This is not your basic boring cornbread. This recipe brings the heat and cheesy goodness – giving some oomph to your cornbread. I’ve included my recipe for homemade cornbread mix at the bottom of this page but you can also use ypur favorite box or bag mix. Most of all you are going to love the crunchy crust of this Pepperjack Cornbread.

Substitutes and Variations:

If you need to make this for someone that cannot take the heat you could swap out the pepper jack cheese for just plain Monterey jack cheese. Or you could opt to swap out the diced jalapeños for a can of green chilies. So you still get the flavor without the heat.

Suggestions for Sides:

This makes a fantastic side for a hearty bowl of chili. It is excellent as the crown jewel of your BBQ platter as well. Really it is just a tasty and fun side dish for a meal that needs a not boring bread component.

Tools that may make this recipe easier:

You really just need a nice nonstick 9×9 pan to use for this cornbread. As you probably know, cornbread can be a bear to cleanup after, so a quality nonstick pan can be a real time saver.

Pepperjack Cornbread

A fantastic homemade cornbread loaded with fresh jalapeno, sweet corn and melty pepperjack cheese.

Equipment

Ingredients

  • 2 Eggs beaten
  • ¾ cup Heavy cream
  • ¼ cup Oil or melted butter
  • 2 cups Cornbread Mix see below
  • 1 4oz can Diced Jalapeno
  • 2 cups Pepperjack Cheese shredded
  • 1 15oz can Sweet Corn
  • 1 tsp Black Pepper

Instructions

  • Preheat oven to 400degF.
  • Combine eggs, milk, oil and cornbread mix in a mixing bowl.
  • Fold in 1½ cup of cheese, corn (with all liquid) and diced jalapenos to cornbread mix.
  • Transfer to parchment paper lined 8×8 baking dish (you can spray with cooking spray if you prefer). Sprinkle with remaining cheese.
  • Baked for 35 minutes or until toothpick comes out clean from center of pan.

Homemade Cornbread Mix

Simple dry baking mix so that you can make cornbread whenever the craving hits

Equipment

  • 1 Quart-sized Mason Jar

Ingredients

  • 2 cup Flour
  • cup Cornmeal
  • ½ cup White sugar
  • 1 tbsp Baking Powder
  • 1 tsp Salt
  • ½ tsp Garlic Powder
  • ½ tsp Onion Powder

For Baking ONE Batch

  • 2 Eggs beaten
  • ¾ cup Milk melted
  • ¼ cup Oil or melted butter
  • 2 cups Cornbread Mix

Instructions

To Make the Mix

  • Add all ingredients to a mixing bowl. Use a whisk to thoroughly combine
  • Transfer mix to airtight container.

To Make 8x8inch Pan of Cornbread

  • Preheat oven to 350degF.
  • Combine eggs, milk, oil and cornbread mix in a mixing bowl.
  • Transfer to parchment paper lined 8×8 baking dish (you can spray with cooking spray if you prefer)
  • Baked for 25 minutes or until toothpick comes out clean from center of pan.
