Sometimes dinner needs to be so simple, you don’t even really need to do much to get a great meal on the table. This recipe for Easy Bratwurst Rolls is exactly that. Very little effort is put into what ends up being a fantastic meal. There are two real bright spots of this recipe – the caramelized onions and the homemade horseradish mayo.

Now if you think you do not like horseradish, this is a great way to give it a try. You get the heat without the big pow in your mouth. The mayo really tones down the spice level so that you get the flavor more than the heat. All that said, you can up the heat with more creamy horseradish or you can even up the ante by using prepared horseradish instead of creamy. Which ever way you go, just don’t skip it all together.

When it comes to selecting the beer to use for cooking the onions and bratwurst, you have to stick to the one rule about cooking with alcohol. If you wouldn’t drink on it’s own, don’t cook with it. Cooking with alcohol intensifies the overall flavor of the beverage, so if you don’t like it to begin with you, you aren’t likely to like it cooked down. I prefer to use a lager because it has a great even flavor when it cooks down. If you prefer an IPA or red then use that. Also if you are not usually a beer drinker – don’t go out and by a whole 6pack, remember that most groceries have a single can section.

I like to serve these rolls with a warm German-style potato salad. It compliments the flavors in the brats very well. My recipe for Warm Potato Salad is pretty easy to make and doesn’t take a lot of fuss. Don’t let the name fool you – warm potato salad is also good cold, it’s just traditionally served warm. You could also serve this with some chips, fries or any other kind of salad.

Easy Bratwurst Rolls

Delicious caramelized onions made with beer braised bratwurst and served on a toasted roll with horseradish mayo and spicy brown mustard

Ingredients

  • 12 Bratwurst
  • 12 Bread Rolls hoagie or outdoor rolls
  • 1 Medium White Onion halved and sliced ¼inch thick
  • ½ cup Butter
  • 2 tbsp Worcestershire Sauce
  • 1 tbsp Minced Garlic
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 tsp Parsley
  • 12 oz Lager Beer
  • ½ cup Spicy Brown Mustard

For the Horseradish Mayo

  • cup Mayonaisse
  • 1 tbsp Creamy Horseradish
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 tsp Paprika

Instructions

  • In a small bowl, combine ingredients for horseradish mayo, Cover and place in refrigerator until ready to make the rolls.
  • In a large saute pan over medium high heat, add butter. Once melted, add onions, Worcestershire sauce, salt, pepper, parsley and minced garlic. Stir to coat all with butter. Let saute for 3 minutes
  • Reduce heat to medium, add bratwurst on top of the onions. Pour in lager and cover pan. Let cook 10 minutes then turn over eat bratwurst. Then cook another 10 minutes.
  • Place grill pan over medium high heat. Split each roll and spray with cooking spray. Place each on hot gill pan and toast to desired doneness.
  • To build the roll – smear one side of roll with horseradish mayo. Then top with caramelized onions and a bratwurst. Then drizzle with mustard.

  2. Oh my, I do enjoy bratwurst. I’m not much of a horseradish fan, BUT, I do have to say I do enjoy it from time to time mixed with mayo for just the reason you mentioned above. To tone it down.
