Not all dishes have to have a big protien presence. Occasionally you need a lighter dinner or maybe a budget dinner. Or maybe you need a bit heavier lunch because you have to skip dinner or won’t be able to have a real sit down dinner. Whatever the reason, this recipe for Easy Broccoli Alfredo is one you want to bookmark and file away.

All that said, this is also a great base for all the proteins. You can easily add Grilled Garlic Shrimp or Chicken. Also you could do a nice pork chop or steak. Alternatively this is a great recipe for a meal prep option. My best tip with meal prepping is to let things cool as naturally as you can (loosely covered on the counter). It helps things to reheat more evenly.
Substitutes and Variations:
You can swap out the pasta for pretty much any cut for this recipe. I prefer the Fettuccine but linguini or penne will be just as good. You can also change the veg if you want – asparagus is a great option. You can also just mix in some spinach with the Alfredo right when you add it to the pasta.
Suggestions for Sides:
So simple buttered bread is great with this. You can also go for fresh made garlic knots. Of course a delightful Caesar salad would pair nicely as well.
Tools that may make this recipe easier:
I can’t really think of any special tools you would need for this particular recipe. Maybe a whisk – but nothing too fancy.

Easy Broccoli Alfredo
Ingredients
- 1½ lb Fettuccini
- 2 cups Broccoli Florets
- ½ cup Parmesan Cheese shredded
- 1 tsp Black Pepper fresh cracked
For the Alfredo Sauce
- 4 tbsp Butter
- 1 tsp Garlic Powder
- 1 tsp Onion Powder
- 4 tbsp Flour
- 2 cups Milk
- 1 tsp Black Pepper
- 3 cups Parmesan Cheese shredded
- 1 cup Heavy Cream
Instructions
- Start water boiling for pasta. (Salt, if desired)
- In a sauce pan over medium high heat, add butter and garlic powder and onion powder. Once melted, whisk in flour and let cook 2 minutes. Whisk in milk and let cook another 2 minutes. Add black pepper and heavy cream. Once combined, add parmesan cheese and whisk until melted. Reduce heat to medium-low and let simmer and thicken.
- Add pasta to boiling water and cook as directed on package. In the last five minutes of cook time, add the broccoli florets to the boiling water with the pasta. Drain in colander and return to pot (away from heat). Pour alfredo sauce over top and use thongs to toss and thoroughly coat pasta.
- Add portion of pasta to a shallow pasta bowl. Garnish with shredded parmesan, and black pepper (fresh cracked if possible).
