A little about me – I’m a WFH Wife and Mom. My husband, four kids, 5 dogs and 15 chickens all currently live in the PNW, but we are embarking on a cross country move to Big Sky Country over the next 3 months to live out our dreams of being Homesteaders! Like the name implies – I love to make homemade meals every night of the week for my family. I care about what types of things we are eating and I like to try new things. This blog is all about sharing those journeys and adventures with you.

Smoked Mac & Cheese

There are so many many ways to make a fantastic mac & cheese. You can use different types of cheese, different types of pasta and different methods of cooking. To make this Smoked Mac & Cheese, we will use the classic style of mac and cheese and then put it in the smoker to take it up a few notches.

Smoked Mac & Cheese

The basic steps for making this mac & cheese are simple. Make rue into a creamy cheese sauce, then add it to cooked pasta. Then you transfer it to a foil 8×8 pan, add more cheese on top and cover with foil. When you place the tray into the smoker and let the cheesy sauce soak up all that smokey flavor, you are going to be thrilled with the final result. This is an excellent side dish for a long smoked meat – like a pork butt, ribs or even a tri-tip. It is so easy to just add the pan to the smoker in the last hours of the cook time.

Smoked Mac & Cheese

For this recipe, I kept it basic with medium and sharp cheddar cheese. If you want to take things a step further you can us some gouda, or provolone or mozzarella. Once important thing to note when smoking cheeses is to stay away from funky or stinky cheese. When you smoke those sorts of cheese, they can turn rather bitter or take on an acrid quality that can make the smoky quality overpowering. Using milder cheeses will allow for a smooth smoke flavor.

Smoked Mac & Cheese

You will notice in the recipe, it is listed to let the pan rest with the foil on it for several minutes. The purpose for this is to allow the cheese that may have attached to the foil to fall back onto the pasta. This way you don’t lose those extra cheesy bits that really make this side dish. When it comes to what to serve this with, there are lots of things that it will be so good with Most recently, I made this as the side for Smoked Meatloaf and it was such a great combo.

Smoked Mac & Cheese

A fantastic side dish for dinner or lunch with a creamy cheese sauce and loaded with smokey goodness

Equipment

Ingredients

  • 1 lb Small Shells Pastas
  • 2 cups Cheddar Cheese shredded

For the Cheese Sauce

  • 4 tbsp Butter
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 4 tbsp Flour
  • 2 cups Milk
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 tsp Paprika
  • 1 tsp Ground Mustard
  • 1 cup Heavy Cream
  • 3 cups Sharp Cheddar Cheese shredded

Instructions

  • Start water boiling for the pasta. Preheat Smoker to 250degF.
  • Add pasta to boiling water and cook as directed on the package. Drain in a colander and return to pot away from heat.
  • In a sauce pan over medium high heat, add butter, onion powder and garlic powder. Once melted whisk in flour. Let cook for two minutes then whisk in milk and let cook for two minutes then whisk in seasonings and cook another two minutes. Whisk in heavy cream and cook another two minutes. Then add in sharp cheddar cheese, a handful at a time, whisking until it's melted in.
  • Add cheese sauce to pasta. and stir to thoroughly combine.
  • Transfer mac & cheese to a 9×9 smoker safe dish (foil) and sprinkle with cheddar cheese. Cover with a sheet of foil. Place in preheated smoker. Let smoke for 3 hours. Remove and let rest for 10 minutes before removing the foil to serve.

Spring has officially sprung, and I really wish someone would tell the thermometer since it’s still in the 40s during the day and into the 20s at night! I really want to get my garden planted, but until we are at our last frost, it’s just not smart. Have you been able to get your garden going for the year? My Best Crispy Fried Recipes

When it comes to crispy and fried recipes, I have got quite a few. I do love to make things that have a great crunch. A lot of the crunch comes from the dredging method. You can got for the three stage flour, egg wash, breading method. Or you can go for a wet soak into a flour/baking soda/cornstarch method. There are so many different ways to have a great crispy fried meal, and I have put together a few of my favorites!

