It’s full on grillin’ season and I am so here for it. I love to grill and smoke meats rain or shine, but it is definitely more preferable in the summer sun! These skewers are going to be a hit the next time you bust out the grill or smoker. Citrus Steak Skewers are so simple but so full of flavor and make for a great summertime dinner! Grilling is perfect for weeknight meals because the clean up is easy and grilling is usually fairly quick. These skewers are also a great way to use up all that zucchini the neighbor or co-worked brought you!

The orange juice is the real star of this steak marinade – you get such a lovely bright flavor and makes the meat so very tender. I like to use a not from concentrate with pulp style orange juice, but you can use whatever variety you usually get. It is important that you let this marinate for at least an hour to really soak up the sweet OJ. If you really want the very freshest and most flavorful orange flavor – you could also juice the organges yourself – with a hand juicer or with a cold press juicer. You can also put it in the marinade the night before or in the morning before you leave for work – the longer the better.
I used zucchini, summer squash and mushrooms for my skewers, but you could certainly customize them to your desires. Red onion would be really good on these, as would some cherry tomatoes or bell peppers. That is one of the really great things about making skewers, you can customize them to what you and your family really likes. You can also easily make some with the things one person likes and some with what another person likes without anyone having to pick things off.
Another great thing about these skewers is that while they are super flavorful, they are sort of neutral so you could pair them with so many different side dishes. I went with a Baked Mac & Cheese when I served them up. It was a great compliment to the steak. You could go full on summertime meal and do a potato salad and fruit accompaniment.

Citrus Steak Skewers
Equipment
- 16-18 Skewers bamboo or metal
Ingredients
For the Steak
- 3 lb Strip Steak cut into 1-in cubes
- 1 cup Orange Juice
- ¼ cup Lime Juice
- 1 tsp Salt
- 1 tsp Pepper
- 1 tsp Paprika
- 1 tsp Cumin
- 1 tsp Oregano
For the Vegetables
- 2 Medium Zucchini cut into ¾inch rounds
- 2 Medium Summer Squash cut into ¾inch rounds
- 8 oz Baby Bella Mushrooms
- 2 tbsp Oil
- 1 tsp Paprika
- 1 tsp Salt
- 1 tsp Pepper
- 1 tsp Garlic Powder
Instructions
- Add all ingredients for the steak to a gallon-sized zippered bag. Let marinate for at least 1 hour, up to 24hours in the refrigerator.
- Combine vegetable ingredients in a bowl, toss to thoroughly coat.
- Start grill/smoker. Put to highest heat settings.
- Start to build the skewers – alternating a piece of meat with a piece of vegetable until all is used up.
- Cook for 10 minutes on each side (or desired level of doneness on the steak). Serve 3-4 per person.

We just made chicken kababs a week or two ago to use up lots of squash and zucchini we had. I actually found that my cupcake holder was the perfect size for our skewers so I was able to marinate the meat and veggies all day. Your marinade sounds delicious!!
