When it comes to Corn – there is no shortage of recipes from all sorts of cuisines. It can take centerstage or play a supporting roll. You can make it sweet or savory. It can be used from fresh, frozen or canned preparations. Corn is one of my favorite veggies and I have quite A Collection of Recipes Using Corn. I have pulled several of them together so you can check out some tried and true and maybe new to you Corn Recipes.

A few key kitchen tools you may want to have to hand when it comes to making these Corn Dishes:

  1. Corn Kernel Remover – if you are using fresh corn, this a great tool for getting the most corn kernels off the cobs without squashing them too much.
  2. Can Opener – many of these recipes utilize corn from a can. Some people think this is a cheater method (and they might be right) but as long as you are looking for no added salt, minimal additive canned corn, you are still getting corn at its peak flavor.

Elote Enchiladas

Elote Enchiladas – Enchiladas are a staple in my kitchen. I make them a few times a month and try to do them slightly differently each time. Much like tacos or pizza – you can get real variety by changing up the protein as well as the sauce used and the cheese types. For this recipe, I combined a roasted chicken with a creamy red sauce and the flavors of elote street corn. These Elote Enchiladas were so good – I had made extra to have for lunch the next day, and they didn’t survive the meal!

Grilled Chicken Taco w/ Beans & Corn Salsa

Grilled Chickem Taco w/ Beans & Corn Salsa -Grilled Chicken is a classic topping for tacos. So to make them a little bit more interesting lets add in some homemade corn salsa and a fun bean topping that you are going to love. By mixing black beans and pinto beans you get a great texture and punch of protein. The marinade for the chicken makes it tender and juicy – for an epic taco. Grilled Chicken Taco w/ Beans & Corn Salsa definitely need to be on your next plan for #TacoTuesday.

Homemade Cornbread Mix

Homemade Cornbread Mix – In recent months and years, I have been trying to get away from the overly processed “shelf-stable” mixes and packets that so many of us use on a daily basis. Don’t get me wrong – there is no shame in those pre-made items. I am just trying to limit how often I am using them as they do have added preservatives that we just dont need in our food. And that is how I came to decide to make my own Homemade Cornbread Mix. I love to have fresh cornbread, but recently, I tasted an oddness coming from that traditional blue box and felt it was time to tackle making my own.

Chorizo & Corn Pizza

Corn & Chorizo Pizza  – This was a pizza creation that I had to work a little bit to sell to my pizza living family. They were on board with the chorizo – a true family favorite. But the corn was a different idea for them, that they came to love immensely. This Chorizo & Corn Pizza is going to be a super fun change of pace for your weekly pizza night for sure.

Creamy Corn Pasta

Creamy Corn Pasta – Side dishes are so important so often over looked with it comes to meal planning. This usually leads to them becoming an afterthought, resulting in a side dish rut. So many people serve basically the same side dishes over and over, only changing up the main! Don’t be like those people – please I’m begging you. Keep your side dish game on point and use my recipe for Creamed Corn Pasta.

Spicy Creamy Corn Slaw

Spicy Creamy Corn Slaw – For this recipe, I have used canned corn. This is a personal preference for me. Since store bought canned vegetables are picked and processed at their peak, they still retain that crunch you want from a fresh veggie. Some like to use thawed frozen corn. I personally feel like the kernels themselves get mushy and they leak too much liquid into the slaw as a whole. You can use Sweet Yellow Corn or Sweet White Corn, both will be delicious.

Bacon Cheddar Jalapeño Cornbread

Bacon Cheddar Jalapeno Cornbread – Every BBQ platter needs some fresh made buttery cornbread. So let’s take that a step further and load it up with some cheddar cheese, fresh jalapeno, and crispy bacon bits! But be careful – if you bring this Bacon Cheddar Jalapeno Cornbread to a function or party, they will be asking you to bring it back again and again! It really is THAT good.