My favorite Recipes Using Ground Turkey

A few key kitchen tools you may want to have to hand when it comes to making these shrimp recipes:

  1. Cooling Rack – When you are frying things, you need to be able to drain off the oil without losing the crispiness. Cooling racks allow this to happen by giving air flow a chance.
  2. Extra Long Tweezers – When you are frying things, you need to have a good set of tongs to make sure you can easily move around the frying pieces of food in the hot oil or butter. A set of extra long tweezers does less damage to the breading layer in the long run.
  3. Dredging Station – This set of trays really helps you to minimize the waste that happens by using larger plates. The taller sides of these trays also makes for less mess.

Chicken Fried Chicken Sandwich

Chicken Fried Chicken Sandwich – Crispy chicken sandwiches are always a great meal – for lunch or dinner. They are pretty simple to make and can have excellent results. For this particular chicken sandwich, I used my typical technique for making chicken fried steak and replaced the cube steak with a boneless skinless chicken thigh. The result is this fantastic Chicken Fried Chicken Sandwich, that your family is bound to request again and again.

Crunchy Shrimp Tacos

Crunchy Shrimp Tacos – Tacos are at the top of my favorite meals, not just to eat but to make. I have so much fun creating each of the components that it takes to make the best bite. These Crunchy Shrimp Tacos have layers of flavor from the fresh slaw, sriracha mayo, cojita cheese and of course the crunchy shrimp that have a little kick from some cayenne.

Crispy Pork Katsu

Crispy Pork Katsu – There are a number of delicious ways to enjoy a pork chop, but I think my very favorite just might be a Crispy Pork Katsu. It is a flattened boneless pork chop that is then panko crusted with the flavors of ginger and garlic. This recipe is a demonstration in seasoning every step of cooking. By adding flavor to each step of the dredging process, you get a tender and juicy pork chop.

Classic Orange Chicken

Classic Orange Chicken – Adding to my ever growing list of Chinese takeaway at home recipes, this recipe is a classic! This time around, I am tackling the crispy chicken coated in a delicious orange sauce with an Asian flair and little kick. Classic Orange chicken is a staple on almost any American Chinese food menu and going to be one you will want on your meal rotation for sure!

Fried Pork Sandwich

Fried Pork Sandwich – A few weeks ago, I was inspired by a fellow food blogger to make pickled mustard seeds. I didn’t even realize this was a thing outside of stone ground mustard. It was so super easy to make, it’s almost funny. But then I had to sort out how to use them. I have lots of ideas. But the first one I wanted to get to was this – Fried Pork Sandwich. It’s a breaded and crispy fried pork chop with marinated onions, cabbage, carrots and a special sauce all on a nice crispy baguette.

Crispy Shrimp Rolls

Crispy Shrimp Rolls – When you want to have a little bit of fun and little bit of indulgence with your dinner – shrimp is always a good idea, especially when it is crispy. This is also a great weekend dinner to enjoy in the backyard once summer hits. These Crispy Shrimp Rolls will have the whole family chowing down with delight.

Crispy Oven Fried Chicken

Crispy Oven-Fried Chicken – I know what you are thinking – Crispy and Oven-Fried sounds like an oxy-moron….but you would be wrong about this recipe. I have worked on this recipe for a while and I believe I finally nailed it! My Crispy Oven-Fried Chicken was a huge hit – my husband ate SEVEN pieces by the end of the night.

Classic Chicken Fried Steak

Classic Chicken Fried Steak – Whether it’s for breakfast or dinner, chicken fried steak is about as comforting as comfort food gets. The delicious crispy breading on a tenderized steak, fried up in some butter – dang I’m making myself hungry! If you have never tried a Classic Chicken Fried Steak before, you are in for a real treat with this recipe. Whether you are making this for Sunday supper or Saturday Brunch, it will be the star of the show.

Bacon Cheeseburger Chimichangas

Bacon Cheeseburger Chimichangas -Not every Burger Night needs to be a traditional burger. You can take the classic flavors of a good burger – cheese, bacon, fry sauce – and put them into a different “vessel” to change things up. Burgers are one of those meals that most everyone loves but they can get a bit repetitive if you make them the same every time. That’s where the idea for Bacon Cheeseburger Chimichangas came from. We wanted burgers but not.

