I have discovered Corn Ribs and I AM OBSESSED! This has been sort of a trendy thing that I avoided for a long while because I don’t like to fall into the super trending things. But I gave in and gave it a try when the corn was down to $0.50 a piece even in our small town grocery. It’s actually super easy to prep and you basically season it just like you could pork ribs. Would yall like to see a recipe for this soon?

Chorizo & Corn Pizza

This was a pizza creation that I had to work a little bit to sell to my pizza living family. They were on board with the chorizo – a true family favorite. But the corn was a different idea for them, that they came to love immensely. This Chorizo & Corn Pizza is going to be a super fun change of pace for your weekly pizza night for sure.

I have included my recipe for homemade pizza dough after the pizza recipe. You can use it or don’t. It’s really up to you. If you and your family prefer a boboli crust, then do that. If you have your own pizza dough recipe, go for it (and link it with me in the comments). You can also go the semi-homemade route and get some fresh dough from your grocery deli or local pizza joint to roll and bake.

Substitutes and Variations:

I have listed White Corn, specifically, for this recipe. It’s mostly a personal preference. You can use sweet yellow corn if that’s your go to. I also used canned corn that wad drained, but you can go for frozen too. Just let it thaw some so a bit of the moisture leaks out in the bag and not on your pizza.

Suggestions for Sides:

A southwest salad mix would be a great option for this particular pizza creation. It would bring those Latin flavors to the forefront.

Tools that may make this recipe easier:

A good set of pizza pans can go a long way to turning any oven into a pizza oven. I like to use a pan that has holes over the entire bottom. Of course, a true pizza oven would be lovely too but we can’t all be that lucky.

Chorizo & Corn Pizza

A slice of fresh baked spicy pizza with an enchilada sauce base with chorizo, pinto beans, white corn and lots of mozzarella cheese

Prep Time 10 minutes
Cook Time 1 hour
Proofing Time 1 hour
Servings 2 Pizzas

Ingredients

  • 2 Pizza Dough Crusts see homemade dough recipe below
  • 24 oz Ground Chorizo Sausage
  • 1 lb Ground Pork
  • 3 cups Mozzarella Cheese shredded
  • 1 15oz can Sweet White Corn drained
  • 1 Fresh Jalapeno sliced

For the Enchilada Sauce

  • 2 tbsp Taco Seasoning see below
  • 2 tbsp Cornstarch
  • 2 tbsp Tomato Boullion
  • 2 cups Water
  • 1 tsp Chili Powder
  • 1 tsp Cumin
  • 1 tsp Onion Powder

Instructions

  • Start pizza dough proofing (is using) at least one hour before starting the chicken.
  • In a large measuring cup, whisk together sauce ingredients. Pour into a small sauce pan and place over medium high heat. Whisk as needed, and bring just to a bubble. Then reduce heat to medium low and, again, whisk as needed.
  • In a frying pan over medium-high heat, add chorizo and ground pork. Cook and crumble until no longer pink and cooked through.
  • Once the pizza dough is completed as listed in the recipe below, start building the pizzas.
  • Preheat oven to 425degF. Split dough in half and roll out to two round crusts. Place on pizza pans (can also make two rectangular crusts on a baking sheet). Place in preheated oven to bake for 12 minutes.
  • Remove pizza crusts from oven. For one pizza, spread half of sauce over top of crust. Evenly sprinkle with 1 cup of cheese. Layer with half of the meat mixture, half can of beans and half can of corn. Sprinkle with ½ cup of cheese mixture. Add a few slices of fresh jalapeno. Repeat on second pizza. Place in oven and bake for 10 minutes more. Remove and let rest for 5 minutes before cutting.

