Sometimes you need the perfect sauce spread for your sandwich or burger or wrap. And some times you just want to dip your fries in spicy sauce. A few simple ingredients come together to make for a delicious Homemade Spicy Mayo. It is a great accompaniment to your grilled chicken sandwich or double bacon smash burger.
If you haven’t tried Sweet Chili Garlic Sauce – you have got to fix that! With origins in Thai Cuisine, this sauce is made primarily of red chili peppers, garlic, fish sauce, rice vinegar and honey. Some version add other ingredients, but this should be the base. Just be sure that you are not picking up chili paste – another popular ingredient in Asian cuisine. You need the thinner sauce not the thick paste. PS this sweet chili garlic sauce is great on its own too – as a dip for wontons or in a ramen.
This specific mayo recipe was intended to be used on a Spicy Chicken Sandwich – a hand breaded crispy chicken stacked up with a vinegar slaw, tomatoes and pickles (recipe coming soon!). It was a great compliment to the spicy breading on the chicken. I have also used it on a smashburger loaded up with bacon, onion rings, and American Cheese.

Homemade Spicy Mayo
Ingredients
- ¾ cup Mayonnaise
- ¼ cup Sweet Chili Garlic Sauce
- 1 tsp Paprika
- 1 tsp Salt
- ½ tsp Cayenne Pepper
Instructions
- Combine ingredients in a sealable container. Use right away or store (sealed) in the refrigerator for up to 2 weeks.