Crispy Buffalo Chicken Wraps

Crispy Buffalo Chicken Wraps – Some times dinner just needs to be a wrap. It’s easy to make, easy to eat and easy to clean up from. You can turn lots of different things into a wrap or burrito or roll-up – whatever you prefer to call them. This particular wrap puts lots of veggies into a tortilla with some crunchy crispy chicken and kicks up the heat with the addition of spicy buffalo sauce. These easy to make Crispy Buffalo Chicken Wraps are a great idea for a a weeknight dinner.

Cheesy Bacon Corn

Having a good rotation of side dish recipes is just as important as having some good main dishes recipes. And while often the side dish might look like a simple steamed veggie, or a bagged salad mix. Occasionally – like when the main course is a fairly easy preparation – I like to spend a little extra time on the side dish. And that’s how this delicious recipe came to be! I was making smoked chicken and potatoes, which is essentially putting chicken and potatoes on the smoker for most of the day. So I went the extra step with the side dish and made Cheesy Bacon Corn – and it was the star of the plate for sure.

Cheesy Bacon Corn

With just a few simple ingredients, you can make a really tasty side dish. A couple of things about those ingredients to note. It is important that you use GRATED parmesan cheese, as in the finely grated variety. If you use the shredded version, it is not going to make the same “sauce” effect that this recipe is looking for. I use sweet yellow corn for this. You could also use the white corn. I do suggest that you use canned corn instead of frozen corn – but that’s more of a preference thing. Last I suggest regular bacon, and not thick-cut. If you do thick-cut, it may overwhelm the corn entirely.

It’s important that you don’t skip the step of adding the bacon grease to the final dish. If you do, you will lose out two fold. One is the extra flavor that you get from adding the bacon grease. And two it’s the extra fats to make the “sauce” come together. If you have some aversion to doing this step – at least increase the amount of butter to the dish.

Cheesy Bacon Corn

A delightful side dish loaded with crispy bacon, parmesan cheese and corn.

Cuisine American

Prep Time 5 minutes
Cook Time 30 minutes
Servings 6

Ingredients

  • ½ lb Bacon
  • 3 cans Yellow Corn drained
  • 4 tbsp Butter
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 1 tsp Paprika
  • 1 tsp Garlic Powder
  • 1 cup Parmesan Cheese grated
  • 4 stalks Green Onion chopped
Get Recipe Ingredients

Instructions

  • In a frying pan over medium high heat, add bacon. Cook until crispy. Remove to paper towel covered plate and let cool. Transfer bacon grease to a sauce pan.
  • Add butter, corn, and seasoning to sauce pan with bacon grease. Place over medium heat until butter has melted.
  • Chop bacon into small bites. Add to sauce pan, along with parmesan cheese and thoroughly combine. Reduce heat to medium-low and let come together for about 5 minutes.
  • Stir in green onions just before serving.

Cheesy Chicken Beans & Rice

Beans & Rice is a great starting point for a weeknight dinner. You can work it into so many different types of cuisines depending on the types of beans, rice and or seasoning you add to the mix. For this fun one pan meal, it takes a turn to a Mexican flavor profile by adding in some green chilies and pinto beans. Cheesy Chicken Beans & Rice is an easy to make and hearty weeknight meal.

Cheesy Chicken Beans & Rice

I have included my own recipe for taco seasoning at the bottom of the recipe card. You will likely have all of these ingredients in your cupboards or pantry. If you don’t, you can find them all in the bulk bin section of your grocery or in the spice aisle. If you do not wish to put it together yourself, you can always use a pre-made packet of your favorite taco seasoning. The two keys to the final flavor of this recipe are cumin and chili powder. These are the pillars of the Mexican taste you are looking for. Cumin lends to that traditional smoky quality while the chili powder will give it a kick.

Cheesy Chicken Beans & Rice

As will most one pan meals that I come up with, you really aren’t in need of a side dish for this. If you do want to stretch the meal to have for lunch over the next week, you might add a nice southwest style salad. You could also make up some simple cheese quesadillas to have on the side. If you wanted to add a bit of fun, you could serve it with your favorite salsa and some tortilla chips.