Thin Crust Pizza Dough

A simple pizza dough to use for all sorts of pizzas. Makes 2 12inch by 17inch rectangle pizza crusts or 2 14inch round pizza crusts

Ingredients

  • 2 tbsp Yeast instant
  • cup Oil
  • cup Warm Water
  • 2 tbsp Sugar
  • 2 tsp Salt
  • cups Flour
Get Recipe Ingredients

Instructions

  • Prepare all of the ingredients
  • In a large bowl, combine warm water, yeast, sugar, salt, and oil. Let sit to activate for about 10 minutes. Yeast should become foamy.
  • Add flour to activated yeast mixture. Stir together until a sticky dough forms. Cover with plastic wrap and allow to proof for about an hour (until dough has doubled in size)
  • Preheat oven to 425degF.
  • Once risen, split into two equal halves. Add one half of dough to floured surface and use a rolling pin to press out into ¼-in thick in the shape of the baking sheet. Move to parchment paper covered baking sheet. Spray with cooking oil.
  • Bake for 8 minutes.
  • Continue to pizza recipe directions.

While this dish may look like it takes a long while to get put together, it really is simple. You make the sauce right in the baking dish and let it cook along with the pasta. And once you have it all in the dish, you let the oven do all the work. This cheesy sauce pasta bake is going to make you feel like you cooked all day with minimal effort. Sausage Stuffed Manicotti is going to be a regular in my monthly rotation, and I am sure it will be in yours too!

Sausage Stuffed Manicotti

Hearty pasta dishes are always ideal for weeknight family meals. They are easy to put together and really fill up a belly that’s been on the go all day long. This particular recipe may take a while in the oven but it doesn’t take long to put together at all. Giving you plenty of time to squeeze in some of those other household tasks that never seems to be totally done. Also, since you make the sauce right in the baking dish – you really don’t have that much in the way of extra dishes to wash up after the meal is done.

Substitutes and Variations:

I have used standard pork Italian sausage for this preparation. If you have a preference for chicken sausage or a specific type of sausage then totally use that. If the sausage is fully cooked, you can skip the pan fry of the sausage and just halve them lengthwise and stuff them into the shells. I also used string cheese to really add a lot of cheese to this pasta bake. If you don’t have string cheese or prefer not to use it, then just add more shredded mozzarella cheese over the top.

Suggestions for Sides:

I would suggest some garlic bread or maybe some super easy to make garlic knots. You can also do nice green salad or caesar salad. Another great side would be some roasted asparagus or green beans. Just drizzle with olive oil, and sprinkle with salt, pepper and garlic powder. The spread out on a parchment paper covered baking sheet and place in the oven after you remove the foil from the manicotti and bake another 20 minutes.

Just about the only specific thing you need for this recipe, other than the ingredients, is a 13×9 baking dish. I love my pyrex one, it is so durable, stable and easy to clean.

Sausage Stuffed Manicotti

A delicious and hearty sausage stuffed manicotti pasta bake with a simple homemade red sauce.

Ingredients

  • 16 Manacotti Shells
  • 8 Italian Sausage Links
  • 10 String Cheese halved lengthwise
  • 1 cup Mozzarella Cheese
  • 1 cup Parmesan Cheese
  • 1 tsp Dried Parsley

For the Red Sauce

  • 2 28oz cans Crushed Tomatoes
  • 2 cups Beef or Vegetable Broth
  • 1 tbsp Dried Minced Onion
  • 1 tbsp Italian Seasoning see recipe below
  • 1 tbsp Sugar
  • 1 tsp Paprika

Instructions

  • In a frying pan over medium-high heat, cook sausage until cooked through (about 15 minutes). Remove from heat and let cool.
  • Preheat oven to 375degF.
  • In the 13×9 baking dish, add sauce ingredients and stir to combine.
  • Cut each sausage in half lengthwise. Then stuff each half into a manicotti then line up in the red sauce.
  • Then put a half of the string cheese between each manicotti shell. Push each shell down in sauce so that it is submerged. NOTE the sauce should be loose, so add more water if needed.
  • Sprinkle the top with grated parmesan, shredded mozzarella cheese and parsley. Cover with foil and place in oven for 50 minutes.
  • Remove foil and bake another 20 minutes.

