Sometimes you need a super easy, simple to through together, budget-friendly recipe to add to your weekly dinner menu. You can’t get much easier than some flour tortillas and ground beef, with a little bit of pantry staples. These Simple Baked Beef Roll-ups are great for those super busy weeknights. They can would also be a great recipe to have one of the teens put together for the whole family for those nights when you might have a parent-teacher conference, committee meeting or other club even.

These roll-ups can be lunch or dinner. They can be on their own or with some rice and beans. I like to make a quick pico de gallo and serve them with some sour cream. You can so make a bunch of them ahead of time and then reheat them for lunches. Just wrap in damp paper towel and heat for one minute.

Substitutes and Variations:

You can use ground turkey or chicken or even pork in the place of the ground beef. Just be cautious of the fat content (ground turkey and chicken will need some extra fat – butter or oil – added). You can use corn tortillas in place of the flour, but make sure to warm them up as you make the roll-ups, to minimize tearing.

Suggestions for Sides:

As I mentioned above, these go great with rice and beans. You can do cheesy pinto beans or slow cooked black beans. And you can a Mexican style rice or cilantro lime rice. They are good dipped in sour cream, or queso or Chipotle Ranch.

Tools that may make this recipe easier:

You will need a baking sheet with a baking rack. The baking rack allows the hot air in the oven to circulate on all sides of the roll-ups and get them crispy. If you place them directly on the rack, the top side will be crunchy, while the bottom side is soggy.

Ingredients

  • 20 Flour Tortillas, fajita-size
  • 2 lbs Ground Beef
  • 2 tbsp Taco Seasoning see recipe below
  • 2 tbsp Corn Starch
  • 2 cups Beef Broth
  • ½ cup Oil

For Garnish, if desired

  • Sour Cream
  • Green Onions chopped
  • Sriracha or Taco Sauce

Instructions

  • Preheat oven to 425degF
  • In a large saute pan over medium high heat, add ground beef. Cook and crumble until no longer pink.
  • Combine cornstarch, taco seasoning and beef broth in a large measuring cup. Pour over ground beef and bring just to a bubble. Reduce heat to medium low and let simmer until thickened.
  • Fill each tortilla with a about 2 tablespoons of beef mixture. Roll up tightly and spray with cooking spray.
  • Line out on rack on a parchment paper lined baking sheet. Bake for 15 minutes then turn each and cook another 10 minutes.
  • Serve with desired garnish (sour cream, salsa, hot sauce, green onions)
