Welcome to the Weekly Book Report and Book Review Link-up #5!

Every Wednesday I will be sharing my latest read – which could be a cookbook, a celebrity chef biography or memoir, a lifestyle book, a gardening book, a homemaking book or maybe even a cozy kitchen mystery book. They may be paper books, eBooks, or audio books. I have challenged myself to read or listen to at least one book per week, and I plan to share that with you all here.

In addition to my Book Report, there will be a Book Report LInky – a chance for all of you to share your own book review blog post (ONE per blog, please). We want to see what had you page flipping, can’t put it down, totally captivated.

My Review:

I have been a fan of the Top Chef Franchise for many years. I have watched every season of the original series as well as many episodes from around the world. And through all of that, Gail was always my favorite. She is brutally honest with the utmost compassion. Her book was a welcome and delightful insight into how she embarked on the task of living her passion for traveling and cooking and most importantly EATING! I really love to read biography books of people that I know what their voice sounds like. It makes it so that I can hear them reading the pages giving even more life to the words. This is a fun read and gives you so much more depth to the exceptional woman that is Gail Simmons.

Peanut Butter Buckaroos

Ooey gooey peanut buttery goodness! These Peanut Butter Buckaroos make for a perfect salty sweet treat that will make both kids and adults excited for dessert! And because it uses crunchy peanut butter – you get an added bonus of extra protein for the day! You can whip up a batch of these in less than 20 minutes without even turning on the oven!

This is a really great treat to make on a hot day – as you dont have to turn on the oven for baking. It’s just a few minutes on the stove top and then letting it set up. These are also perfect for lunch prepping. Once set, you can use the parchment to lift the whole bar out of the dish and place it on a cutting board. Cut them into 2 inch squares and then individually wrap up. You can use zipper baggies or plastic wrap.

Substitutes and Variations:

If you love the combo of chocolate and peanut butter (like I do!), you can swap out the mini peanut butter chips for mini chocolate chips. Also, if you do not like the crunchy peanut butter, you can just use smooth. My family prefers the extra crunch of the small bits of peanut. I have seen these made with Frosted Flakes instead of Corn Flakes, but I find that to be just tooooo sweet.

Tools that may make this recipe easier:

A really good spatula is needed for this one. You want one that is flexible but firm. You also need parchment paper. It not only makes clean up of the 13×9 glass pan easier, but it makes it simple to press the mixture into the pan to make it even.

Peanut Butter Buckaroos

A delicious combination of peanut butter, marshmallows and corn flakes come together to make an excellent sweet treat.

Cook Time 5 minutes
Cooling Time 2 hours
Servings 24 bars

Ingredients

  • 12 cups Corn Flakes
  • 2 cups Chunky Peanut Butter
  • 1 cup Butter
  • 20 oz Mini Marshmallows divided
  • 1 cup Mini Peanut Butter Chips divided
Get Recipe Ingredients

Instructions

  • Add cereal and ¾ cup of peanut butter chips to a large mixing bowl and set aside.
  • Add parchment paper to 13×9 baking dish and set aside.
  • In a saucepan over medium heat, melt the butter and peanut butter. Once melted and smooth, add 15 ounces of the marshmallows. Continue to stir and move until fully incorporated. Pour mixture over cereal and quickly stir together.
  • Fold in all but a handful of the remaining marshmallows.
  • Transfer cereal to baking dish and use a spatula to press into a even layer in the baking dish.
  • Sprinkle top of flattened mixture with remaining peanut butter chips and marshmallows. Press into the mixture some.
  • Place in refrigerator to cool for at least 2 hours. Remove and cut into 16 bars.
  • Serve right away or store in airtight container.

What’s been going on at Homemade on a Weeknight?

We are just one week away from heading back to school. I am thankfully headed back to the school cafeteria to be a full-time employee instead of a temporary employee. We will also have out youngest starting high school and our youngest son headed into his senior year. We are all embarking on new territory and so excited for it. On the homestead we will be doing a fall/winter garden for the first time, as well. Any suggestion of veggies to plant?

Zucchini & Squash Couscous

It’s that time of year when zucchini and yellow squash abound in the garden. Whether you grew it yourself or got it from a neighbor or friend, you probably need some ideas to use it up. This recipe for Zucchini & Squash Couscous is so easy to make. It works for meal prepping, lunch, or a side for dinner. It’s a light and easy dish for these late summer hot days.

