Want to try something a little outside the box with your next Mexican meal? Check out this recipe for Easy Peach Salsa. The combination of the sweetness of the fresh peaches and the spicy punch of a fresh jalapeño is such a great addition to your tacos, nachos, burritos, and taco salads.

I used a yellow peach, but white peaches would work as well. Because you add lime juice and salt to this, you can use “out of season” peaches. Because the salinity of the salt and acidity of the lime juice and zest will draw the liquid and sweetness out of the peaches. You can totally make this salsa as soon as you get home from work. But if you have time to make it on your lunch break or even before you leave for the day, you will be even more pleased with this dish.

Easy Peach Salsa

This Salsa is so light and fresh it is perfect for a spring or summer meal. If you are lucky to have access to peaches all year round (or your freeze your summer harvest like we do!) this makes for a nice touch of summer in the dead of winter too.

Easy Peach Salsa

Some home cooks like to add diced Roma tomatoes to their peach salsa. Which is great if you like it. I’m not a huge raw tomato fan so I don’t like to add them. And honestly, you don’t need them at all. This salsa is a nice alternative to a pico de gallo for your #tacotuesday meal.
