French Toast Casserole
With the holidays fast approaching, we all need those quick recipes for making breakfast or brunch on the days when we need to make the bigger meals too. This is also a great dish to make the night before, store in the fridge and then you can just pop it in the oven when you start your coffee. Whenever you decide to serve this French Toast Casserole it is sure to be a welcome meal.

I would suggest either using an oven safe pan liner or very liberally spraying your pan. While this dish is delectable – it can be a bugger to clean the pan after making it. For whatever reason, eggs in the oven are often the hardest to clean up later. This will also make the pieces come out cleaner – making for a prettier presentation.

Substitutes and Variations:
You can make some fun changes to this recipe to make it your own. You can use a cinnamon swirl bread or a cinnamon raisin bread to give it more layers of flavor. If you want it to be sweeter, you can mix some syrup right into the egg mixture. You can also add in some fruit options – like chopped strawberries or blueberries.

Suggestions for Sides:
This really is a stand alone breakfast option. But it also goes great for a grazing or buffet style breakfast. I would serve up some nice scrambled eggs, bacon and/or sausage links and some fruit options.

Tools that may make this recipe easier:
As I mentioned above – a pan liner will make for a easy clean up on this dish. You can also use a larger piece of parchment paper.
