As you know, tacos are a weekly affair in our home. And I don’t typically make the same tacos over and over. You can switch up the proteins, the cheeses, the tortillas, the veggies but maybe more significantly – they type of salsa. I love to have a freshly made salsa for our tacos. Which is why I have so many different salsa recipes. This recipe for Poblano Mango Salsa is a delightful combination of sweet mango and the smoky spice of a poblano pepper.

Knife cuts are a key part of salsa success and a sharp chef’s knife. Some will say to cut it all the same size. This is true when something will be cooked, but if you are making fresh salsa, you want to cut based on how you want the flavors to be featured. So, for this particular recipe, you want the mangoes to be the largest and the Poblano to be much smaller with the red onion in between.
Tacos are a wonderful vehicle for salsa but not the only one. Of course you can use this Salsa as a snack of chips and dip. It also works great on a taco salad or a burrito bowl. You can add it to a burger or Nachos as well.

Mango Poblano Salsa
Ingredients
- 2 Mangoes diced
- 1 Poblano Pepper seeded and diced
- ½ Red Onion diced
- 1 Lime zest & juice
- 1 cup Cilantro chopped
- 2 tsp Salt
Instructions
- Add all ingredients to a small bowl. Cover and place in refrigerator for at least 30 minutes before serving.
- Note – be sure not to get any of the pith (white underlayer of the skin). You will end up with a very bitter salsa in the end.
