What’s been going on at Homemade on a Weeknight?

Our summer is off to an interesting start! I’m wrapping up things in the elementary school kitchen and will get a brief break before starting as the manager of our local community pool for the summer. Things are really starting to blossom and grow on our budding homestead. We’ve got our grown layers, our tweenage pullets getting close to laying, our meat chickens are enjoying their new chicken tractor, and our newly hatched chicks are thriving and alert! It’s been a fun ride, for sure.

Grilled Garlic Parm Ranch Chicken

Grilled Garlic Parm Ranch Chicken may be a mouthful for a name, but it’s a mouthful you are going to LOVE! The amazing flavors of fresh garlic, ranch seasoning, and grated parmesan simmered in butter make for tender and moist chicken you will be craving over and over again. This is a perfect recipe for a summertime weeknight meal as it takes just a little bit of prep and some time on the grill. It will also go with lots of sides like rice, pasta, veggies, beans, potaotes….

While many see grilling as a summertime event only (maybe starting in late spring and into early fall), I am a year-round griller. It’s such a versatile cooking method that gives you great flavor from the char and smoke. And it usually cuts down on the clean up in the kitchen. While the big pro in the summertime is not heating up the kitchen by using the stove – I still get a hankering for some grilled meats even when there is snow on the ground.

When I saw weave the chicken on to the skewers, this is what I mean:

Substitutes and Variations:

The butter sauce is pretty versatile and could be used on beef, pork, or seafood. Just adjust your cooking times to the appropriate meats. If you don’t think your family will like the kick of heat from the red pepper flakes, simply omit.

Suggestions for Sides:

As I mentioned above- you can serve this with a wide variety of sides. I personally like to make about half again as much of the butter sauce and toss it with some linguini. It would be equally good over some buttered rice. Or you could let it cool down some and serve it as the protein in a nice entree salad.

Tools that may make this recipe easier:

When it comes to skewers I used to be a soak the bamboo skewers kind of griller. And don’t get me wrong – this is a perfectly good method. But once I tried the metal skewers, I’ve never looked back. There is something satisfying about how sturdy they are and knowing it won’t snap if you really load them up. You will also need some sort of grill – be it a small table top unit or a full sized grill – most of the skill comes from the cook!

Grilled Garlic Parm Ranch Chicken

Grilled chicken breast drizzled with a buttery sauce of parmesan, ranch and garlic.
Course Dinner, Main Course
Cuisine American

Prep Time 10 minutes
Cook Time 30 minutes
Servings 6

Equipment

  • 18 Skewers metal or bamboo (if bamboo, soak in water for an hour)

Ingredients

  • 2 lb Chicken Breast cut into 1inch wide strips
  • 1 tsp Salt
  • 1 tsp Pepper
  • ½ cup Oil
  • 1 cup Butter
  • 3 Garlic Cloves minced
  • 1 tsp Basil
  • 2 tsp Parsley
  • 2 tbsp Ranch Seasoning Packet or see recipe below
  • 1 tsp Red Pepper Flakes
  • 1 cup Grated Parmesan Cheese
Get Recipe Ingredients

Instructions

  • Preheat grill to medium-high (425degF).
  • Add strips of chicken to a mixing bowl with salt, pepper and oil. Mix until evenly coated. Then weave onto skewers (2-3 straps per).
  • In a saucepan over medium heat, add butter. Once butter has fully melted, add garlic and saute about 3 minutes. Reduce heat to medium low and add all remaining ingredients, EXCEPT parmesan cheese. Let sauce simmer while grilling chicken.
  • Grill for 10 minutes then spin to other side and grill another 10 minutes.
  • Add parmesan cheese to sauce and stir well.
  • Brush sauce over chicken and let grill 3 minutes. Flip each skewer and brush again with sauce. Grilled 3 minutes more then remove from to platter or cutting board. Pour remaining sauce over top of chicken and let rest for 5 minutes before serving.

Homemade Brownie Mix

My family absolutely loves fresh baked brownies. And while the box mixes make it super easy to whip up a batch, we have really been trying to control our sugar and preservative intake. Also, when you move to a small rural town in Central Montana, the sticker shock of buying something like a box of brownie mix is unsettling. So what’s a mom to do? Sort out how to make Homemade Brownie Mix – so the kids can keep making their own brownies when they want!

I used quart sized mason jars (it will hold two batches worth of mix) and a label maker to add the wet ingredient add-ins and baking instructions. If you wanted to double it all, it will fit nicely into a half gallon mason jar as well. If you don’t have or don’t use mason jars – you can also use a zippered freezer bag. I say freezer because they are thicker and less likely to rip if they snag on anything.

Substitutes and Variations:

You can use sugar alternatives like monkfruit or stevia. Just make sure to check your ratios.

