Everyone needs a list of one pan dishes that can be easily made on any given weeknight. I also urge people to have an array of commonly used ingredients so you can put together something simple and easy. Not having the ingredients to hand and not having a simple recipe often turns into a trip through the drive-up fast food spot. I try to make sure that I have at least one meals amount of ground beef, chicken breast, chicken thigh, Italian sausage and ground turkey in my freezer all the time – even if I don’t have a specific need for it on my current week’s menu. I also always have a variety of pastas and rice in my pantry. That’s what makes this #OnePan Creamy Garlic Chicken & Pasta so simple to make.

I found this bucatini fusilli from Bettergoods (a Wal-mart brand, I think?). They are so much fun to make and eat and I really love them. I really love the way that they cook up in one pan dishes. Not all of the different cuts of pasta cut up nicely in a one pan – and I have yet to determine what it is that makes this different. I believe you can order it online through walmart.com but I just pick up a few boxes when I see it at the walmart closest to my home.

Substitutes and Variations:

If you wanted to add a veg to this pasta dish, I would suggest some broccoli florets added when you add the heavy cream. This will help it steam just enough to cook but not so long that it turns to mush. You can also make this recipe with ground meats (beef, chicken, pork or turkey) if you like – just cook and crumble the ground meat and the rest of the recipe is the same. If you do not have heavy cream, you can use milk – it just will not be as “creamy”. You can also omit the cream all together for a delicious pasta dish as well.

Suggestions for Sides:

A great side option for this is really any steamed or roasted veggies. You can also just pop a couple of cans of corn or green beans into a pot with some butter and garlic salt to cook up a super easy side dish. Another option is a simple garden or caesar salad.

Tools that may make this recipe easier:

The only maybe “special” tool you might need is an extra large saute pan with a lid. Most pan companies call this an Everyday Pan – they are wide and flat on the bottom with side walls about two- three inches tall and a well fitting lid. This makes sure that at everything cooks evenly.

#OnePan Creamy Garlic Chicken & Pasta

A smooth garlic cream sauce cooked in one pan pasta with a tender chicken thighs.

Ingredients

  • 2 lb Boneless Skinless Chicken Thighs cut into 1 inch cubes
  • 3 tbsp Oil
  • 1 tsp Pepper
  • 1 tbsp Garlic Powder divided
  • 2 tsp Salt divided
  • 2 tbsp Cornstarch
  • 3 cup Broth chicken or vegetable
  • 2 tbsp Parsley Flakes
  • lb Small Pasta
  • 1 cup Heavy Cream

Instructions

  • In a bowl, combine chicken cubes, oil, pepper, 1/2 tablespoon of garlic powder and 1 teaspoon of salt,
  • In an extra large saute pan over medium high heat, add coated chicken. Cook until no longer pink.
  • In a large measuring cup, whisk together remaining salt, garlic powder, parsley, cornstarch and 1 cup of broth.
  • Reduce heat to medium and add pasta, cornstarch mixture and remaining broth. Cover and let cook for 15 minutes. NOTE if you do not have enough liquid to fully submerge the pasta in the pan, add water.
  • Remove lid and add in heavy cream. Replace lid and cook another 5 minutes before serving. (sauce will thicken).
