Every kitchen needs some cool gadgets to make things run smoother, work better or just plain make life easier. This week I want to share a few things that I {ACTUALLY} bought on Amazon and just love! Whether you are looking for some gift ideas for the home cook in your life or just want to treat yourself to something fun for your kitchen set-up, I hope you will come back each week to see what else I found. And yes – of course – these are some affiliate links in the post.


Vertical Skewer/Stainless Steel Pit Stand – I had always wanted to be able us make al pastor or spit style Mediterranean meats but never really know how I could do that without a big huge unit that makes enough food for a restaurants’ full day of service. Until I saw this amazing little unit that makes just enough for a family dinner. You can also use it for making a whole chicken or even cornish game hens or quail!

PRO Duxano Pots & Pans Set – if you have been following along, you know that my family has been living in a camper for the last 8 months while we turn our bare 20 acres in rural Montana for our forever home. This means tight quarters all the way around. These pans with a removable handle are an incredible space saver. The 3-ply construction makes these a wonderful set for any kitchen – camber or otherwise.

3-Piece Large Cutting Board Set – cutting boards are so super important for home cooking. And it’s so useful to have a variety of sizes – because sometimes you are breaking down an entire pork tenderloin and sometimes you just need to wedge a lime. I really like these boards because they are lightweight and they have the juice groove – so that anything juicy doesn’t just flow all over the countertop.


64 oz Mason Jar with Pour Lid – My Family loves to have sweet tea and fresh lemonade. These mason jars are perfect for making sun teas as well as flavored lemonades like my Mixed Berry Sparkling Lemonade. The spout will work on any wide mouth mason jar.

Citrus Juicer – I love to use fresh squeezed juice in many of my marinades and homemade dressings. While the big mechanical juicing machines are great when you are going to make a large amount of juice, they aren’t great for when you need a few tablespoons. That’s when I pull out the hand juicer like this one. It has sturdy construction and works really well.

My Review:

My favorite thing about this book is that it is realistic. Jill shares real-world experiences and attainable goals. She knows that no one can just flip a switch and become “Old-fashioned on Purpose.” But rather, she gives you a variety of options as well as a plethora of detailed information on achieving those goals. Her assertions are backed by researched data. So she doesn’t just give you the what and the how but also the why. Jill narrates this audiobook and does it in a cheerful but not sugary tone. She directs to the accompanying pdf as needed and reads the book as it is written.

Chili Lime Grilled Chicken

This is one of those recipes that really hinges on the preparation steps. The marinade you create for the chicken is the main key to success when it comes to grilling up moist and tender chicken. But it is worth every extra moment when you sink your teeth into this succulent Chili Lime Grilled Chicken.

There are lots of ways to use this chicken. But one really clutch method is to make one or two extra breasts and let them cool all the way while you eat dinner. Then, you can use them over the next week to make lunches like a southwest salad or chicken quesadilla or burrito. You can meal prep some rice bowls, too. The flavor is excellent and doesn’t need much added for a delicious lunch.

Substitutes and Variations:

If you want to add a little more zip, you can add in some cayenne powder. If you do not have fresh lime, you can use a bottle of lime juice. Just increase the amount to make up for the lack of zest. You can also use a product like True Lemon Crystallized Lime, if you can locate it.

Suggestions for Sides:

As I mentioned above, you can use this grilled chicken for lots of things. I most recently used it to make chicken burritos. I filled an extra large burrito with my slow cooker black beans, easy tomatillo sauce, cilantro lime rice, cheese, avocado, and sour cream. It was delicious – not to mention a hearty – dinner option. You can use it on sheet pan nachos, a chicken taco pizza, taco salad, or burrito bowl.

Tools that may make this recipe easier:

You will need a zester or microplane to get the lime zest off the limes. You can also use a hand juicer for juicing the limes. I also suggest using gallon sized zippered bags to marinate the meat. I personally prefer the freezer bag variety, as they are thicker and less likely to get a puncture, making a huge mess of the liquid contents.

