Pepperjack Cornbread
A fantastic homemade cornbread loaded with fresh jalapeno, sweet corn and melty pepperjack cheese.

- 2 Eggs beaten
- ¾ cup Heavy cream
- ¼ cup Oil or melted butter
- 2 cups Cornbread Mix see below
- 1 4oz can Diced Jalapeno
- 2 cups Pepperjack Cheese shredded
- 1 15oz can Sweet Corn
- 1 tsp Black Pepper
Get Recipe Ingredients
Preheat oven to 400degF.
Combine eggs, milk, oil and cornbread mix in a mixing bowl.
Fold in 1½ cup of cheese, corn (with all liquid) and diced jalapenos to cornbread mix.
Transfer to parchment paper lined 8x8 baking dish (you can spray with cooking spray if you prefer). Sprinkle with remaining cheese.
Baked for 35 minutes or until toothpick comes out clean from center of pan.
