It doesnt get more classic home cooking than a fully loaded cheeseburger. This one is served up smashburger style with a simple burger sauce, cheddar cheese, lettuce, tomato and onion. If you are looking for your go to – “I need a Burger” – solution, you found it! This Classic Bacon Cheeseburger has got everything to make your family happy.

This is a bit of a less is more type recipe. You want to get good beef so you don’t have to add too much seasoning. A good bun so you just have to toast it up. Decent sliced cheddar so it gets melty and gooey. And nice fresh produce that you can just slice up and serve.

Substitutes and Variations:

Since each burger has to be built on its own, everyone can have it their way – add all the things or omit what you don’t want. You can do plain ketchup instead of the sauce. You could add in some pickles if that’s your favorite burger topping. You can also make this with ground pork or turkey. Just add a little oil to the pan if using turkey, so it will crisp up a little.

Suggestions for Sides:

As with any burger – a fried potato item is always a good idea for the side. You can do waffle cut, crinkle cut, Shoestring,  steak, curly or regular fries. Heck you can even go tater tots if thats what you like. This burger also is great with some nice potato salad or pasta salad.

Tools that may make this recipe easier:

There are just three special type things I would say are needed to make these burgers. You are going to want a food scoop to portion your ground meat evenly into the 12 patties. You are going to need parchment paper (either precut in 4-5inch squares or by the roll and you cut it). And you are going to want a hand mandolin to cut your onions super thin for best flavor!

Classic Bacon Cheeseburger

A fully loaded double smashburger with cheese, bacon, all the veggies and a homemade sauce.

Cook Time 20 minutes

Ingredients

  • 1½ Lb Bacon cut in half
  • 2 lb Ground Beef
  • 2 tsp Salt
  • 1 tsp Black Pepper
  • 1 tsp Garlic Powder
  • 1 tsp Paprika
  • 12 slices Cheddar Cheese
  • 6 Hamburger Buns Store-bought or See recipe below
  • 1 cup Fry Sauce Store-bought of See recipe below
  • ½ White Onion thinly sliced
  • 1 Large Beefsteak Tomato sliced
  • 6 pieces Green Leaf Lettuce

Instructions

  • In a bowl, thoroughly combine ground beef with salt, pepper, paprika and garlic powder. Use a 2 inch food scoop to form into 12 balls.
  • Place each ball between two 6inch pieces of parchment and use a heavy pan or burger press to flatten out. Repeat with remaining ball.
  • In a frying pan over medium high heat, add bacon. Cook until crispy and then remove to paper towel covered plate.
  • In a wide flat pan or on a flat top griddle, over medium high heat, add 2 or 4 (depending on available space) flattened patties. Let cook for about 3 minutes then flip and smash down again. Cook another 3 minutes and then place a slice of cheese on each patty. Cover with lid and let melt for a minute then add 3 pieces of bacon on top of each patty. Stack two patties together and remove from pan. Repeat with remaining burgers.
  • Build the burger – smear top bun with fry sauce. Place a piece of lettuce then two slices of tomato and some onion to the bottom bun. The place the double cheese burger on top, adding two or three pieces of bacon. Lastly add top bun and pressing down slightly.

Homemade Fry Sauce

A quick and simple recipe for the classic fry sauce or secret sauce, perfect for burgers, sandwiches and of course – FRIES!

Prep Time 10 minutes
Servings 2 cups

Ingredients

  • 1 cup Mayonaisse
  • ½ cup Ketchup
  • ¼ cup Dill Pickle Relish
  • 1 tbsp Pickle Juice
  • 1 tbsp Worcestershire Sauce
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 tsp Onion Powder
  • 1 tsp Paprika
  • 1 tsp Garlic Powder
Get Recipe Ingredients

Instructions

  • Combine all ingredients until smooth.
  • Place in sealable jar and store in refrigerator until ready to use. Store for up to 7 days.

Homemade Hamburger Buns

A simple recipe for some homemade hamburger buns, perfect for burgers or sandwiches.

Prep Time 10 minutes
Cook Time 30 minutes
Proofing Time 3 hours
Servings 16 Buns

Ingredients

  • 2 cup Water room temp.
  • 6 tbsp Sugar
  • 2 pkg Dry Active Yeast 7 grams
  • 2 Egg beaten
  • 7 cups Flour bread or AP
  • 2 tsp Salt
  • ½ cup Butter softened, divided
  • 1 tbsp Sesame Seeds