We have been so blessed to have a fairly successful yield in our first year gardening in rural Montana, and I’ve been getting to play with super fresh produce. We had an unexpected ripe zucchini the other day, so I put on my thinking cap of how to use it so it wouldn’t go to waste. Zucchini & Squash Couscous was a great side dish to complement some grilled chicken and cornbread.

Substitutes and Variations:

It’s important that you use Israeli Couscous for this recipe and NOT Moroccan couscous. These are two distinctly different ingredients that are prepared similarly but not the same, so it will not turn out quite right if you swap them. Israeli couscous is the larger pearl sized pasta, which is why it’s sometimes labeled as Pearl Couscous. The Moroccan variety is the teeny seed bead sized version that cooks much faster.

Suggestions for Sides:

This works really well some grilled chicken or pork chops. It also works for a steak. You can eat it on its own for an easy lunch. You can also add some Salami or kielbasa to the mix to make an all in one meal.

Don’t really need anything special to make this dish. It truly is a simple simple recipe. A good knife – which I hope you already have and a decent pot are all you  should need to make this come together.

Zucchini & Squash Couscous

Israeli couscous made simply with zucchini and squash for a delightful side dish or easy lunch.
Course Lunch, Side Dish, sides
Cuisine American, middle eastern

Ingredients

  • 2 cups Israeli Couscous
  • 2 tbsp Oil
  • ½ Yellow Onion small diced
  • 2 Garlic Cloves minced
  • 2 cups Zucchini ½inch cubes
  • 1 cup Yellow Squash ½inch cubes
  • 1 tsp Paprika
  • 1 tsp Salt
  • 1 tsp Parsley
  • 2 tbsp Lemon Juice
  • 4 cups Water
Get Recipe Ingredients

Instructions

  • In a large pot or saute pan over medium-high heat, add oil, onion and garlic. Saute until slightly translucent , then add couscous.
  • Continue to toast the couscous until slightly browned. Add zucchini and squash. Saute another few minutes, until just starting to soften.
  • Add seasonings, lemon juice and water. Bring just to a bubble and reduce heat to medium. Cover pan and let cook for 15 minutes.
  • Most of the water should be absorbed, and it should have a slightly thickened sauce. Stir to evenly coat and serve.

My Review:

Yes, even my murder mystery books are food-centric! This is a really fun Cozy Kitchen Murder Mystery. It’s got it all – comedy, love, tragedy, and of course a murder! The main character- Robbie – is looking for a new start, and she sure finds it in Indiana. I love how so many of these types of books center on the notion of a distant but loving Aunt handing over the reigns to their niece looking to start anew. I am very close to my own aunt, and so it’s relatable for me. The story is well written and keeps you engaged the whole time. The book also features the recipes of many of the culinary creations mentioned in the story. The first in the series, you are likely to want to read the rest, too!

Garlic Herb Angel Hair Pasta

One of my family’s favorite side dishes is pasta. I try to get creative with it – using different sauces and types of pasta. One that I don’t get to use often is Angel Hair, for no particular reason. It really is a lovely and delicate pasta that takes on simple sauces with ease. This simple garlic and herb sauce balances is great with parmensan cheese and the thin pasta. Garlic Herb Angel Hair Pasta is easy to make and great as a lunch or as a side for your weeknight dinner.

If this pasta looks familiar to you, it might be because it is a bit of a copy ate recipe for the Pasta Roni boxed pasta called Angel Hair Pasta with Herbs. It has very similar flavors using made from scratch techniques. And it honestly doesn’t take any longer to make than the boxed variety.

Substitutes and Variations:

If you want to make this fit with different cuisines and main dishes, you can adjust the seasonings. If you want a little bit of a Cajun or bbq kind of flavor, you can add some paprika, chili powder and cumin. If you want to skip the parmesan cheese, just add a little more salt. You can also swap out the parmesan cheese for cheddar cheese for a more “Mac & cheese” vibe.

Suggestions for Sides:

I like to serve this with a Simple Grilled Garlic Chicken. Its a great combination for a Weeknight dinner. You can also serve it with a nice seared steak or pork chop. You can also add in some cubes ham and veggies (broccoli, zucchini, etc).

Tools that may make this recipe easier:

You don’t exactly need anything particular for this recipe. I will say I prefer a small pair of tongs for tossing this past, instead of a spoon or pasta fork. The tongs cut down the tearing of the delicate pasta that is Angel Hair.

