As you have probably learned – I love to make anything from a pizza dough. I have a great pizza dough recipe (check it out below the main recipe) that I love to use as often as I can. So this super fun Balsamic Peach Dessert Pizza is just a twist on the standards. Yes I know it’s not really dinner but it’s a delightful recipe that is great for a weekend fun time, a baby or bridal shower or you know a Wednesday that needs some elevation.
So typically, I’m beating my drum to make sure you use balsamic vinegar and not the glaze. But this goes around… you want the GLAZE, not the vinegar. You want it to be both thicker and sweeter. If you use straight balsamic vinegar it will be too harsh against the peaches and the mascarpone. I have listed pecans as the crunchy element to this dessert – but you could swap out for walnuts too.
The brandied peaches are a delightful addition and so easy to make. I use a VSOP brandy as it has a nice smooth flavor to it. If you do not have brandy on hand – you can also use bourbon or whiskey. The important step is to make sure you cook off the alcohol. So be sure to bring it to a full bubble before reducing to a simmer. The simmer is what lets the brandy and syrup form into a thicker sauce coating the peaches. If you do not have maple syrup on hand, you can swap out for sugar or honey.
One swap you do not want to make is the mascarpone cheese that you are using as the base. You might be tempted to use cream cheese – but with the sweetness of the peaches, you needs that sour note to cut the sugar level. Same goes for the basil – it doesn’t just add a pop of color to the pizza, it gives another flavor note to add to the symphony.

This does look awesome, I will make it and enjoy it without the base as I am now on a very low carb regimen.