Instructions

  • In a small bowl, add water and sugar. Stir until most of the sugar is dissolved. Then add yeast packets. Let sit to bloom for about 10 minutes. (should be foamy)
  • In a large bowl, combine flour, salt and beaten egg. Pour in bloomed yeast. Mix together until a dough forms. Knead for about 5 minutes. Then add half of the softened butter and knead into dough for another 5 minutes. Cover bowl with plastic wrap (or a bowl cover). Place in a warm place (countertop or proofing drawer), to rise for about and hour. It should double in size.
  • Turn dough out on lightly floured surface and punch out most of the air. Then use bench scrapper (or knife) to portion into 16 equal pieces. Roll each between your palms into round balls. Line out on a parchment paper covered baking sheet. Cover again with plastic wrap (or a clean kitchen towel) and let proof again, until doubled in size.
  • Preheat oven to 350degF.
  • Melt remaining butter. Once buns are done proofing, remove plastic wrap and brush each with melted butter. Sprinkle with sesame seeds. Place in oven to bake for 30 minutes (or until golden brown).
  • Remove from oven and move immediately to a cooling rack. Let cool at least 15 minutes before slicing in half to use to make burgers or sandwiches.

Pineapple Pomegranate Prosecco Smash

I love to combine fruit flavors to make interesting beverages. Especially if I can put together fresh cut fruit with fruit juice to get the best of both worlds. This particular cocktail is perfect for a bridal or baby shower as its lighter with prosecco instead of a harder stronger alcohol. Pineapple Pomegranate Prosecco Smash is going to be a favorite all spring long and well into the summer months.

If you are not familiar with Prosecco it is basically the Italian version of champagne. The main difference (other than the region its from) is that Prosecco is produced in by the tank while champagne is produced by the bottle. It is a sparkling white wine that provides the bubbles of a fun drink.

Substitutes and Variations:

If you want to make this a mocktail, you can use club soda or lemon-lime soda in place of the Prosecco. If you want to make it a little stronger, you can use a combination of vodka and lemon-lime soda in place of the Prosecco.

Suggestions for Sides:

As I mentioned above, this is a lovely drink for a Shower. You can make a pitcher of it and let people pour as they like. It goes great with light refreshing finger foods as well as a backyard bbq type situation.

While it’s not necessary, you can use special ice molds to make drinks a little more fun. You can use round molds or big square molds. I find that the silicone ones are the easiest to use. You also could use a double sided shot glass – also called a jigger – to make measuring out the portions simpler.

Pineapple Pomegranate Prosecco Smash

A refreshing combination of pineapple and pomegranate in an iced prosecco cocktail.

Prep Time 5 minutes

Ingredients

  • 1 part Lime Juice ounce or cup
  • 2 part Pomegranate Juice ounce or cup
  • 2 part Prosecco ounce or cup
  • 1 cup Fresh Pineapple cut into cubes
  • Ice

Instructions

  • This recipe either makes one drink (using ounces) or a pitcher of 8(ish) drinks (using cups).
  • In a mixer glass combine pomegranate juice, lime juice, and prosecco.
  • In a glass place a few pieces of pineapple, smashing them with a spoon to release some of the juices. Add ice to the glass, then pour the mixture over the ice. Then add a chunk of pineapple to the rim of each glass.

We had an exciting week on the homestead – we hatched out a duckling! We have named it Mal – which is either short for Mallory or Malcolm. We won’t know for sure if its a he or a she until about 2 weeks. But I think it will be Malcolm. We have a few more duck eggs in the incubator that we will know about in anout two weeks.

Making my own spice blends has been a hobby of mine for some time. I really like to play around with different flavors and see how they come together. I also really like to be able to control the amount of salt, fillers and other preservatives that go into the spice blends I use in cooking. Recently I have been trying to make my own deli meats so that we have what we want to hand. In the process of that endeavor I have come up with a really great Roast Beef Spice Blend that works for making deli style meat or a Sunday Supper centerpiece.

I don’t usually make recipes that require a super specialized piece of cooking equipment (except maybe slow cookers), but I am so in love with my Blackstone griddle, I can’t help it. For the most part the other things I have made thus far can be made on the stove top, however this Blackstone Cowboy Stir-Fry really does the need the wide open flat space of the griddle. It is a total game changer for making meals like this for the whole family at once. By the by – this is not an ad for Blackstone products at all – my hubs got me one for my birthday this year and I just love it so very much.

Since it’s clearly the unpopular choice, there must be a good reason couples are cooking at home.

Imagine not having to worry about noisy restaurants or feeling rushed to get off your table. You can cook your significant others favourite meals and make the night as long or as short as you want.

Here’s the thing about dining in…

Every detail of the night can be curated by you. Need some background music? Slip on your favourite playlist. Prefer softer lighting? Light a few candles.

There’s no wrong way to cook at home. And if you want to go all out you can even create a romantic atmosphere with flowers and fine wine.

Of course, you should also plan to give a gift with dinner. Whether that’s a luxurious box of chocolates or a decadent diamond anniversary band.