You can make these as a regular pan of brownies, or you can get funky with it. You can mix in chocolate chunks or walnuts or pieces of snickers bars! You can also make these fun Peanut Butter Brookies by mashing together a scoop of my Sourdough Peanut Butter Cookie mix and a scoop of the prepared brownie mix.

Tools that may make this recipe easier:

You will want to use a good whisk to make sure that all of the ingredients are thoroughly combined. Since you are making enough for multiple batches at once, you need to make sure that it’s as close to homogeneous as you can get it. You will need some sort of airtight storage container like a Mason Jar or Freezer Zipper Bag.

Have a homemade Brownie mix on hand for all those Brownie cravings.
Course Baked Goods, Dessert
Cuisine American

Prep Time 5 minutes
Servings 3 Batches

Equipment

  • 1 Quart-sized Mason Jar

Ingredients

  • 1 cup Cocoa powder
  • cup Flour
  • 3 cups White sugar
  • 1 tsp Baking Powder
  • 1 tsp Salt

For Baking ONE Batch

  • 2 Eggs beaten
  • ½ cup Butter melted
  • 1 tsp Vanilla Extract
  • cup Brownie Mix
Get Recipe Ingredients

Instructions

To Make the Mix

  • Add all ingredients to a mixing bowl. Use a whisk to thoroughly combine
  • Transfer mix to airtight container.

To Make 8x8inch Pan of Brownies

  • Preheat oven to 350degF.
  • Combine eggs, butter, vanilla extract and brownie mix in a mixing bowl.
  • Transfer to parchment paper lined 8×8 baking dish (you can spray with cooking spray if you prefer)
  • Baked for 25 minutes or until toothpick comes out clean from center of pan.

Smoked BBQ Beans

Baked beans are a staple of many backyard BBQ events. It makes for a tasty side dish for just about every type of smoked, grilled, or barbecued meat. Some people make them traditional – in the oven. Some make them in a slow cooker, and some make them on the grill. I have been making them on the smoker lately and really, really loving it. So here is my recipe for Smoked BBQ Beans.

You will essentially be making a BBQ sauce right with the beans. It’s a great tangy sauce that pulls together the flavor of the pinto beans with the smokiness that you get from the three hours smoke.

Substitutes and Variations:

I have written this recipe with pinto beans. I think they work really well for a BBQ Beans situation. That said, you could swap out for great northern beans or light red kidney beans. You will get a slightly different flavor and texture, but they will still be good. Another variation would be to use a cup of tomato boullion mix (about a tablespoon of boullion mixed with water) in place of the tomato puree.

Suggestions for Sides:

So this is the side….let me suggest some mains to go with! It’s perfect with a smoked/grilled tritip. You can make them with chicken, burgers, pulled pork sandwiches, ribs, brisket… really any kind of protein you throw in the grill.

Tools that may make this recipe easier:

Obviously, you would need some sort of smoker setup to make these beans. I have a Traeger 34 Pro that I live by. I have yet to come across something I can’t make on it, and I have used it in -20degF all the way up to 112degF temperature, and it regulates like a dream! You will also need a 13×9 foil baking pan as well as some aluminum foil.

Sweet, tangy, bacony smoked beans!

Prep Time 10 minutes
Cook Time 3 hours
Servings 6

Equipment

Ingredients

  • 4 15oz can Pinto Beans Undrained
  • 1 15oz can Tomato Puree
  • ½ cup Beef Broth
  • ½ lb Bacon cut in ½-inch pieces
  • ½ Sweet Onion minced
  • 3 Garlic minced
  • ¼ cup Yellow Mustard
  • ¼ cup Worcestershire Sauce
  • 1 cup Brown Sugar
  • 2 tsp Cumin
  • 1 tsp Parsley
  • 1 tsp Salt
  • 2 tsp Chili Powder
  • 1 Tsp Paprika
Get Recipe Ingredients

Instructions

  • Preheat smoker to 180degF
  • In a frying pan over medium-high heat, add bacon. Cook until crispy and remove to a paper towel covered plate. Reserve the bacon grease.
  • In a 13×9 foil baking dish, add beans (with liquid), bacon, reserved bacon grease and all remaining ingredients. Wrap tightly with foil.
  • Place on smoker (away from hot spots) for 3 hours. Remove from smoker and let rest (covered) for 15 before removing foil and serve.

What…A….Week! We had a junior high and a High school graduation. We had our youngest turn 14 and our oldest turn 20. It was the last day of school for 3 of them. And our youngest marched in a Memorial Day Parade. Oh and our first attempt at incubation was fruitful! Check out these adorable little peepers.

Chorizo & Vegetable Gnocchi

This is one of those weeknight dinners that falls into the “semi-homemade” categories. While the sauce, meat and veg are all prepared from simple ingredients, this recipe does call for premade gnocchi. This is mostly a time saver, and if you have the time – you can certainly add in some hand made gnocchi. However this recipe for Chorizo & Vegetable Gnocchi is really great with the store bought variety as well.

