If your looking for a new and fun way yo enjoy meat and potatoes, then you came to the right post. This recipe is so simple but so packed with flavor and really so easy to make. I love dinner on the grill and not just in the summer. And these BBQ Beef & Potato Skewers are definitely a full dinner.

This is one of those meals that the presentation really adds to the success of this dish. It really doesnt take long to put things together but has a great impact on a plate. Sometimes taking those extra 5 minutes to think about how it will look is all you need to make a weeknight meal special.

Substitutes and Variations:

You can swap out the beef for pork but I wouldn’t recommend turkey or chicken. It is hard to keep poultry moist while cooking the potatoes through. If you want to skip the BBQ you could do garlic butter instead.

Suggestions for Sides:

This goes really well with some corn on the cob cooked right on the grill. You could also do some cornbread – like my Pepperjack Cornbread –  and a green salad.

Tools that may make this recipe easier:

A grill of some sort is going to be needed for this one. I know most people are very particular about their grilling method – charcoal, propane, wood or pellet. I say use whatever you have and are comfortable with. Just adjust cook times and temps as you see fit. I will say using metal skewers is a game changer – they do not scorch like bamboo ones. And they are reusable – just remember they get HOT!

BBQ Beef & Potato Skewers

A fun way to serve up meat & potatoes for your family – on a skewer!

Ingredients

  • 2 lb Ground Beef
  • 1 cup Panko Crumbs
  • 1 Egg Beaten
  • 1 tsp Pepper
  • 1 tsp Paprika
  • 1 tsp Garlic Salt
  • 1 tsp Oregano
  • 1 tbsp Dried Minced Onion
  • 1 tsp Red Pepper Flakes
  • 6-8 Golden Potatoes sliced ¼ inch thick
  • Cooking Oil Spray
  • 1 cup BBQ Sauce

Instructions

  • Preheat Grill to High
  • In a bowl, combine the ground beef, panko crumbs and seasonings.
  • Starting with a rounded end of one potato, alternate approximately 1 ounce of ground meat mixture with a slice of potato until you have add the whole potato to the skewer. You want to be sure to press it down to spread out the ground meat to the edges of the potatoes. Repeat with remaining skewers. Then spray all sides with cooking oil spray.
  • Place skewers on grill and cook for 15 minutes on each side. Use a meat thermometer to check that the center has reached at least 165degF (make sure you do not touch the skewer with the probe).
  • Brush each skewer with bbq sauce. Cook for another 5 minutes then rotate and brush with bbq sauce. Cook another 5 minutes.
  • Remove from grill and then remove each kebab from the skewer to serve.
