If you are a fan of the classic Mexican Street food Elote then you are going to really like this corn salad. While this is not exactly elote – it takes a lot of the flavors of the hand held snack and put it into a refreshing salad. A simple but impactful Mexican Street Corn Salad is going to be a great additon to your plate.

It you are not familar with the seasoning blend called Tajin – you are going to be a fan after this recipe. This Chili and lime centered spice is so good on so many ingredients. It can be a little salty so be sure to use it sparingly. You also will want to try it on some fruit – it is such a fun kick against the sweetness of melons and citrus.

Substitutes and Variations:

If you do not want this to be spicy at all, you can omit the diced jalapeños. It is still quite good without the peppers included. I prefer to use canned sweet corn but you want also use frozen corn. You could also use white corn in place of the yellow corn.

Suggestions for Sides:

This is so good for any type of Mexican meal. You can also serve it up with BBQ, grilled meats or backyard party. It goes great with spicy buffalo chicken wings.

Tools that may make this recipe easier:

I suggest using a good whisk to bring the dressing together. It is the best way to be sure that fully incorporate the flavors.

Mexican Street Corn Salad

Turn the classic flavor profile of Elote into a delicious side salad made of corn.

Ingredients

  • 2 15oz can Sweet Corn drained
  • 1 Jalapeno diced
  • 4 stalks Green Onion chopped
  • 1 cup Grated Parmesan
  • ¼ cup Fresh Cilantro chopped
  • ⅓ cup Avocado Oil
  • ⅓ cup Lime Juice
  • 2 tsp Tajin Seasoning
  • 1 tsp Garlic Powder
  • 1 cup Mayonnaise
  • ¼ cup Honey

Instructions

  • In a small bowl or mason jar, combine mayo, oil, lime juice, honey, cilantro and seasonings. Stir or shake until fully combined.
  • In a bowl, combine, corn with remaining ingredients. Pour dressing over top and toss to coat. Cover and place in refrigerator until ready to serve (at least 30 minutes – up to 24 hours).
