This year our garden has been blessed with an abundance of cherry tomatoes – for some reason they have been the most prolific of all the things that we planted. So in an effort to make sure that they don’t go to waste, I decided to sort out ways to use them up. And that is how I came up with this Roasted Cherry Tomato Sauce. It is a simple sauce that is loaded with flavor. I can’t wait to make this in larger batches so I can have it and it to enjoy through the winter.

While I used fresh cherry tomatoes from my garden, this recipe will work just the same with store bought, or some from the farmers market. Same goes for the basil, onion and garlic. The size of them doesn’t matter all that much either, as long as they are roughly the same size throughout. This is to ensure that they cook evenly. As noted in the recipe, it is okay if the tomatoes get a little bit of a char on the top as this is what brings in the “Roasted” flavor to it all. Just don’t let them burn through, as you will get that bitter flavor in the end.
When I made this, I used it as the sauce for a pizza. Add to my homemade pizza dough and topped off with mozzarella, pepperoni, ham and bacon – it was quite tasty. It takes a humble homemade pizza to an artisan level that really sets it off. The depth of flavor is quite lovely – the family was really impressed.
To make this sauce you are going to need to have a few key items in your kitchen. You will need a nice rimmed baking sheet. This is to make sure you don’t make a mess in the oven. To that point you will also need to have parchment paper, for easy clean up, but also to make it extra easy to transfer to the bowl. The last thing is an immersion blender. I much prefer an immersion blender over a regular blender. I feel like you have more control over making sure you got everything is evenly smooth.

Roasted Cherry Tomato Sauce
Equipment
Ingredients
- 2 pints Cherry Tomatoes
- 1 White Onion cut into 8 even wedges
- 4 Garlic Cloves peeled
- 1 tsp Salt
- 1 tsp Pepper
- 1 tsp Dried Thyme
- 1 tsp Dried Oregano
- ½ cup Fresh Basil Leaves
- ½ cup Olive Oil
- 1 tbsp Honey
- 1 tbsp Worcestershire Sauce
- ½-1 cup Water depending on desired consistency
Instructions
- Preheat oven to 400degF
- On a parchment paper covered rimmed baking sheet, add tomatoes, onions, fresh basil and garlic. Sprinkle with salt, pepper, thyme and oregano. Drizzle with olive oil. Place in oven and bake for 30 minutes (a small bit of charring is fine, but don't let it burn).
- Remove from oven and let rest 5 minutes. Then remove to a mixing bowl and let rest another 10 minutes.
- Add Worcestershire, honey and half cup of water to bowl and then blitz with immersion blender. Keep blitzing until smooth. Add water (a tablespoon, at a time) until sauce is at desired consistency.
- NOTE: I would suggest thicker for pizza sauce, and thinner for pasta sauce.
