These burgers were a big hit with the fam! The flavors were so fresh and zingy. From the peppery arugula and sweet red onions to the smoky bacon, all doused in the herbaceous green goddess dressing – this burger is a winner. The Green Goddess Burger should definitely be on your next menu plan.

While smash burgers usually come out best on a flattop griddle – mostly because of the large flat cooking surface that lets you get them cooked all at once – you don’t absolutely need one. Before I got my Blackstone (and even still now when the rain is really coming down), I just used my widest flattest saute pan and make the burgers in batches. You have to work a little more quickly so that everyone gets a hot meal at the same time, but they all still taste great.

This recipe for Green Goddess dressing is one you are going to want to hold on for other meals. It has such great flavor and can be used on salads, wraps and even pasta salad. You definitely need to make it in a food processor to make sure that all of the fresh herbs a broken up enough. You may want to blitz it a little further than I did so that it is a little smoother. I actually like to see the bits of herb in the mix.

I love to put arugula – also called rocket or salad rocket – on burgers because of it’s peppery flavor. And it’s just a nice alternative to green leaf lettuce. I do always like to do a quick oil and vinegar dressing on it. Arugula can eat pretty dry and you never want to risk drying out a burger.

Green Goddess Burger

A homemade green goddess sauce poured all over a delicious smash burger.

Ingredients

  • 6 Brioche Bun
  • 2 lb Ground Beef
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 tsp Paprika
  • 12 strips Thick Cut Bacon cut in half
  • 2 cups Fresh Arugula
  • ½ Medium Red Onion thin sliced
  • 1 tbsp Oil
  • 1 tbsp Apple Cider Vinegar
  • 1 tbsp Lemon Juice

For the Green Goddess Dressing

  • 1 cup Mayonnaise
  • ½ cup Sour Cream
  • 1 Lemon juice and zest
  • 1 tbsp Worcestershire Sauce
  • 1 cup Fresh Parsley rough chopped
  • ½ cup Fresh Chives rough chopped
  • ½ cup Fresh Dill rough chopped
  • 3 Garlic Cloves
  • 1 tsp Tarragon
  • 1 tsp Salt
  • ½ tsp Cayenne

Instructions

  • Preheat oven to 400degF.
  • Lay bacon out flat on a parchment paper covered baking sheet. Place a baking rack over the top of it. Place in oven and bake for 20 minutes. Remove to a paper towel covered plate.
  • Combine ground beef, salt, pepper and paprika together and form into 12 equal balls.
  • Add dressing ingredients to food processer and blitz until creamy.
  • Heat griddle/flattop/large saute pan to medium-high. Once hot, add each meatball and press it down flat with a spatula. Let cook about 90 seconds then flip, press down again and cook until no longer pink. Remove to plate and keep warm, until all are cooked.
  • In small bowl, combine arugula, red onion, oil, vinegar and lemon juice. Toss to coat.
  • Build the burger – Add 4 strips of bacon to bottom bun. Place one patty on top of bacon and add a spoonful of dressing then place a second patty on top. Add more dressing and top with arugula/onion mix. Add top bun and press down slightly.