Cheesy Bacon Corn

Cheesy Bacon Corn – Having a good rotation of side dish recipes is just as important as having some good main dishes recipes. And while often the side dish might look like a simple steamed veggie, or a bagged salad mix. Occasionally – like when the main course is a fairly easy preparation – I like to spend a little extra time on the side dish. And that’s how this delicious recipe came to be! I was making smoked chicken and potatoes, which is essentially putting chicken and potatoes on the smoker for most of the day. So I went the extra step with the side dish and made Cheesy Bacon Corn – and it was the star of the plate for sure.

Mexican Corn Casserole – Not every #tacotuesday or burrito night needs rice and beans on the side. Don’t get me wrong – I love me some rice and beans. But sometimes you need variety, especially if you love making Mexican food at home as much as we do. Mexican Corn Casserole is a perfect stand in. You get the same great flavors without the the same old same old.

Tomato & Corn Salsa

Tomato & Corn Salsa – There are so many options when it comes to salsas, and with at least 52 Tuesdays a year – you should try a new one every #tacotuesday! Here is one to add to the list – Tomato & Corn Salsa – made with simple ingredients and tons of flavor. You can easily put this together at the start of your prep for dinner, and it will be ready to serve when the tacos hit the table!

Chicken Teriyaki Ramen

Chicken Teriyaki Ramen – We are a soup all year kind of family and I think more people are than they might realize. There is more to soup than warming your belly up with its cold out, there is something about it making you feel warm from a hug. This Chicken Teriyaki Ramen is going to do just that for your family, no matter what time of the year you make it. The rich flavors of the soy, ginger and garlic mixed with the sweet tang of the teriyaki sauce is undeniable and the slightly jammy egg just sets it all off.

Mexican Beef & Rice

Mexican Beef & Rice – Weeknights can be rough sometimes – getting dinner on the table doesn’t need to make it harder than it has to be. This one pot Mexican Beef & Rice is so easy to put together and you probably have most of the staple ingredients in your kitchen already. It is also a very hearty meal that is sure to fill everyone up! By cooking this all in one pan, you get so much flavor developed in a short cook time, and less mess to clean up after.

Corn Soup

Corn Soup – Soups are so much fun to make. You can literally clear out your fridge and make something simple and delicious. It is also super easy to get a ton of flavor in under 30 minutes like this really easy to make Corn Soup. I know most people save soups for the colder months – but I like soup all year round. There is just something about a homemade soup that makes me feel comfy and cozy.

Elote Crispy Chicken Tacos

Elote Crispy Chicken Tacos – Sometimes you just want a good ole chicken taco – and sometimes you want to make take taco night on an adventure and combine it with some bacon and elote style corn. And that is how these Elote Crispy Chicken Tacos came to be. With super simple ingredients and a little bit of time, you can make these flavor packed soft tacos any day of the week.

Copycat Chipotle Corn Salsa

Copycat Chipotle Corn Salsa – Some restaurant chains have that one menu item that draws you in time after time. For my family the corn salsa at Chipotle is a big draw. With half the family not particularly liking raw tomatoes, it is a great alternative to traditional salsas. Copycat Chipotle Corn Salsa is so good for tacos, burritos, burrito bowls, and even just chips and dip. It is on the medium scale of hotness, which can be adjusted since you are making it at home!

Shrimp Corn Chowder

Shrimp Corn ChowderShrimp Corn Chowder – Corn chowder is a favorite of mine, because I can twist and change it to so many different flavor profiles. You have your base of broth, potato, corn and cream. Then can add in other veggies or proteins and different spices and flavors. For this Shrimp Corn Chowder, I added in paprika, thyme, shrimp and smoked ham for an exquisite chowder. The robust flavor that you get in just one hour.

Elote Chicken & Rice

Elote Chicken & Rice – I was scrolling my Instagram feed (check me out @homemadeonaweeknight) and some how ended up down a rabbit hole of Elote creations that had me drooling. While I could certainly just make elote as a side for with some tacos or something, I wanted to try use the flavor profiles and turn it into it’s own meal. That resulted in this Elote Chicken & Rice and it was such a win!
