Lay bacon out flat on a parchment paper covered baking sheet. Place a baking rack over the top of it. Place in oven and bake for 20 minutes. Remove to a paper towel covered plate.
Combine ground beef, salt, pepper and paprika together and form into 12 equal balls.
Add dressing ingredients to food processer and blitz until creamy.
Heat griddle/flattop/large saute pan to medium-high. Once hot, add each meatball and press it down flat with a spatula. Let cook about 90 seconds then flip, press down again and cook until no longer pink. Remove to plate and keep warm, until all are cooked.
In small bowl, combine arugula, red onion, oil, vinegar and lemon juice. Toss to coat.
Build the burger - Add 4 strips of bacon to bottom bun. Place one patty on top of bacon and add a spoonful of dressing then place a second patty on top. Add more dressing and top with arugula/onion mix. Add top bun and press down slightly.