Cheesy Chicken Beans & Rice

A flavorful and protein packed #onepotdinner loaded with pinto beans, green chilies, cheese, chicken and rice, perfect for a weeknight.
Course Dinner, Main Course

Prep Time 10 minutes
Cook Time 35 minutes

Ingredients

  • 4 tbsp Oil
  • 2 lbs Chicken Breast diced
  • ½ Large White Onion fine diced
  • 1 tbsp Minced Garlic
  • 2 cups Long Grain Rice
  • 2 tbsp Taco Seasoning see recipe below
  • 2 cans Pinto Beans drained
  • 1 10oz can Green Chilies
  • 1 quart Chicken Broth
  • 2 cups water (less if necessary)
  • 2 cups Cheddar Cheese shredded
  • 1 cup Heavy Cream
Get Recipe Ingredients

Instructions

  • In a large saute pan over medium high heat, add half of oil. Can chicken chunks and saute until no more pink is visible. Add onions and garlic and sauté 3 minutes.
  • Move chicken, onions and garlic to one side of pan. Add remaining oil to pan along with rice. Toast until golden brown.
  • Add seasoning, pinto beans, green chilies and chicken broth to pan. Stir together chicken and rice. Add just enough water for everything to be completely covered (may be less than 2 cups or but shouldn't' be more). Stir to combine and let come just to a bubble.
  • Reduce heat to medium and cover with lid. Let cook for 20 minutes. Remove lid and add heavy cream and cheddar cheese, stirring to combine. Replace lid and cook another 5 to 10 minutes. Stir to fully incorporate melted cheese.
  • Serve in a shallow bowl and a sprinkle of parsley, if desired.

What’s been going on at Homemade on a Weeknight?

My ever surprising husband and once again saved the day, and my sanity. He was able to find a wall oven that fits the space in our camper so that I can get back to baking my sourdough again. I do think he had some ulterior motives – in that he absolutely loves to eat the sourdough – but I am over the moon happy nonetheless. I have made a few loaves now and still need to work on the hydration ratio, but at least temperature control is no longer the problem. Have any of your started on the sourdough journey recently or again? How’s it going?

Things I Found on Amazon – #13

Every kitchen needs some cool gadgets to make things run smoother, work better or just plain make life easier. This week I want to share a few things that I {ACTUALLY} bought on Amazon and just love! Whether you are looking for some gift ideas for the home cook in your life or just want to treat yourself to something fun for your kitchen set-up, I hope you will come back each week to see what else I found. And yes – of course – these are some affiliate links in the post.


6qt Cast Iron Dutch Oven – This enameled dutch oven comes in so many colors that are so super pretty. I have been so thrilled with the quality of this cast iron dutch oven. I have mainly used it for making sourdough boule and it has really impressed me. The heft of the dutch oven really holds on to the heat that you want it to. I also very much love that the lid fits snuggly and allows for a good amount of heat to build up.

Digital Kitchen Scale – much of baking requires that you measure by weight over volume numbers. Since baking is a more of a science and relies on a number of chemical reactions, weight measurements for ingredients are much more accurate. A scale like this one can make the weight measuring much easier, just be sure that you tare each time you add something to hold the ingredients, as in the bowl, cup or plate.

3-Piece Large Cutting Board Set – cutting boards are so super important for home cooking. And it’s so useful to have a variety of sizes – because sometimes you are breaking down an entire pork tenderloin and sometimes you just need to wedge a lime. I really like these boards because they are lightweight and they have the juice groove – so that anything juicy doesn’t just flow all over the countertop.


Electric Mason Jar Vacuum Sealer Kit for Wide Mouth and Regular Mouth Mason Jar – as I get closer to my dream of full time homesteading, I am building up my homesteading skills as well as tools. This mason jar vacuum sealer is a game changer. When you start to make your own snacks like crackers or powdered bases and such – you need a way to make them shelf stable. This nifty little device seals the jars in just 90 seconds. Its a great tool to have in my pantry.