But you don’t have to be fancy at home.

Creating a romantic setting is easy and doesn’t need to cost very much at all. All it takes is some thoughtful details.

Here are a couple.

  • Light candles.
  • Put out some fresh flowers.
  • Play some background music.

That’s right. It’s really that simple.

Dim the lights, light some candles and your home is instantly transformed into a romantic dining spot.

Hang some flowers on your table and create a cute playlist beforehand. Things will feel instantaneously more romantic when your favourite songs are playing in the background.

Here are some extra tips you might not have thought of.

  • Use nice plates and glasses. Not ones you’d typically use every day.
  • Iron a table cloth or grab a clean table runner.
  • Set the table with nicely folded napkins.
  • Pick out a nice bottle of wine to pair with dinner.

Again, little details like this let your partner know you’ve put time and effort into making this night special.

Don’t blow dinner by having your dining room look like a tornado hit it.

Cooking at home for your anniversary is the gift.

Of course, there’s always nice to include a little something something with dinner.

Most couples wait until dessert to give gifts with dinner. It works perfectly for anniversary celebrations.

This year, consider giving your partner a stunning anniversary gift they’ll love.

If you’re celebrating a milestone anniversary like the 10th, 25th or 50th you might even consider going big. Jewelry, keepsakes and experiences make for great gifts any year.

Thinking about cooking at home for your anniversary but don’t know where to start?

Don’t let these common mistakes ruin your dinner when preparing food at home.

Cooking something new for the first time.

Your anniversary isn’t the time to try and cook something that could go wrong.

Sticking with food you know how to cook takes the stress out of dinner. That way if something unexpected happens you’ll be prepared.

Over-complicating recipes.

3 courses is more than enough.

You don’t need to make yourself overwhelmed by cooking ten different dishes.

Not timing yourself.

Make sure each dish is timed correctly. You don’t want to cook the entire meal just to have things get cold before serving.

Forgotten dietary preferences.

Making seafood stuffed filet mignon just because it looks fancy isn’t a good idea if your spouse hates seafood.

Keep the other person’s preferences in mind when planning the menu.

Putting off cleanup.

Clean as you cook whenever possible. The last thing you want to do is spend time cleaning up after dinner is finished.

Wrapping Things Up

Congratulations, you’re going to cook your significant other the best anniversary dinner they’ve ever had.

Who doesn’t love a big pot of baked beans? They are perfect for every backyard bbq and every smoked meat and bbq platter. If you don’t have a signature baked beans recipe, you are welcome to my Dutch Oven Baked Beans recipe.  Don’t worry I won’t tell anyone!

The best part of the baked beans is getting the piece of bacon. This recipe makes sure everyone gets a chance at the piece of bacon. I love to use the thick cut bacon to make it worth it even more.

Substitutes and Variations:

While I prefer the navy beans- small white beans, you can use pinto or kidney beans if you already have them or prefer them.

Suggestions for Sides:

This is the perfect side for any type of grilled or bbq or smoked protein. Chicken, beef, pork….all of the options and you are good. If you have a great mustard-based potato salad and some fresh fruit, you have the perfect plate.

Tools that may make this recipe easier:

You will obviously be needing a dutch oven to make these beans, per the recipe. I suggest a larger one – I prefer a 6qt enameled cast iron dutch oven. They just make things easier to go from stovetop to in the oven.

Dutch Oven Baked Beans

Easy baked beans made in a Dutch oven for maximum flavor.

Cook Time 1 hour 15 minutes

Equipment

Ingredients

  • ½ lb Bacon cut in ½-inch pieces
  • ½ Sweet Onion minced
  • 4 15oz can Navy Beans 2 drained, 2 undrained
  • 1 15oz can Tomato Puree
  • ½ cup Beef Broth
  • ¼ cup Honey
  • ¼ cup Yellow Mustard
  • ¼ cup Worcestershire Sauce
  • ¾ cup Brown Sugar
  • 1 tbsp Cornstarch
  • 1 tsp Parsley
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 1 tsp Chili Powder
Get Recipe Ingredients

Instructions

  • Preheat oven to 400deg.
  • In a dutch oven over medium-high heat, add bacon. Cook until crispy. Add onions and saute for 3 minutes.
  • In the same pan , reduce the heat and add beans (two cans should be drained of liquid and two should have liquid), beef broth, and tomato puree. Bring just to a bubble.
  • In a small bowl or measuring cup, combing remaining ingredients then add to the dutch oven. Stir to combine.
  • Cover the dutch oven with the lid and place on center rack of the oven. Bake for 40 minutes. Let cool about 5 minutes before serving.

What’s been going on at Homemade on a Weeknight?