Chili Lime Grilled Chicken

A deliciously spicy and tangy marinade to make tender and moist grilled chicken.

Cook Time 20 minutes

Ingredients

  • 8 Chicken Breast, thin-sliced boneless, skinless
  • cup Oil
  • 1 cup Chicken Broth
  • 2 Limes juiced and zested
  • 1 tbsp Chili Powder
  • 1 tsp Salt
  • 1 tsp Garlic Powder
  • 1 tsp Cumin
  • 1 tsp Onion Powder
  • 1 tsp Pepper

Instructions

  • In a gallon sized-zipper bag, add all ingredients EXCEPT chicken. Mix around until fully incorporated then add Chicken and seal bag. Place in refrigerator to marinade for at least 30 minutes (up to 24 hours).
  • Preheat grill or grill pan to medium-high. Once hot, place chicken breasts on grill, reserve marinade. Brush each piece with marinade and cook for 10 minutes. Flip each piece and brush with marinade again. Cook another 10 minutes. Discard remaining marinade.
  • Remove chicken from grill to a cutting board. Let rest for 5 minutes before slicing on the diagonal.

This last week, we had to take our youngest over to Helena for an event. We had some time to fill and decided to wander around the Capitol of Montana. We visited the most awe-inspiring cathedral as well as the Capitol building. We also visited the wildlife center and a local park. It was a lovely day.

Green Chile Pork & Eggs

Not all egg dishes have to be for breakfast. Eggs are an amazing source of protein and can really stretch a meal (and budget) when the freezer is running low on meat options. This particular recipes combines some ground pork with the eggs to make a delicious bite with a little bit of heat from the green chilies. Whether you make this for breakfast or dinner, your going to love this quick easy meal of Green Chile Pork & Eggs.

I have included my own recipe for taco seasoning at the bottom of the full recipe. I make this in larger quantities and store it in a mason jar next to my other spices. We use it often. It is great to add more flavor to a simple cheese quesadilla or flavor your eggs or make quick marinades for chicken or beef. Having it on hand helps to keep me from reaching for a packet in a pinch. That said, use the packet if you are in a pinch. I do try to stick to the low or less sodium versions as thats the biggest issue with the pre-made mixes.

I have used pork in this, but ground beef or ground turkey would be just fine, too. If you want to add more heat (green chilies are relatively mild), you can substitute for a can of diced jalapeños or just use your favorite hot sauce.

Green Chile Pork & Eggs

A play on the classic Mexican dish called Migas – this ground pork and egg dish comes to life with the flavors of green chiles.
Course Breakfast, Dinner
Cuisine American, Mexican, Tex-Mex
Keyword cheesy eggs, colby jack, corn tortillas, eggs, green chile, green chilies, ground pork
Prep Time 10 minutes
Cook Time 25 minutes
Servings 6

Ingredients

  • 18 Corn Tortillas cut into 6 triangles
  • 12 Large Eggs beaten
  • 2 lb Ground Pork
  • 3 tbsp Taco Seasoning see recipe below, divided
  • 2 4oz can Diced Green Chiles
  • ½ cup Oil
  • 3 cups Colby Jack Cheese shredded
  • 1 tsp Salt
  • 1 tsp Pepper
  • 4 stalks Green Onion chopped
Get Recipe Ingredients

Instructions

  • Preheat oven to 400degF.
  • In a large bowl, add tortilla triangles with oil and and one tablespoon of taco seasoning. Toss to evenly coat. Then turn out bowl on to a baking rack over a baking sheet. They do not need to be in a single layer as they are just getting toasty (not making chips!)
  • In a large saute pan over medium high heat, add ground pork and sprinkle with remaining taco seasoning. Remove from pan and keep warm.
  • Place tortillas into oven and bake for 10 minutes.
  • Add beaten eggs to the same saute pan, reducing the heat to medium. Sprinkle with salt and pepper. After 90 seconds of cooking, add one of the cans of green chiles and half of the cheese. Continue to stir and cook until desired doneness (slightly runny is better).
  • Add a layer of the baked tortillas to a shallow wide bowl or plate. Top with some of the ground pork, a sprinkle of cheese and a portion of the eggs. Add a few more pieces of tortillas, another sprinkle of pork and cheese. Spoon the some green chiles over the top and sprinkle with green onions. Repeat with remaining servings.

