If you are not familiar with the Tri-Tip then you are in for a real treat. The tri-tip is the boneless triangle (or tip) of the bottom sirloin. It usually has prerty decent marbling making it very tender and has that rich beef flavor you want in a roast. In general they weigh in around 2lbs. And this recipe for Smoked Tri-tip is the perfect way to prepare it!

When picking your tri-tip roast, you want to find one with good marbling throughout the meat fibers, and not just a big fat cap. You also want to try to pick on that is the close to the same thickness for the whole length of the roast. This allows for even cooking.

Substitutes and Variations:

You really can use any dry rub blend you love. When I am in a hurry and out of my pork dry rub (which I have included at the bottom of this post), I reach for Kinders Woodfire Garlic seasoning blend. It has great flavor.

Suggestions for Sides:

Since this is peak smoked meat and quintessential BBQ fare, all the usual sides need apply. Your potato salads, pasta salads, coleslaws, baked beans, and corn on the cob will work just fine.

Tools that may make this recipe easier:

Obviously, you are gonna need a smoker for this recipe. While I do support the use of a smoke box on a charcoal or propane grill, a true smoker will make a big difference. But sometimes we all gotta do what we can to make the most of our meals.

Smoked Tri-Tip

Ingredients

  • 2-3 lb Tri-Tip Roast
  • ½ cup Brown Sugar
  • ½ cup Oil
  • ½ cup Pork Spice Rub see recipe below

Instructions

  • Preheat smoker to 225degF.
  • Add oil, brown sugar and spice rub to a plate. Use a fork to combine.
  • Press each side of Pork into the seasoning mixture to evenly coat the roast.
  • Place the roast directly on the grate of your smoker. Smoke for 4 hours.
  • Remove from smoker and wrap in foil, and let rest for at least 30 minutes before slicing to serve. NOTE: For the best result be sure to cut against the grain and use a meat slicer.
  • Serve hot or cold, with or without sauce.

Pork Spice Rub

A simple but super flavorful rub recipe that is mostly geared for use on grilled or smoked pork

Ingredients

  • ¼ cup Brown Sugar
  • 3 tbsp Onion Powder
  • 3 tbsp Garlic Powder
  • 2 tbsp Paprika
  • 2 tbsp Salt
  • 1 tbsp White Pepper

Instructions

  • Combine all ingredients in a bowl or jar. Use right away or store in an airtight container.
