Sometimes you need that show stopping main event for your meal. Whether it’s a Sunday Supper or just a weeknight that you happen to have a bit of extra prep time – this Roasted Garlic Chuck Roast recipe is going to make it look like you have spent hours making a meal when really it was about 15 minutes. The great thing about this meal is that it’s totally budget friendly. Chuck Roast is a pretty inexpensive cut of beef that can easily feed the whole family.
The method of preparation is key to the success of this roast. A quality paring knife is needed to make the perfect sized slits in the beef. And you need to cut your whole garlic fairly thin. Essentially, the garlic will dissolve into the beef as it cooks and give amazing flavor throughout each cut of the beef.
It is also very important that you have a quality meat thermometer to make sure that the meat is to the exact temperature you want to for the doneness you desire. My family leans to the mid-rare to rare side of things.

Roasted Garlic Chuck Roast
Ingredients
- 3 lb Chuck Roast
- 2 Whole Garlic Cloves sliced thinly
- 2 tsp Salt
- 2 tsp Pepper
- 2 tsp Rosemary
- 2 tsp Thyme
- 2 tsp Onion Powder
- ½ cup Butter cut into 1 tbsp pats
Instructions
- Preheat oven to 400degF.
- Place the chuck roast in the center of a 13×9 baking dish. Using the tip of a sharp paring knife, make ½-inch vertical cuts randomly across the top of the roast. Stuff each cut with a thin slice of garlic.
- Combine salt, pepper, rosemary, thyme, and onion powder. Sprinkle of top and sides of chuck roast.
- Evenly space out the butter pats over the top of the roast.
- Place in oven and roast for 40 minutes. Use a meat thermometer to check that the roast has reached 140 deg internally. If not there let cook another 5 minutes and recheck.
- Remove from oven and only a cutting board. Let rest at least 10 minutes before slicing to serve.
