Just about every cuisine around the world has some form of meatball that plays a prominent roll in every day cooking. This recipe is based on the Lebanese version of street food called the Kafta. A ground meat mixture that is formed around skewers and grilled. These Simple Beef Kafta Kebabs are so easy to make and packed with lots of flavor.

When it comes to mixing meat with the seasonings and such, I do like to use gloves. Not because I am worried about contamination but because 1. The gloves lessen the heat from your hands which can cause the meat to get over worked too quickly and 2. The clean up is so much easier – just remove the gloves and move on.

Substitutes and Variations:

You can swap out the meat type for what you have on hand or prefer. Just make sure to compensate for the fat content. If you use pork you will need a little more breadcrumbs to hold things together as the fat renders out. If you use a turkey or chicken you will want to add an extra egg or some olive oil to keep the meat moist.

Suggestions for Sides:

The last time I made these I just did an easy Lemon Dill Orzo on the side. You cook the orzo as directed. The drain off the water and return to the pan. Add a little olive oil, lemon juice, salt, pepper, onion powder and dried dill. Stir it all together and enjoy. You can also serve these with some Mediterranean Salsa and pita bread.

Tools that may make this recipe easier:

I do strongly urge you to use metal skewers for this preparation. The bamboo style tend to let the meat slide around, making it difficult to keep on the skewers as well as flip during cooking. You will also need some sort of grilling apparatus – charcoal, propane or pellet will all work just fine.

Simple Beef Kafta Kebabs

Ingredients

  • 2 lb Ground Beef
  • 1 cup Italian Bread Crumbs
  • 1 Egg Beaten
  • 1 tsp Pepper
  • 1 tsp Paprika
  • 1 tsp Garlic Salt
  • 1 tsp Oregano
  • 1 tbsp Dried Minced Onion
  • 1 tsp Dried Dill

Instructions

  • Preheat Grill to High
  • In a bowl, combine all ingredients. Portion into 14 equal portions.
  • Wrap each portion in an oblong "meatball" around the metal skewers, two per skewers works best.
  • Place skewers on grill and cook for 8 minutes on each side. Use a meat thermometer to check that the center has reached at least 165degF (make sure you do not touch the skewer with the probe).
  • Remove from grill and then remove each kebab from the skewer to serve.
