Another great recipe for those garden fresh veggies- Grilled Summer Squash. This is so easy to make and comes out looking like a pro did it! It’s really all about the grill marks – so be sure you really let your grill heat up before you put the squash halves down on the grates. You will also want to let the cut squash sit with the seasoning for at least 30 minutes before grilling it. This let’s the flavors really sink into the flesh of the squash.

The great thing about this recipe is that any grill apparatus will do. Whether you use pellet, propane, charcoal, or a grill pan on your stove – its gonna taste great! If you dont have a grill pan in your kitchen – that may need to change soon! They are amazing for getting those gorgeous grill marks as well as the slight bit of charing you want from a grilled ingredient.
Substitutes and Variations:
You can make this same recipe with zucchini or yellow squash. The method is essentially the same. You can also add some red pepper flakes to the seasoning blend if you want to give things a little heat. Another variation is to use toasted sesame oil for an Asian spin on the final flavor.
Suggestions for Sides:
I served this up with some delicious Garlic Mashed Red Potatoes and some brisket rubbed pork chops (bone-in). For the potatoes, simply add 3 smashed garlic cloves to the water when boiling the potatoes. Then make the potatoes as you normally would for mashed potatoes (salt, pepper, heavy cream and butter), making sure to leave the garlic cloves in when you drain off the water.
Tools that may make this recipe easier:
You will obviously needs some sort of grill to make this recipe. You can use a small table top grill or you can use your traeger as a grill set to the highest temperature. Propane, wood or charcoal – it’s really up to you. Each will give a slightly different flavor profile but all are going to be really tasty

Grilled Summer Squash
Ingredients
- 6-8 Summer Squash halved lengthwise, stem ends removed
- 4 tbsp Olive Oil
- 2 tsp Coarse Salt
- 1 tsp Coarse Black Pepper
- 1 tsp Granulated Garlic
- 1 tsp Dried Parsley
- 1 tsp Granulated Onion
Instructions
- Preheat Grill to high
- In a small dish, combine salt, pepper, parsley, onion and garlic.
- Lay squash out cut side up and brush with olive oil. Sprinkle generously with seasoning mixture.
- Once grill is at high heat, place squash on grate cut side down. Let cook for 10 minutes.
- Flip each piece of squash over and let cook until desired doneness (about 5-10 minutes).