Chorizo & Vegetable Gnocchi

I have added in a great variety of veggies to this humble dish – mushrooms, bell pepper, and kale. It is a trio that really really goes well together. Then when you add the spice of chorizo sausage with the soft pillows of gnocchi you have a seriously tasty bite. I like to use baby bella mushrooms, but simple white mushrooms work, as would some fancier mushrooms like chantarelles. I like a red bell pepper for the color but you could also go with yellow or orange.

When it comes to the broth – I listed vegetable broth – but you can also do chicken or beef broth. They will all add great flavor. If you don’t have broth – water works too, but I would suggest pulling it out of the post from the gnocchi after they are cooked. You will get a little bit of flavor and starch from that to help thicken the sauce.

Chorizo & Vegetable Gnocchi

A quick and hearty weeknight dinner with a lots of veggies and a little kick!

Ingredients

  • 1 lb Chorizo Sausage removed from casing
  • 1 lb Ground Pork
  • 2 lb Potato Gnocchi
  • 4 tbsp Oil
  • ½ Yellow Onion diced
  • 1 pint Baby Bella Mushrooms sliced
  • 1 Red Bell Pepper diced
  • 2 cup Vegetable Broth chicken or beef
  • 2 tbsp Cornstarch
  • 2 cups Kale chopped, stalks removed

Instructions

  • In a large saute pan over medium high heat, add chorizo and pork. Cook and crumble until no longer pink. Add oil, and onion.
  • Saute for 3 minutes then add bell pepper and mushrooms. Saute another 3 minutes.
  • Prepare gnocchi as directed on the package.
  • In a small bowl, whisk together broth and cornstarch.
  • Reduce heat in saute pan to medium low and add cooked gnocchi and broth mixture. Stir to combine and let simmer to thicken sauce for about 5 minutes. Then stir in kale and serve.

What’s been going on at Homemade on a Weeknight?

I’ve discovered that baking gives me a great sense of accomplishment. I get the same from cooking – it is truly my passion, not to mention my stress reliever – but baking is like a mystery. Once you put it into the oven, it’s out of your hands. You have to just wait out the timer an hope for the best. It’s a fun, albeit, simple game to play that I’ve been really enjoying. I’ve had to up my baking tool game a little bit to keep up – like the perfect dutch oven for baking sourdough in and reusable cake testers to check for doneness. Do you have any baking tools that you consider “must-have”?

What have you been up to this past week?

Smoked Italian Meatballs

Spaghetti and meatballs are some of my personal favorites when it comes to a big family meal. Most everyone loves it, and it’s pretty easy to make and make well. But we all know it really hinges on the flavor of the meatballs. Most recently, I have been smoking my meatballs to give them that delicious smoke ring while keeping them moist and tender on the inside. You can use this recipe for Smoked Italian Meatballs in your spaghetti or make meatball subs with them or even turn them into a nice potluck dish or appetizer.

Smoked Italian Meatballs

You will notice that one of the ingredients is not all that typical for meatballs, and that’s the tomato boullion. If you aren’t familiar with this product, you will probably be thanking me later. It is a powdered tomato product that packs tons of tomato flavor into a small amount. One day, when I have a freeze dryer, I will make my own. Until then, I find it in the Mexican or Hispanic food aisle of my grocery. One item of note – it has its own salt, so you may not need any extra when you use it.

Even though you wrap the baking sheet in foil before putting it on the smoker, I strongly recommend that you do NOT use your very favorite baking sheets. The smoker will give them a bit of yellowish tint as well as potentially cause some warping. I use my oldest sheets that the kids have already messed up, lol.

Smoked Italian Meatballs

To be clear, this is just the recipe for the meatballs – not spaghetti and meatballs. So, there is no red sauce recipe here. I do have a few recipes that include a red sauce recipe that you can check out though – like my Ultimate Spaghetti & Meatballs.

Smoked Italian Meatballs

Take your meatball game to the next level with these super flavorful smoked Italian meatballs.

Smoking Time 2 hours

Equipment

  • 1 Large Baking Sheet
  • Aluminum Foil

Ingredients

  • 2 lb Ground Beef
  • 1 lb Italian Sausage (ground)
  • 2 tbsp Dried Minced Onion
  • 1 Tbsp Granulated Garlic
  • 1 cup Bread Crumbs
  • 1 tsp Fennel seed
  • 2 Tbsp Tomato Boullion
  • 1 Tsp Paprika
  • 1 tbsp Italian Seasoning

Instructions

  • Preheat smoker to 215degF.
  • Add everything but the meat to a mixing bowl and thoroughly combine. Then add beef and pork and combine. Use a two inch scoop (or your hands) to make 2-inch meatballs. Line them out on a smoker safe baking sheet that is lined with aluminum foil.
  • Once smoker is to temperature, place meatballs in smoker for 45 minutes.
  • Without opening smoker (if possible) increase temperature to 275degF. Once it has reached that level, cook for 30 minutes more.
