Burritos make for a perfect weeknight dinner, especially if you are on the go or if not everyone can sit down at the same time to enjoy a meal. These 7 Layer Chicken Burrito have all the good stuff packed into a full meal deal burrito. You really cover all the bases with the layers – you have plenty of protein from the chicken and beans, good fats from the avocado, plenty of veggies and don’t forget the incredible amount of flavor.

7 Layer Chicken Burrito

While this recipe may seem like it is a bit labor intensive, it really isn’t. You can make the three cooked items simultaneously, so that they are all done at the same time. And the corn salsa and smashed avocado can be put together while everything else is cooking. But there are some short-cuts or swap-outs that you can do to make this even easier to create. You can swap out a jarred salsa for the homemade corn salsa (but please give the salsa a chance – it really is so super delicious). You can also opt for some shredded rotisserie chicken tossed in taco seasoning.

While it’s not totally necessary to toast the burrito, it does add a nice touch and texture. It also helps to seal up the contents as well as melt the cheese layer that was spread out first. You can use a counter top griddle, a flat top griddle, a wide flat frying or saute pan, or even a panini press! If you use the panini press, you only need to put in in for about 3 minutes total. If you don’t want to do this step, you can achieve melty cheese by immediately wrapping the burrito in aluminum foil after building it. The heat will stay in longer to help start to melt the cheese. This also makes it ready to be a “To Go” dinner, if you need.

As I mentioned, this is a full meal deal type recipe. You get it all at once in this massive burrito. In fact, my daughter and I actually split on of these while the guys all make it through a whole one and don’t really need anything else for dinner.

7 Layer Chicken Burrito

Ingredients

  • 6 Extra Large Flour Tortillas
  • 2 cups Cheddar Cheese shredded
  • 1 cup Sour Cream
  • 2 Medium Avocados
  • 1 tbsp Lime Juice
  • 1 tsp Cumin
  • 1 tsp Salt
  • 1 tsp Pepper
  • 2 cups Corn Salsa see recipe below

For the Chicken

  • lb Chicken Breast boneless, skinless
  • 2 tbsp Taco Seasoning see recipe below
  • 1 qt Chicken Broth

For Cilantro Lime Rice

  • 2 cups Long Grain Rice
  • ½ cup Cilantro chopped
  • 2 Limes zest and juice
  • 1 qt Chicken Broth

For Black Beans

  • 1 15oz can Black Beans drained and rinse
  • 1 4oz can Diced Green Chillies
  • 1 tsp Cumin
  • 1 tsp Chili Powder
  • 1 tsp Paprika
  • 2 tbsp Lime Juice

Instructions

  • In a sauce pan over medium high heat, add chicken ingredients. Let cook for 20 minutes. Remove chicken from pan and shred.
  • In another sauce pan over medium heat, add rice ingredients. Cover and let cook for 17 minutes. Remove from heat, without removing lid until ready to build burritos.
  • In a small sauce pan over medium low heat, add black beans ingredients. Let cook while chicken and rice are cooking. Stir occasionally and smash slightly.
  • In a bowl, add avocado, lime juice, salt, pepper and cumin. Use a fork to slightly smash together. (Smash to your desired consistency, but I suggest leaving some chunks).
  • Preheat large frying pan or griddle to medium high.
  • To build the burrito, place tortilla on a flat surface and sprinkle ⅓ cup cheese evenly. Then add portion of chicken, rice, corn salsa, black beans, sour cream and smashed avocado. Fold in sides of tortilla and then roll up from the bottom to top, tucking tortilla as needed. Repeat with remaining burritos.
  • Place burrito, seam side down, in hot pan/griddle. Let cook for 2 minutes (until slightly golden), then flip and cook another 2 minutes. Remove from heat and repeat with remaining burritos.

Copycat Chipotle Corn Salsa

The simple but oh-so-good staple at Chipotles – this corn salsa is sure to curb your cravings

Servings 3 cups

Ingredients

  • 2 cups White Corn frozen or canned (drained)
  • 1 Jalapeno seeded and fine diced
  • ½ Medium Red Onion fine diced
  • ½ cup Cilantro fine chopped
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 tbsp Lime Juice
  • 1 tbsp Lemon Juice

Instructions

  • Combine all ingredients in a bowl.
  • Cover and place in refrigerator for at least 30 minutes before use. Will last in an airtight container in the refrigerator for up to 5 days.
