In a large pot over medium high heat, add rice, salt and water. Bring just to a Bubble, then reduce heat to medium and cover pot. Let cook for 15 minutes.
Remove lid and add black beans, corn and lime juice. Gently stir to combine and then replace the lid and let cook another 5 minutes. NOTE: there should still be a small amount of liquid in the rice when you add beans and corn.
Remove pot from heat and remove lid from pot. Fold in the chopped cilantro and replace the lid. Let rest for 5 minutes before fluffing the rice and serving.
