Asparagus is one of those amazing vegetables that can feel fancy but really doesn’t take much to make it flavorful. Asparagus also pairs well with just about every type of protein – steak, chicken, pork, shrimp, fish… really anything. There are lots of different ways to use asparagus, like a quiche, a soup, in a pasta. But one of the simplest preparations, really is one of best according to my family, according to my family. This recipe for Garlic Roasted Asparagus is one that you definitely want to always have to hand to make any meal be just that little bit extra.

One key to the success of this side dish is parchment paper. If you have been around my blog for long, then you know that I use parchment paper quite often, really any time I bake things on a baking sheet (even when I use a baking rack). The most apparent reason, is easy clean up. But for this particular recipe, it is also going to save all that beautiful asparagus from sticking to the pan. I have also learned that the parchment paper slows the charring which can result in an unpleasant bitterness.

For this recipe I use jarred minced garlic, which is the “wet” version of fresh garlic. You do not want to use dried minced garlic for this recipe, but you could use freshly minced garlic. The issue that I find with using freshly minced garlic is that with out the added water from the jarred version, it tends to char faster than the asparagus is cook through. I do encourage you to find a brand that doesn’t add salt or sodium to their product. Obviously we all could use less sodium in our diet, but also it can alter the true flavor of the garlic.

Garlic Roasted Asparagus

This is actually my daughter’s birthday dinner request each year – steak, mashed potatoes and my garlic roasted asparagus. She loves it so much and has since she was only seven years old. I am so lucky to have gotten through 4 children without a picky eater for the most part. They all have their one or two things that they prefer not to have, but really willing to try most everything.

Garlic Roasted Asparagus

A simple but flavorful side dish that will work with just about any kind of protein.

  • 1 Large Baking Sheet

Ingredients

  • 2 lb Asparagus fibrous ends removed
  • ½ cup Oil
  • ¼ cup Minced Garlic
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 tsp Paprika
  • 1 tsp Onion Powder

Instructions

  • Preheat oven to 375degF.
  • Cover large baking sheet with parchment paper. Spread trimmed asparagus evenly on the baking sheet. Drizzle with oil and minced onion. Then use your hands to toss and coat.
  • Combine the seasonings and then sprinkle over the top of the asparagus. Place in oven and bake for 25 minutes.
