Creamy Cheesy Beefy Pasta

Some people shy away from cooking Pasta in a One Pot style dish – but it really does work. You get excellent flavor into the pasta and it creates it’s own sauce in the end. Essentially it is like make Hamburger Helper from scratch using real ingredients. Creamy Cheesy Beefy Pasta is so easy to make, you are going to be shocked at how flavorful and filling it is.

Creamy Cheesy Beefy Pasta

The really great thing about this recipe is that you can switch it up with what ingredients you have on hand. I used ground beef but you could go with ground turkey. Rigatoni was used in the recipe but you can make it work with basically any short pasta – shells, elbows, shellbos, penne, rotini – whatever you have on hand. You just want to adjust the cooking time for the type of pasta you use. You could also swap the cheddar cheese for mozzarella or a sharp cheddar.

As I mentioned – this is a filling hearty dish. So I did not serve a side with it. If you needed to stretch it or wanted to have leftovers (it’s great heated up for lunch), I would suggest some green beans or broccoli to go with.

I am a lot of things – wife, mother, daughter, sister, niece, friend, business owner, volunteer, and a home chef. I have lived in the Pacific Northwest for most of my adult life and plan to stay forever – while traveling a lot. I am currently running a General Contracting business with my husband out of our home. Between us we have 6 kids in our blended family, 4 of which live with us full-time. We are a highly active family during the week – sports, bands, dance classes – as well as on the weekend – camping, hiking, car shows, and concerts. We like to go go go, but when it comes to dinnertime, we mostly like to dine-in! I love to create things with my hands and have probably tried almost every craft out there at least once or twice. Cooking is a huge part of my life. No matter what anyone says – you can taste the difference in the food if it was made with love. Some of the simplest meals can be elevated so much when they are cooked with care. Pouring love into the meals I create brings a feeling of fulfillment and satisfaction, not only to me, but to the people I care about.

I live in a long-term care facility in Raalte, Netherlands. My husband lives in Lobith, a town about a ninety-minute drive away from Raalte. I blog about mental health, autism, disability in general, faith and life in general.

This sounds like such a flavorful meal indeed! I think my father-in-law might love to cook this as a variation to his Mac ‘n’ Cheese-like dish.

Any oil will work. I just personally like Avocado oil for its high smoke rate. If I didn’t have Avocado oil I would probably go with Olive Oil.