Simple Baked Beef Roll-ups

Sometimes you need a super easy, simple to through together, budget-friendly recipe to add to your weekly dinner menu. You can’t get much easier than some flour tortillas and ground beef, with a little bit of pantry staples. These Simple Baked Beef Roll-ups are great for those super busy weeknights. They can would also be a great recipe to have one of the teens put together for the whole family for those nights when you might have a parent-teacher conference, committee meeting or other club even.

These roll-ups can be lunch or dinner. They can be on their own or with some rice and beans. I like to make a quick pico de gallo and serve them with some sour cream. You can so make a bunch of them ahead of time and then reheat them for lunches. Just wrap in damp paper towel and heat for one minute.

Substitutes and Variations:

You can use ground turkey or chicken or even pork in the place of the ground beef. Just be cautious of the fat content (ground turkey and chicken will need some extra fat – butter or oil – added). You can use corn tortillas in place of the flour, but make sure to warm them up as you make the roll-ups, to minimize tearing.

Suggestions for Sides:

As I mentioned above, these go great with rice and beans. You can do cheesy pinto beans or slow cooked black beans. And you can a Mexican style rice or cilantro lime rice. They are good dipped in sour cream, or queso or Chipotle Ranch.

Tools that may make this recipe easier:

You will need a baking sheet with a baking rack. The baking rack allows the hot air in the oven to circulate on all sides of the roll-ups and get them crispy. If you place them directly on the rack, the top side will be crunchy, while the bottom side is soggy.

Prep Time 10 minutes
Cook Time 45 minutes
Servings 20 rolll-ups

Ingredients

  • 20 Flour Tortillas, fajita-size
  • 2 lbs Ground Beef
  • 2 tbsp Taco Seasoning see recipe below
  • 2 tbsp Corn Starch
  • 2 cups Beef Broth
  • ½ cup Oil

For Garnish, if desired

  • Sour Cream
  • Green Onions chopped
  • Sriracha or Taco Sauce
Get Recipe Ingredients

Instructions

  • Preheat oven to 425degF
  • In a large saute pan over medium high heat, add ground beef. Cook and crumble until no longer pink.
  • Combine cornstarch, taco seasoning and beef broth in a large measuring cup. Pour over ground beef and bring just to a bubble. Reduce heat to medium low and let simmer until thickened.
  • Fill each tortilla with a about 2 tablespoons of beef mixture. Roll up tightly and spray with cooking spray.
  • Line out on rack on a parchment paper lined baking sheet. Bake for 15 minutes then turn each and cook another 10 minutes.
  • Serve with desired garnish (sour cream, salsa, hot sauce, green onions)

Slow Cooker Black Beans

I am always saying, “You can’t forget about the sides,” and this recipe makes it so easy to remember! Whenever I’m making a meal with a Mexican flair, I love to include these super easy to make Slow Cooker Black Beans. They have so much flavor to the plate and are actually quite good for you. Black beans are backed with nutrients and fiber, making them heart healthy and hearty. These beans are also great to bring along for a taco bar pot luck.

Don’t worry, you didn’t read the time wrong – these beans do need to sit overnight. Since you are starting with dried beans, you have to give enough time to rehydrate them fully before putting any heat on them. I like to take the opportunity to start infusing the flavor while rehydrating by adding the seasonings and broth right away. I have made these beans with canned black beans – and it’s still good but not as amazing. Also, if you use canned, make sure you cut the salt elsewhere – like no salt added broth or taco seasoning.