Cook Time 30 minutes

Ingredients

  • 2 lb Angel Hair Pasta
  • 2 cups Chicken Broth
  • 2 tsp Granulated Garlic
  • 2 tsp Oil
  • 2 tsp Italian Seasoning
  • 1 tsp Salt
  • 1 tsp Dried Parsley
  • 2 tbsp Corn Starch
  • 1 cup Grated Parmesan
  • 1 cup Heavy Cream
Get Recipe Ingredients

Instructions

  • Start water boiling for pasta.
  • In a large measuring cup, whisk together broth, corn starch and seasonings.
  • Add pasta to boiling water and let cook for 5 minutes. Drain water from pasta and return pasta to pot. over medium heat.
  • Add broth mixture and use tongs to coat the pasta. Let cook for about 3 minutes then add cheese and heavy cream.
  • Continue to use tongs to coat the pasta. Remove from heat and serve.

What’s been going on at Homemade on a Weeknight?

Can you believe its already August? How did we already get to the lady month of summer! In just a few weeks I will be hanging up my water shoes and heading back into the cafeteria at the local elementary school. We have been having some incredible thunderstorms- even a fair bit of hail! We have been blessed to be missed by the bulk of it and our garden is still strong. We have also been getting some really amazing sunsets and sunrises around here. What’s new in your neck of the woods?

Smoked Garlic Pulled Pork

If you are a garlic lover like me – you are going to love this recipe for Smoked Garlic Pulled Pork.  One thing I really love about smoking meats is that you do about five to ten minutes of actual work, and then it’s just tending the smoker (pellets or wood) for the next several hours. Putting the whole garlic head in with the meat is going to give you amazing aromas throughout the cooking process, too!

Smoked Garlic Pulled Pork

I prefer to use a bone-in shoulder roast. You get those extra flavors from smoking with the bone. You can also use a Boston butt, a blade roast or a whole tenderloin. I have included my pork rub recipe below the main recipe. You can use your own blend if you like.

Substitutes and Variations:

This recipe will actually work with beef roast if you prefer it. You may have to adjust the cook time (start checking it a little sooner). As mentioned above you can use whatever spice blend you prefer – some want a little more heat and some want a little more sweet.

Suggestions for Sides:

I really enjoy serving this with some homemade yeasty rolls or my new favorite milk buns (they are a big fluffier on the outside and crustier on the outside). This meat is so good you don’t actually need a sauce with it but if you do like to get saucy I would suggest making a Carolina Gold BBQ – it really goes well with the garlicky goodness.

Smoked Garlic Pulled Pork

Tools that may make this recipe easier:

Obviously, this recipe will come out best with a full sized smoker – like a Traeger 34 Pro. You can use a stacked smoker or a barrel smoker. Or you can use a smoker box and turn your regular charcoal grill into a smoker. The real need is to be able to control the temperature and keep it low and slow for several hours.

Smoked Garlic Pulled Pork

A flavor packed moist and tender pork roast smoked to garlicky perfection
Course Dinner, Main Course, Meat
Cuisine American

Prep Time 10 minutes
Cook Time 10 hours
Servings 6

Equipment

  • 1 9×9 Aluminum Baking Dish

Ingredients

  • 4 lb Pork Roast/Shoulder/Butt
  • ½ cup Brown Sugar
  • ½ cup Oil
  • ½ cup Pork Spice Rub see recipe below
  • 1 head Garlic
Get Recipe Ingredients

Instructions

  • Preheat smoker to 225degF.
  • Add oil, brown sugar and spice rub to the aluminum try. Use a fork to combine.
  • Press each side of Pork into the seasoning mixture to evenly coat the roast.
  • Break apart the garlic head into individual cloves. Place around the aluminum tray. Cover tray securely to aluminum foil and place on smoker for 10 hours.
  • Start checking for doneness around 8.5 hours. When pork falls apart with very little effort, it is done.
  • Remove garlic cloves from skins and mix into pork as you shred it.
  • Serve hot or cold, with or without sauce.

A simple but super flavorful rub recipe that is mostly geared for use on grilled or smoked pork
Course Seasoning
Cuisine American

Prep Time 5 minutes
Servings 2 cups

Ingredients

  • ¼ cup Brown Sugar
  • 3 tbsp Onion Powder
  • 3 tbsp Garlic Powder
  • 2 tbsp Paprika
  • 2 tbsp Salt
  • 1 tbsp White Pepper
Get Recipe Ingredients

Instructions

  • Combine all ingredients in a bowl or jar. Use right away or store in an airtight container.