Grease Resistant Wax Paper for Food – I use these papers more than a few times a month, at least once a week. They are amazing with burgers, sandwiches, and tacos. They are not just great for giving the feel that you are serving up take-out or restaurant quality dishes, but also they make clean up a breeze. I will say they work best with some food baskets, but you can use them over a regular plate or bowl. They are also amazing for wrapping up burritos and wraps.

Bacon Cheeseburger Casserole

This is a casserole for when you would really like to have a burger and fries but don’t have the time to stand there and make burger and fries. What I mean is, this casserole has a very low amount of “active” cooking going on, while making fresh burgers at home requires a high amount of “active cook time. Basically you have to stand there the whole time. But this casserole gives you all the flavors without having to do much after you put it in the oven. And the whole family really loves this one. Because you get to customize the toppings just like a burger. Bacon Cheeseburger Casserole is sure to be on regular rotation.

I have included my recipe for Homemade Fry Sauce at the bottom of this post. This is what we used as the sauce on this casserole. Just like making your own burger, you can use whatever your favorite burger toppings are. So if you just go for some ketchup or mustard or bbq sauce or whatever it is that you love to layer on top of your bacon cheeseburger.

It is important that you really wrap the foil tightly around the 13×9 baking dish for this recipe. You need to be creating steam from the broth to make the potatoes nice and tender and full of flavor. If you don’t get a tight wrap with the foil all of the steam escapes and you will not have enough to cook the potatoes through. As an aside, you can use water in the place of broth if you are concerned about salt content. Using the beef or veggie broth adds a great level of flavor to the potatoes.

When I serve this, I do it buffet style. I put each of the toppings out (onion, lettuce, tomato, pickles, sauce, etc.) along side the casserole dish. Then each person can build their own plate, much like when you make burgers. This way everyone is getting what they want on their plate.

Bacon Cheeseburger Casserole

A hearty casserole loaded with potatoes, cheese, bacon and ground beef, then topped with all the burger toppings.

Prep Time 15 minutes
Cook Time 1 hour

Ingredients

  • 2 lb Ground Beef
  • 1 tbsp Dried Minced Onion
  • 2 tsp Granulated Garlic
  • 1 tsp Paprika
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 3 lb Russet Potatoes peeled and cubed
  • 1 lb Cheddar Cheese peeled and cubed
  • 3 cups Vegetable or Beef Broth
  • 1 lb Bacon
  • 1 Beef Steak Tomatoes diced
  • 1 White Onion thin sliced
  • 1 cup Special Sauce or Fry Sauce see recipe below
  • ½ head Iceberg Lettuce shredded
  • 1 cup Pickle chips

Instructions

  • In a large frying pan over medium high heat, fry bacon until desired crispiness. Remove from pan to a paper towel covered plate. Leave bacon grease in the pan.
  • Preheat oven to 375degF.
  • Add ground beef, dried minced onion, granulated garlic, paprika, salt and pepper. Cook and crumble until no longer pink.
  • Chop cooled bacon.
  • Transfer cooked beef to a 13×9 baking dish. Add cubed cheese and cubed potatoes. Then add chopped bacon and broth. Stir to combine. Cover the dish tightly with foil (double layer is better).
  • Place in oven and bake for one hour. Remove from oven and let rest for 5 minutes before removing foil. Stir to mix around melted cheese.
  • In a shallow pasta dish add a portion of the casserole. Top with lettuce, tomatoes, onions, pickles and special sauce, as desired.

Homemade Fry Sauce

A quick and simple recipe for the classic fry sauce or secret sauce, perfect for burgers, sandwiches and of course – FRIES!

Prep Time 10 minutes
Servings 2 cups

Ingredients

  • 1 cup Mayonaisse
  • ½ cup Ketchup
  • ¼ cup Dill Pickle Relish
  • 1 tbsp Pickle Juice
  • 1 tbsp Worcestershire Sauce
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 tsp Onion Powder
  • 1 tsp Paprika
  • 1 tsp Garlic Powder
Get Recipe Ingredients

Instructions

  • Combine all ingredients until smooth.
  • Place in sealable jar and store in refrigerator until ready to use. Store for up to 7 days.