Substitutes and Variations:

I’ve included my recipe for taco seasoning at the bottom of the recipe card. I keep a big mason jar of this on my spice shelf all the time – so it’s easy to add. You can use any taco seasoning you prefer from a bottle or packet. Generally speaking, if you use a packet or pre-made seasoning mix, be cautious about salt levels. If you want to kick up the heat, you can swap out the green chilies for a can of diced jalapeños.

Suggestions for Sides:

These easy black beans are perfect alongside tacos, enchiladas, or fajitas. You can use them in a rice bowl or in a burrito, as well. They go great with cilantro lime rice – just make rice as usual and add lime juice and chopped cilantro while fork fluffing just before serving.

Tools that may make this recipe easier:

You will need a decent sized slow cooker for this recipe. I like the oval sized 6 qt unit. You will also need a good vegetable smasher. You can use the back of a spoon but the smasher does work better.

Slow Cooker Black Beans

While this is an overnight recipe, it really is worth the extra effort to have smooth and flavor packed black beans.

  • 2 cup Dried Black Beans
  • 6 cups Water or Broth more as needed
  • 2 tbsp Taco Seasoning see recipe below
  • 1 tbsp Dried Minced Onion
  • 1 tbsp Tomato Boullion
  • 1 7oz can Green Chilies

Instructions

  • In a large slow cooker add dried beans, taco seasoning, onion, boullion and water (or broth if using). Cover crock and let sit over night.
  • In the morning, add green chilies. If there is no water left (it was all absorbed by the beans), add 2 cups of water or broth. Replace the lid and let cook on low for 8 hours.
  • Around the 4 hour mark, check for moisture levels. If it is looking dry, add one cup of water. This is also the time to start to mash the beans some.
  • In the last hour, again check for moisture level and mash the beans some. This is the time to taste test and add salt if needed.
  • The beans should be soft enough to smush but still have enough body to maintain shape.

What’s been going on at Homemade on a Weeknight?

One of the most amazing things that has ever happened on our fledgling homestead happened this last week. One of our hens that we brought all the way from Oregon hatched out 15 – yes fifteen! – baby chicks underneath one of our campers. We had been concerned that she was broody for no reason as we couldn’t actually tell what she was sitting on under there. Thinking maybe she might hatch one or two eggs, we let her be. She went into the meditative state this last week and never left her clutch. Finally on the Fourth of July – my hubs and pup heard the peep peep peeping and went to investigate. And they found 15 little chickies flooding out from the feathers of this proud mama hen. Its incredible!

A Collection of Egg Recipes

Eggs are a main staple of my households food intake. And not just because we raise chickens (currently, we have about 2 dozen chickens just for laying eggs). We have always had an egg heavy eating habit. They are just so good, an amazing source of extra protein, and so versatile. You can simply fry them up in a little bacon grease with some salt and pepper, or you can kick it up a notch and make them into a full-on mean. And not just for breakfast – lunch and dinner can be egg centric too! I have pulled together nearly two dozen of my most popular Egg Recipes that I’ve shared over the years. Which one will you try first?

My favorite Recipes Using Eggs

A few key kitchen tools you may want to have to hand when it comes to making these Egg recipes:

  1. WHISK – whether you prefer a French whisk (the thin metal (sometimes silicone) cage style) or a Dutch Whisk (flat thicker wire style), you almost always need a whisk on hand when eggs are on the ingredients list.
  2. Strainer Spoon – when it comes to boiling eggs – a strainer spoon can be the difference between cracked shells and not cracked. The main holes in the spoon help make it easy to gently lower the eggs into the boiling water, as well as remove them at the end.
  3. 13×9 Baking Dish – a few of these recipes are made in a glass Baking dish.

These tacos are simple with just a few ingredients but it all comes together for a fantastic bite. Chorizo & Egg Tacos are a must for your next Taco Tuesday!

Smoked Deviled Eggs

Smoked Deviled Eggs – While I’m sure many have had the classic deviled eggs and thoroughly enjoyed them, you may not have heard about Smoked Deviled Eggs. By smoking the eggs on your smoker (like my trusty Traeger Grill) instead of boiling them, you get a delicious layer of flavor you may not expect from something as small as a humble egg.

