Potatoes are one of the most versatile vegetables. You can find them in just about every cuisine and they can be used in so many different ways. You can boil, roast, mash, smash, rice, dice, slice or shred them. You can also make them into soups, salads, stews, casseroles…I mean the ideas are almost infinite. I have gathered together my more popular potato centric recipes for you to check out in honor of National Potato Day!