I hope all had a wonderful and blessed Easter Sunday surrounded by delicious food and family! We finally did it! We got out little teo person hot tub leveled, set up and are able to soak our aching bones in it. We have had a hot tub for the last 6 or 7 years. For the last year and a half living in Montana we have not had the time or energy to set it up, as well as the extra funds. Everything we add to our property comes with extra expenses like electrical hookups and water. But we have finally done it and it is glorious! And the view isn’t too shabby either! What’s your luxury treat yourself type thing?

When it comes to red sauce everyone has their own favorite. Whether it is a homemade version or a popular jarred version, you can use it in so many more ways than just a pouring it over some spaghetti noodles. I, personally, like to make several jars of sauce each summer using fresh tomatoes, onions, basil and garlic from the garden. But this is not an Ina Garner thing – you can use your favorite variety of red sauce, prepared the way you want it for any of these recipes. In an effort to help you try lots of different recipes, I have put together a collection of recipes using Red Sauce – 10 Ways for you to check out.

A few key kitchen tools you may want to have to hand when it comes to making these Red Sauce Recipes:

  1. 13×9 Baking Dish – using a glass baking dish for the casseroles in the collection is ideal. You get the perfect size vessel to be spred out enough to bake evenly and cook through.
  2. Everyday Pan with a Lid – you will need a 12-14inch pan to make the one pan recipes on this list.
  3. 4oz Ramekins – a few of these recipes use the red sauce for a “dip” and these small cups are perfect for serving up enough sauce to dip into.

Sausage & Spinach Stuffed Shells – Pasta is a perfect place to start when making weeknight dinners. You can add in some sauce, protein, and cheese for a delightful hearty meal. These Sausage & Spinach Stuffed Shells are an excellent way to get spinach into your families diet. This dish is also so beautiful when you prep it in concentric circles in the large round pan.

Supreme Pizzadillas

Pizzadilla Supreme – I can be indecisive sometimes – do I want pizza…do I want quesadillas? How about both of them made into one amazing meal. My favorite type of pizza is red sauce with Italian sausage crumbles, pepperoni, bell pepper and red onion – so that is exactly what I put in these Pizzadillas Supreme. Along with this super easy homemade Marinara – perfect for dipping.

Baked Ravioli – Some times you want the big yummy flavors of a Sunday Supper on a weeknight but you just don’t have the time. That’s when what I like to call “semi-homemade” dinners come into play. By using a few short cuts, you can make this Baked Ravioli, with all the layered flavors of a fancy lasagna in a fraction of the time.

Baked Meatball Subs – I love a good sandwich for dinner. Hot sandwiches are easy to eat and make too. These Baked Meatballs Subs give you all the joys of a good deli sandwich right from your home kitchen. By using three types of cheese you get a little extra pizzazz for very little effort. I’ve included my recipes for meatballs and red sauce – which you could use in lots of different recipes too.

Sausage Stuffed Manicotti – While this dish may look like it takes a long while to get put together, it really is simple. You make the sauce right in the baking dish and let it cook along with the pasta. And once you have it all in the dish, you let the oven do all the work. This cheesy sauce pasta bake is going to make you feel like you cooked all day with minimal effort. Sausage Stuffed Manicotti is going to be a regular in my monthly rotation, and I am sure it will be in yours too!

Stuffed Crust Pizza– Pizza Night is one of my family’s favorite dinner events. We have one most weeks, and not just on Friday. Once I learned how easy it could be to make pizza dough from scratch, I never turned back. Homemade pizza is one of my “always on hand” dishes because all you really need is flour, yeast, tomato puree, and cheese. The seasonings are all things that should be in your pantry all the time. Every so often, I like to add that something extra and make a Stuffed Crust pizza as a special meal, and it’s easier than you think

Pizza Rolls with dip– Snack time is not to be ignored in our house. Whether its the #afterschoolsnack or the mid day weekend snack, I like to play with different snack ideas. My latest snack comes in the form of these delectable Pizza Rolls with dip. Think savory cinnamon rolls, and you got exactly what this recipe is all about. The wonderfully gooey cheesiness with the zest of pepperoni pizza rolled up and served with a super easy red sauce for dipping.

Chicken Parm Meatballs & Spaghetti

Chicken Parm Meatballs & SpaghettiIf you are not using ground chicken on a regular basis than you are really missing out. Many think it is too lean so it becomes dry but there is a very simple fix for this – dried minced onions! Individual French Bread Pizzas – My favorite part of French bread pizza is the crispy edge of the outer crust. When you make them out of a whole bit loaf of French bread, only some of you get to have that crunchy bite. So I decided to give everyone the whole experience by making them individually. These Individual French Bread Pizzas are so easy to make, you will definitely want to add them to your menu rotation.
