garlic and let them steep in the cream sauce. Just be sure to fish them out before pouring it over the potatoes. The parsley is mostly for the anesthetic of the dish. While parsley is always a nice addition to dishes – it mostly just works to enhance the existing flavors of something- it is not necessary.

Suggestions for Sides:

This is excellent with a holiday ham or prime rib roast. Its also great with some grilled chicken breast or simple pork chops.

Tools that may make this recipe easier:

No real special tools needed to make this easy potato side dish. A knife and whisk are the only real items of note.

Red Potatoes with Cream Sauce

A velvety garlic cream sauce served over soft rustic potatoes

Ingredients

  • 3 lb Red Potatoes quartered
  • 1 tbsp Parsley

For the Cream Sauce

  • 3 cups Whole Milk
  • 2 tbsp Cornstarch
  • 1 tbsp Chicken Boullien
  • 1 tbsp Garlic Powder
  • 1 tsp Salt
  • 1 tsp Onion Powder
  • ½ tsp White Pepper
Get Recipe Ingredients

Instructions

  • Bring a large pot of water to a boil (salt, if desired), Add quartered potatoes and continue to boil until fork tender.
  • Whisk together the sauce ingredients then add to sauce pan over medium heat. Continue to whisk occasionally as the sauce thickens. Reduce heat to low and let simmer until potatoes are ready.
  • Gently drain potatoes then transfer to serving bowl. Pour cream sauce over top of potatoes and gently fold potatoes until evenly coated with sauce. Sprinkle with parsley.
