If you are in need of an easy side dish or a protein packed base for meal prepping, this is a great recipe for you. A simple combination of black beans, corn, fresh cilantro, lime juice and rice brings brightness to any plate. Cilantro Rice & Black Beans go great with any protein – chicken, fish, beef or pork. It is also so good you can eat it all on its own.

The method for making this dish soap key to success. If you dont add the beans and corn at the right time, they will not warm up enough AND the rice will be over or under cooked. You want to have enough water still in the pan to make stirring easy but the rice needs to be mostly cooked through.
Substitutes and Variations:
You could swap out the black beans for pinto beans if you prefer, as well as red beans. I like to use jasmine rice for this recipe but you could also use long grain rice or basmati rice. Again, I like sweet corn but you could also use white corn.
Suggestions for Sides:
This recipe makes a great side for any type of protein. You can make it into a rice bowl with my Chile Lime Grilled Chicken and some fresh easy pico de gallo.

You are going to need a nice wide pot for this recipe, with a lid. I like this 4qt non stick ceramic pot to make this rice recipe in.

Cilantro Rice & Black Beans
Ingredients
- 2 Cups Jasmine Rice
- 1 tsp Salt
- 4 cups Water
- 1 15oz can Black Beans Drained & Rinsed
- 1 15oz can Sweet Yellow Corn Drained
- 1 tbsp Lime Juice
- 1 cup Fresh Cilantro Chopped
Instructions
- In a large pot over medium high heat, add rice, salt and water. Bring just to a Bubble, then reduce heat to medium and cover pot. Let cook for 15 minutes.
- Remove lid and add black beans, corn and lime juice. Gently stir to combine and then replace the lid and let cook another 5 minutes. NOTE: there should still be a small amount of liquid in the rice when you add beans and corn.
- Remove pot from heat and remove lid from pot. Fold in the chopped cilantro and replace the lid. Let rest for 5 minutes before fluffing the rice and serving.