My Review:

First, I gotta say I love a hard cover cookbook for the simple fact that they just lay flat and open on the countertop. This cookbook has great photos and lots of extras throughout the book, another plus for me when it comes to the overall. The recipes are well written – very descriptive and easy to follow. Any “special” techniques are given more explanation in a little margin note or even a whole page. There are also some really great variations on several of the recipes – which I always love to see in a cookbook. I try to do this with most of my recipes because I know not everyone wants the exact recipe – or they have food allergies or aversions. Since it is book celebrating the 100 years of Betty Crocker, you will also find some great antidotes about the progression of the brand. If you are like me and like to read cookbooks like novels – this is a great one for that.

Chili Crisp Carrot Salad

Carrots are such a flavor packed, nutrient dense, and budget friendly vegetable that sadly gets overlooked so often. Some people don’t care for it cooked on its own. Some think they can’t eat much of it raw. This recipe for Chili Crisp Carrot Salad is going to change all of that for you and your family. The dressing is a slightly spicy quick pickle that balances the sweetness of the carrot with the tang of vinegar and the pop of chili crisp.

If you haven’t tried chili crisp or aren’t sure what it is, it’s most often found on the table at your favorite Asian restaurant. Sometimes called chili crunch or chili oil – though chili crisps have more “solids” in it than most chili oils. It had great flavors of garlic, chili flakes, green onions, and usually sesame oil. Some are extra hot with Sichuan peppercorns, and some are just red pepper flakes added. You can find it either on the international food aisle, Asian food aisle, or even just the condiment aisle in your grocery store. Depending on your location, you may to order from Amazon or go to an Asian market.

Substitutes and Variations:

They type of chili crisp you use will impact the heat level of this simple salad. You can use red onions in the place of the green onions. Just shave them thin with your hand mandolin so they aren’t too bulky. If you want to make this dish more of a show piece, use heirloom or rainbow carrots to add more colors to the mix.

Suggestions for Sides:

This is an excellent salad for a pot luck or to enjoy as a lunch. It goes great with an Asian rice bowl as well. You could put it out with some chow mein, fried rice, orange chicken, and/or mongolian beef and have your own Chinese Buffet night!

You will definitely need a good vegetable peeler to get your carrot ribbons. I like to use one with a serrated blade so that the ribbons have grooves to hold on to the dressing.

A simple but flavorful carrot salad that is great on it's own or as part of a rice bowl.

Prep Time 15 minutes
Chill time 30 minutes

Equipment

Ingredients

  • 5 Medium Carrots cut into ribbons
  • 3 stalks Green Onions green parts only
  • 2 cloves Garlic grated
  • 2 tbsp Soy Sauce
  • 2 tbsp Rice Vinegar
  • 1 tbsp Sesame OIl
  • 2 tbsp Chili Crisp
  • 1 tsp Sesame Seeds
Get Recipe Ingredients

Instructions

  • In a small bowl, combine soy sauce, vinegar, oil, chili crisp and sesame seeds.
  • Add garlic, green onion and carrots to a larger bowl. Pour sauce mixture over top and toss to combine.
  • Cover and place in refrigerator to cool for at least 30 minutes.

What’s been going on at Homemade on a Weeknight?

We had a very unexpected weather change over this week. We went from a blistering 98degF to 45degF and windy rain in less than 24 hours. Sadly, our small greenhouse lost its top, and our build on our new – BIGGER – chicken coop came to a screeching halt. Luckily, we didn’t currently have anything germinating in the green house, so all that was lost was the roof itself. We are head back into the 80s and 90s so we should be able to get back on track!

Homemade Cornbread Mix

In recent months and years, I have been trying to get away from the overly processed “shelf-stable” mixes and packets that so many of us use on a daily basis. Don’t get me wrong – there is no shame in those pre-made items. I am just trying to limit how often I am using them as they do have added preservatives that we just dont need in our food. And that is how I came to decide to make my own Homemade Cornbread Mix. I love to have fresh cornbread, but recently, I tasted an oddness coming from that traditional blue box and felt it was time to tackle making my own.

Another big bonus of making your own mixes in bulk is that you half or double (even triple) a recipe as the meal needs it. You can also easily adjust the base flavor and have your favorite mix-ins. You can add whole corn kernels or honey or peppers or cheese or bacon or ham or veggies. I have a lively recipe for Bacon Cheddar Jalapeño Cornbread that deserves to be on every BBQ platter!

