Cilantro Rice & Black Beans

A hearty side dish loaded with black beans, corn and flavor.

Ingredients
  

  • 2 Cups Jasmine Rice
  • 1 tsp Salt
  • 4 cups Water
  • 1 15oz can Black Beans Drained & Rinsed
  • 1 15oz can Sweet Yellow Corn Drained
  • 1 tbsp Lime Juice
  • 1 cup Fresh Cilantro Chopped

Instructions
 

  • In a large pot over medium high heat, add rice, salt and water. Bring just to a Bubble, then reduce heat to medium and cover pot. Let cook for 15 minutes.
  • Remove lid and add black beans, corn and lime juice. Gently stir to combine and then replace the lid and let cook another 5 minutes. NOTE: there should still be a small amount of liquid in the rice when you add beans and corn.
  • Remove pot from heat and remove lid from pot. Fold in the chopped cilantro and replace the lid. Let rest for 5 minutes before fluffing the rice and serving.