With the combo of beans, pork, bell peppers, cheese, and eggs, you are going to love this recipe for Mexican Breakfast Bowls.

Grilled Pork Ramen with Bok Choy

Grilled Pork Ramen with Bok Choy – Making a real bowl of ramen at home is super easy and a great way to use up what you have on hand. One of the most wonderful things about ramen is that you can put together all sorts of different veggies and meats to create a delicious bowl – so you can really clean out that veggie drawer in the fridge! This go around I decided that I wanted to use up some pork chops, so I made Grilled Pork Ramen with Bok Choy.

Blackstone Breakfast Quesadillas

Blackstone Breakfast Quesadilla – This quesadilla has a whole breakfast melted together in a cheese filled tortilla. Plenty of eggs, bacon, ham and sausage mixed together to make the ultimate Blackstone Breakfast Quesadilla. This recipe will work for breakfast, lunch or dinner. It is also a great family gathering breakfast (like a holiday), as it can easily feed an army fairly easily.

These burritos are excellent for breakfast, lunch and dinner and even an afternoon snack. Loaded with lots of protein they are going to make everyone in the family happy. Which is why I call this recipe the Happy Pig Breakfast Burrito.

Southwest Egg Salad

Southwest Egg Salad – As most of you know, we raise our own chickens for both meat and eggs. With it being the colder months, we do tend to get a few less eggs but still have enough. Most everyone in our family enjoys having an egg salad sandwich for lunch or a snack and we do try to make it a little bit different every now and then. Most recently, I had some leftovers from the corn salsa that I used to make some tacos and opted to chop them up and add them to my egg salad. The addition of cilantro, red onion and jalapeno made for a delightful Southwest Egg Salad.

Bacon, Egg & Cheese Biscuit Bake – Whether you are on the hunt for an easy breakfast, brunch or dinner recipe – you came to the right place. This Bacon, Egg & Cheese Biscuit Bake is quick to put together and takes very little attention. It also keeps very well so you could make it ahead for a baby shower or potluck. With lots of bacon and cheese – you are going to want to keep these ingredients on hand to make this regularly.

Classic Egg Salad – We have a mixed flock of backyard egg laying chickens. Which means that every so often we get an over abundance of eggs. It goes in waves with the seasons and with the types of meals we are making around the house. Every time we fill up both of our egg containers (about 4 dozen), I turn to this Classic Egg Salad recipe to use them up in a very delicious dish. I call it a classic because it really does pull in the traditional flavors of mayonnaise, mustard, pickles, dill and paprika.

BEC Pizza – We love our pizza around here, but sometimes we really need to switch things up and try something a little different. So what make a pizza a pizza? In my house, it’s a crust (dough, cauliflower or even chicken), with a sauce or soft cheese, ingredients (meat and/or veggies) topped with more cheese. And by this definition, this BEC Pizza is definitely pizza. The Bacon Egg and Cheese classic flavor profile lends itself perfectly to a quick weeknight pizza.

Jalapeno Dill Deviled Eggs

Jalapeno Dill Deviled Eggs – Whenever I think of deviled eggs I think of those plain old paprika covered bites you got on the holidays at a family members house. What’s amazing is they are usually pretty good, but I say they can be better. Eggs are such a easy flavor to work with, you can combine them with so many things. Like these Jalapeno Dill Deviled Eggs – a little spicy kick along with the freshness of dill. Just be careful bringing them to the next function – because you will be asked to bring them every time!

Cheesy Tater Tot Casserole

Cheesy Tater Tot Casserole – This is one of those recipes that works as a great weekend breakfast or a great weeknight dinner. With a good combo of bacon, sausage, cheese, eggs, and potatoes – you have all of the best parts of a solid hearty meal. Cheesy Tater Tot Casserole is filling and relatively simple to put together, making it a perfect breakfast, lunch, dinner, make-ahead, potluck, or holiday meal.