Substitutes and Variations:

As I’ve mentioned above, there are quite a few mix-in ideas when it comes to cornbread. I have seen some wild creations like blueberry jalapeño and spinach goat cheese. Cornbread is such a great base to start with – the possibilities are endless. Just keep in mind how much moisture and/or fat your mix-ins will add and adjust accordingly. You may need less other liquids or more cook time.

Suggestions for Sides:

Cornbread is excellent with so many different meals. You can have it with a big bowl of chili or along side your bbq ribs. Its also lovely with breakfast or on its own with some smooth melted honey butter.

Tools that may make this recipe easier:

Whenever making your own baking mixes, it is best to use a large mason jar with a lid and a whisk to thoroughly combine all of the ingredients. When it comes to baking, the ingredients come together for a chemical reaction. So you need to be sure you have all the good stuff mixed up well.

Homemade Cornbread Mix

Simple dry baking mix so that you can make cornbread whenever the craving hits
Course Baked Goods, Side Dish
Cuisine American
Keyword cornbread, cornbread mix, homemade baking mixes, homemade cornbread mix
Prep Time 5 minutes
Servings 3 Batches

Equipment

  • 1 Quart-sized Mason Jar

Ingredients

  • 2 cup Flour
  • cup Cornmeal
  • ½ cup White sugar
  • 1 tbsp Baking Powder
  • 1 tsp Salt
  • ½ tsp Garlic Powder
  • ½ tsp Onion Powder

For Baking ONE Batch

  • 2 Eggs beaten
  • ¾ cup Milk melted
  • ¼ cup Oil or melted butter
  • 2 cups Cornbread Mix
Get Recipe Ingredients

Instructions

To Make the Mix

  • Add all ingredients to a mixing bowl. Use a whisk to thoroughly combine
  • Transfer mix to airtight container.

To Make 8x8inch Pan of Cornbread

  • Preheat oven to 350degF.
  • Combine eggs, milk, oil and cornbread mix in a mixing bowl.
  • Transfer to parchment paper lined 8×8 baking dish (you can spray with cooking spray if you prefer)
  • Baked for 25 minutes or until toothpick comes out clean from center of pan.

Things I Found on Amazon – #14

Every kitchen needs some cool gadgets to make things run smoother, work better or just plain make life easier. This week I want to share a few things that I {ACTUALLY} bought on Amazon and just love! Whether you are looking for some gift ideas for the home cook in your life or just want to treat yourself to something fun for your kitchen set-up, I hope you will come back each week to see what else I found. And yes – of course – these are some affiliate links in the post.


Vertical Skewer/Stainless Steel Pit Stand – I had always wanted to be able us make al pastor or spit style Mediterranean meats but never really know how I could do that without a big huge unit that makes enough food for a restaurants’ full day of service. Until I saw this amazing little unit that makes just enough for a family dinner. You can also use it for making a whole chicken or even cornish game hens or quail!

PRO Duxano Pots & Pans Set – if you have been following along, you know that my family has been living in a camper for the last 8 months while we turn our bare 20 acres in rural Montana for our forever home. This means tight quarters all the way around. These pans with a removable handle are an incredible space saver. The 3-ply construction makes these a wonderful set for any kitchen – camber or otherwise.

3-Piece Large Cutting Board Set – cutting boards are so super important for home cooking. And it’s so useful to have a variety of sizes – because sometimes you are breaking down an entire pork tenderloin and sometimes you just need to wedge a lime. I really like these boards because they are lightweight and they have the juice groove – so that anything juicy doesn’t just flow all over the countertop.


64 oz Mason Jar with Pour Lid – My Family loves to have sweet tea and fresh lemonade. These mason jars are perfect for making sun teas as well as flavored lemonades like my Mixed Berry Sparkling Lemonade. The spout will work on any wide mouth mason jar.

Citrus Juicer – I love to use fresh squeezed juice in many of my marinades and homemade dressings. While the big mechanical juicing machines are great when you are going to make a large amount of juice, they aren’t great for when you need a few tablespoons. That’s when I pull out the hand juicer like this one. It has sturdy construction and works really well.
